This cake is delicious! It rose beautifully with a golden crust. Very soft in the inside as well! However, I did use gluten-free flour. So for anyone wondering, gluten free flour works great as well! I also cooked mine for 40 minutes at 370 degrees instead of 380. I didn’t want mine to be as dark. It was moist, and the glaze worked amazing with the cake. I have one in the oven as I type, lol. One time I made it for my family and my grandmother couldn't believe I didn't use eggs haha Also I don't have veg butter so I use any oil I have at home, so far my fave is coconut oil. It's cool to experiment, it always comes out a bit different with different oils!

I just made this recipe for my family. It’s delicious. I didn’t have fresh lemon so I used lemon extract. And I used olive oil (for baking) instead of butter. My family loved it. So moist. I did have some lemon juice concentrate for the icing. Thanks for sharing this video.
Made this today. 170 degrees in a fan oven for 30 mins then 180 for 10 mins. Cooked perfectly. A little flat but next time I'll cook it the whole time at 180. Great tasting cake - family all loved it. Going to use this base and just change the flavours for all my cakes - thank you!!!!!!! xx
If you have oats can you grind it and make oat flour, sift it and add tapioca flour to make it fluffy and substitute this instead of flour if you do not have flour

I made this twice. Once a week ago, and once again tonight. The first time, I loved it, my family loved it, and my mom even wanted more. But tonight, I underestimated the frightening bitterness of lemon and went ahead and shredded more than what was recommended. Never again will I try to experiment with lemons like that. When they throw you lemons, make some lemon cake.
I went to a website and found conversions. Flour-1 1/2 cups = 188g Sugar-1 cup = 200g (granulated) Butter-1/2 cup = 113g Plant milk-3/4 cup = 187g Hope this helps!
I also made this cake but used self-raising flour (plain flour was a huge flat FAIL), the juice and zest of 2 lemons (I didn't measure) and I used 1 cup of icing sugar and the juice of 1 lemon for the icing. It was FAB.

I love this recipe! I've made it for my friends a few times and they love it - it comes out moist and flavourful even though I'm not usually a good baker, so that's all thanks to the recipe! I was looking for a vegan recipe because a) I don't like eggs and b) some of my friends are vegan or lactose intolerant. I never expected it to be this delicious,I thought it would just taste like a regular cake, but it's literally the best recipe I've ever used. I've been trying more vegan recipes since I discovered this and who knows, maybe one day I'll go vegan :)
Mine is in the oven right now, I made a few tweaks to the recipe just because I wanted to experiment. I made my vegan milk out of oats and coconut and didn't strain it because of the fiber, then I blended a whole lemon. I didn't put zest because our lemons are treated with all sorts of shit and didn't want to risk putting deadly chemicals in my birthday pie. I mixed 3 different flours - corn, rice and wholegrain, and I put just the tiniest bit of flax seed flour to help me thicken the consistency. I also decreased the amount to sugar, and put 4 dates in the blender as I was making my nut milk. And I used cocnut oil because we have no vegan butter here, unfortunately. Smells divine, can't wait to try it. Thank you so much for the recipe, girl!
Divine. The coconut oil complements the lemon incredibly. Although I made it 4 more times since, and it never came out the same since I don't work with concrete measurements.:D Every time it was amazing. One thing to keep in mind is to put enough of baking soda - one time I put very little of it and it didn't bake properly, didn't rise... it was still delicious but it was a bit flat and didn't look very attractive.
You can use self raising flour, but we recommend plain flour and then add the raisin agent. You could give it a try with spelt flour, but expect a different texture overall, the recipe still gonna work tho :D!

If you are on a whole plant based diet, you can use 1/2 cup of unsweetened apple sauce as oil substitute for the vegan butter. Great recipe!

if you dont have vegan bitter can you use any kind of vegtable oil(olive oil grape seed oil)
in case of using oil, we would recommend sunflower oil, it has a plain taste and it's lighter than other oils.
