One thing I’ve learnt from this channel is that In West Africa, we essentially eat the same foods, with just different names and slight variations from country to country.

There's something about shito which I can't really describe. It's really a special sauce which deserves to get its day in the sun like gochujang 고추장, Sriracha ศรีราชา, sambal, and peri-peri. I'm lucky enough to live in an area of the USA where I sometimes find shito sauce locally. Which reminds me, gotta look for some more next time I get a chance.

You know, we don't usually see people in the US carrying stuff on their heads. But I figured there had to be something about that which works a lot better than doing it all by hand, so I started doing it any time I'm moving substantial quantities of stuff across the shop floor at work. Dude, it works tremendously well. It's also surprisingly easy to learn to balance as well, though I'll usually just keep a hand on to balance it. It's much less strenuous on your back, which is great because I broke a secrion of mine many years ago. A bunch of dudes thought I was kinda nuts for doing it, but then I got several other guys doing it now, too 😆

I think I’ve had a very similar looking dish in a Nigerian restaurant in London. They’ve got the green slimy sauce as well but it’s very bitter but not smoky as Sonny said in this video.
You have to visit Ghana at least once in a lifetime to experience this beautiful country. It’s literally the most exciting, never ending fun place filled with lovely people, delicious foods and fantastic music. The night life is the best part of this paradise on earth. ❤️🇬🇭❤

I had turkey tail a few times as an appetizer from a Ghanaian restaurant. I didn't know it was illegal there. It was pretty good, served with some powdered seasoning. Then I had jollof rice with fried steak and some kelewele (spiced fried sweet plantain) for desert. Good, but definitely very heavy, not for anyone on a diet save for a "cheat meal." The kelewele, I want to learn to make myself.
What I find so beautiful is how simple and real the cooking is. None of the highly processed, artificial food with additives that we have in North America. Just food from the earth.
