i made this recipe for my coworker's birthday, and the entire office was obsessed! 🥰 i served it with sliced strawberries between the layers and on top. definitely recommend doing it that way. makes it more exciting. for me, the frosting didn't turn out anything like yours did (mine was a lot runnier) but it was still delicious. :) i made it into a drip-style cake, almost like what you would see on a lemon loaf. edit: i would like to add that this cake + frosting took me forever to make lol. so definitely set aside a generous amount of time to allow yourself to bake this 😅 the frosting benefits a lot from being in the fridge for several hours before being added to the cake

And yes, this is definitely a special occasions cake, not something you can whip up on a random Tuesday night lol. I find that it’s easiest if you refrigerate the frosting first. Also I’m not sure when you made it, but the recipe originally had lemon juice in the frosting for more lemon flavor, but I found that it made the frosting to runny so I took it out.

My mom was a hobby cake decorator. Instead of the cake board, you can tuck strips of wax paper (I imagine parchment paper would also work) under the cake. Easier to remove.
Hi Nisha! I made it yesterday for my husband's birthday. It's delicious! The only change I need to make is the amount of powder sugar in the forsting as it's definitely too sweet for us. You're right, always try your frosting before! :D
This will be my mother's day cake this year. My mom absolutely ❤ lemon!! Also, to keep the board from slipping, you can put a bit of frosting directly on the stand before placing the board. Not my idea, my aunt is a retired professional baker lol. 😂

I made it with lemon juice in the frosting from the original recipe, and it was a bit too runny, so I understand why you removed it again - but it was still the most tasty frosting I've ever had! (I may have eaten a lot of frosting by itself 🤪). So it was me and my 6 year old for 2 hours (because she’s 6 lol) making your cake. It. Was. Delicious. My daughter had fun, I had fun, and the whole family loved it for dessert. Thank you! @@hannahmitchell87 I have a slow cooker, I use my Instant Pot a lot, I have an air fryer (effectively a mini-oven, although too small to bake a cake in), and I have a tabletop two-ring electric burner. I also have a toaster and a breadmaker. I couldn't remember the last time I used the oven at the last place I lived in, so when I moved in here, I thought "do I really need one?" And with the cost of energy, it just seemed like a waste of money. Hope that explains it. I don't entertain groups to Sunday roast dinners and although I did bake, I didn't bake very much. It's mostly my Instant Pot, though. I love that thing!

I also use my main oven much less since the fuel crisis (not a crisis for the energy companies' profits though!) My Mum gave me a slow cooker too, which I'm loving! Good for you! Ok so my lovely daughter spent many hours making this for Mother’s Day. And it is delicious! We are still eating it and now down to the last slice. We had two oopsies with it however as our kitchen was too warm for the icing despite coming from the fridge. Kite hill I think is too soft for this recipe even if delicious. ( I don’t like tofutti so went with the other suggestion. Violife, or Miyako maybe next time.)so first oops was after icing the lower layer and beginning to place the second layer on top it started to slide all over and icing began to melt down the sides. We should have taken the hint and stopped, put it back in the fridge( both icing and first layer), but we decided to continue with me holding the first layer as icing was applied….. well popped that into the fridge only to discover an hour later that the top,had indeed slid off onto the back of the refrigerator and spilled 70% of that $8 container of cheese and work all down the refrigerator… so I scooped up the top. Plopped it on and rescued a wee bit of the icing from the cake plate so we could then enjoy it. Absolutely Delicious! Next attempt we will make it a sheet cake! No more fancy layers.. 😂 but it was funny. Sort of.
If you use oil in the pan, you don't need baking paper. I usually spread it with coconut oil, and it comes out of the pan super easily :) Wish to make a yt channel one day, I started vegan cooking like 3 years ago. I like your channel :)
Don't be scared just jump in and do it. For a long time I was so nervous to work bread dough and comfort, but I jumped in and did it and now working dough is calming for me. It's therapeutic (and tasty). Once I gained confidence and comfort I hardly use store bought stuff now. Give it a go. It's easier than you think.

You can make it on Friday. I would store the unfrosted cakes tightly wrapped in plastic on the counter for up to 4 days. You can also make the frosting a few days ahead of time and store, covered, in the fridge. The cakes are easier to frost when they’re chilled and the icing is chilled (but not hard), so on the morning of serving, if you can, I would refrigerate the cakes (still wrapped) for a few hours. Then frost them. Hope that helps!

Hi Kristin, I put my recommended brands of sour cream in the description box. My favorite is probably tofutti. For butter, we typically use Earth balance buttery sticks, which seem to work in almost every baking recipe!
I have used " just egg" in acake mix and it came out delicious same with pumpkin pie. However don't use the powdered egg replacement it comes out awful.

Is there another frosting which could work well with this? Cream cheese frosting is just vile, never understood why Americans generally use it 😅😅 but I wouldn’t want to demolish the flavour by just using normal frosting!
if you're gonna used aquafaba from canned chickpeas, gotta make it sure to have less sodium. Ideally, you can make your own aquafaba by boiling pre-soaked legumes or chickpeas until very soft and then leave it in the water for 24-48 hours. After that, strain and cook the legume/chickpea water until reduced to slightly viscous consistency.
I make a decent soy sour cream/cream cheese based off a Chef Jana recipe, which I'd just remove the savoury seasonings from (cause nobody wants a garlic & lemon cake 😅) Happy to share the recipe if anyone wants it! 💜

Eggs add a taste that i personally hate in dessert, it would ruin the whole thing. I always wondered who has the terrible idea to use eggs for sugary food x).

Hi Kristin, I put my recommended brands of sour cream in the description box. My favorite is probably tofutti. For butter, we typically use Earth balance buttery sticks, which seem to work in almost every baking recipe!
I have used " just egg" in acake mix and it came out delicious same with pumpkin pie. However don't use the powdered egg replacement it comes out awful.
Any chance we can reduce the sugar level? The amount of sugar kinda stops me from trying to make this cake lol

Is there another frosting which could work well with this? Cream cheese frosting is just vile, never understood why Americans generally use it 😅😅 but I wouldn’t want to demolish the flavour by just using normal frosting!
If you’re okay with a thinner icing style, you can just do a simple lemon glaze with powdered sugar, lemon juice and zest, and a little vegan yogurt.
Someone tell me please tell me what vegan butter did you'll used. I used Earth balance for my buttercream and it was so disgusting
if you're gonna used aquafaba from canned chickpeas, gotta make it sure to have less sodium. Ideally, you can make your own aquafaba by boiling pre-soaked legumes or chickpeas until very soft and then leave it in the water for 24-48 hours. After that, strain and cook the legume/chickpea water until reduced to slightly viscous consistency.
Please if any one has made this in the UK which vegan sour cream did you use ?
The only one I can think of offhand which might work is the Oatly Creme Fraiche - but it’s not going to be an exact substitute. 😕
I know some European readers of mine have made this with vegan creme fraiche with good results!

I make a decent soy sour cream/cream cheese based off a Chef Jana recipe, which I'd just remove the savoury seasonings from (cause nobody wants a garlic & lemon cake 😅)
