  • I've never seen a vegan Blueberry Cake give anyone that kind of reaction before! I made this cake for my mom's birthday and well, you're just gonna have to watch until the end to see her reaction!

    For non-Americans here are metric measurements without cups:
    For three 15 cm cakes that have to bake at 175 - 180° C:
    1 Tbsp Apple Cider vinnegar
    355 ml non-dairy milk
    338g flour
    200 g sugar
    2 Tsp Baking powder
    0.75 Tsp Baking Soda
    0.5 Tsp Salt
    80 ml or 75g Coconut oil (melted)
    1 Tbsp Vanilla extract
    150g fresh blueberries
    80 ml lemon juice
    1 Tbsp Lemon Zest
    Lemon Butter cream:
    225g Vegan Butter
    520 g Icing sugar
    1 Tbsp Lemon juice
    1 - 2 Tbsp oat milk

      Thank you so much for your detailed recipe. I kept searching a clear recipe in order to make a vegan cake for my dad and I found yours. I have a question of the measurement of the flour, if one cup equals 250g, then 2 1/4 cups of the flour is more than 338g, it equals 560g, doesn't it? Or I misunderstand something? Thank you.

    I love that you didn't edit out having put the icing on too soon - having things not go perfectly is human and it makes it feel not so bad when things go wrong while cooking/baking, myself!

    You deserved 20 likes just for the effort of saving the cake. Thank you for showing the courage to keep going even tho you had failed. I'm such a quitter at the kitchen, when something goes wrong I just straight away quit and sometimes trash it. Can't help but feel a little more brave if there's a next time

    I made this for my family last Sunday, and everyone loved it! It was a complete triumph. By far, one of the best cakes I have ever made. I am still figuring out the best methods for vegan cakes, and I think not overmixing is key. I followed your method exactly (except I did let the cakes cool completely), and the cake came out airy and perfect. Thank you!

      @@thelittlealmond6689 I am thinking of making this cake again except doing a two tiered cake for a party. Any thoughts on whether frozen blueberries would work instead of fresh blueberries? I have a large bag already in my freezer!

    I tried out this cake back in June and it was DELICIOUS! My family (non vegan) even thought it was a professional bakeryWedding cake it was that good! I am planning to make it into hopefully cupcakes for mybestfriends suprise birthday- does anyone know how many cupcakes this recipe would make? THANKS ❤️❤️

    I have some questions because i want to make it as soon as possible 😍
    1- can i replace the Apple Cider Vinegar with something else , but not Vinegar . ?
    2- can i replace the Sugar and the icing sugar , with coconut Sugar and powdered coconut sugar for the icing ?

      1. You can omit the apple cider vinegar or substitute it with non-dairy milk. It may not be as light and fluffy but will still be really good!
      2. You can replace the sugar with coconut sugar, but your cake may turn out a little on the brown side. I'm not too familiar with powdered coconut sugar, but from the sounds of it, it may still work the same as icing sugar

      Yes! But the ratio may not be the same and you may need to use a bit more cake flour :)

    I notice I left a comment and it was deleted. So I'll leave another one. I made this for my vegan daughter's birthday and it was terrible. No one liked it. I had to throw it away. It was dense and extra firm. Almost couldn't cut it. I have yet to find a vegan cake recipe that has turned out.

      I believe if you double up the ingredients you can try to make a three layered 8 or 9 inch cake!

      For sure! It won't have that light vanilla flavour but it will still taste really good with the blueberry and lemon flavours.

    Can I sub the ACV with white Vinegar instead?
    Also for the baking soda, how much is 0.75 tsp? 😁
    Anything else to be substituted for the oat milk that's used for the icing?

      Yes, you can substitute acv with white vinegar or lemon juice.
      0.75 tsp is 1/4 tsp x 3.
      And for the oat milk, you can use any other non-dairy substitute you'd like!

      I'm sorry I don't. I know this recipe makes two 8-inch cakes though. So I believe adding half of this recipe would yield you three 8-inch cakes!

    Made it yesterday, as for the cakes, they are just perfect, but shouldn't icing sugar melt in butter? I was following the whole instruction from the video, but still can feel small pieces in the cream🤷‍♀️

    I want to make it as one whole cake and skip icing, not three. What size pan and baking time? Also, can I add maple syrup for sugar? Any adjustment in other ingredients?

    Hi, I was wondering if this could be made in a loaf pan? I'm guessing the cooking time might have to be adjusted.

      This will also work in a loaf pan! But it may need to be baked longer depending on the size of the loaf pan you are using!

      Any oil will do! I've also used avocado oil in this recipe and it works just fine :)

    Good recipe. I tried it. texture and flavor are great but found it had a bit of an after taste due to the baking powder and baking soda.

    how do you know if you've overmixed the batter? I'm making this next friday for the first time !!!!!!!!11

      You won't know your batter is over mixed until after its baked and you find your cake texture is off. But a good rule of thumb to avoid over mixing is, once you see your batter is completely mixed with no dry flour in sight, then you stop. If you find your mixture had a few lumps, that's okay too!
