Binging with Babish: Ziti and Lasagna from The Sopranos

- Rarely does food play such a central character in a TV show or movie that's not specifically about food, but in The Sopranos, it might as well be one of the family. The crown jewel of which, despite Artie Bucco's hapless attempts, is the cuisine of Carmela Soprano. Strap on your gold President and build a ramp for the ducks, because it's time to emotionally repress our murderous mentality with some cheesy, saucy pasta - with a layer of basil underneath the cheese, of course.

I hope you do the wedding cake from the Arthur episode Just Desserts next
I love the scene in the beginning because Junior was slowly going senile at this point, but Carmella's lasagna was so good that he remembered it distinctly.
Reminds me of what Gus said about food/taste in Breaking Bad: "It always amazes me the way the senses work in connection to memory. I mean, this stew is simply an amalgam of ingredients. Taken separately, these ingredients alone don't remind me of anything. I mean, not very much at all. But in this precise combination, the smell of this meal instantly, it brings you back to my childhood."
Well who in the coming age of growing old would dare forget such a lasagna?

Ok Paulie……….
Just to be clear in Italy, especially in the regions near Neapolis, to make any type of baked pasta (Pasta al forno, Lasagna, Cannelloni and so on) we use Scamorza, or sometimes Provola, instead of fresh mozzarella. I might go as far as to say fresh Mozzarella is not used in Italian's baked pasta.
Scamorza is essentially the italian version of low moisture mozzarella, has a similar flavour but it's much better to cook with than the fresh stuff.
There is also smoked Scamorza, to give the dish extra flavour.
Provola is a similar cheese, often used smoked, that melts like a boss and has a super good smokey rich flavour that makes a Neapolitan baked dish instantly recognizable to a trained palate.
So yes, using fresh mozzarella, especially in baked pasta, is unoptimal and in many italian regions (i cant speak for every one of them) is a nono..
Can you be more pretentious and stereotypical, I’m in the mood to complain
@@sk8erin8er Im as far away from a stereotypical italian as you can imagine, but im a bit pretentious im not gonna lie.
I mostly wanted to shed some light on Italian traditions, since most of the world is convinced that we put high quality fresh Mozzarella in our recipe when we barely put it in the fridge. Fresh Mozzarella is best when eaten raw, sure you can cook with it but most italian traditions have various cheeses we use when cooking.
I didnt want to sound pedantic or annoying, but i guess that's how a lot of people will read my message...
But yeah, feel free to complain ^^

Nvp0402 It all depends on where you’re family is from in Italy. In the south of Italy, Ricotta is huge and an integral staple of those dishes. In the North of Italy they typically use Béchamel.
You know, actually a lot of italians, including me, use besciamella (bechamel) instead of ricotta

Made your version of Ziti last night - was well worth the hit to my life expectancy.
Just some curiosities, since a friend got confused:
- in Italy Ziti pasta is much longer than this. It's a spaghetti-size pasta - tricky for this recipe
- when talking about Lasagna in Italy, always remember that the south version uses cheese, the Bolognese one is creamier, usually with besciamella sauce. Never tried the in-between one. Seems great
In The Sopranos, Junior never said "whole leaf basil" it doesn't have to interfere with cutting if you shred the basil leaves before you layer it.

Because those pots, especially one that size, are enameled cast iron and stupid heavy, even without being full of sauce. Trying to tip it by only the handles would be very difficult.
