I have a question of the measurement of the flour, if one cup equals 250g, then 2 1/4 cups of the flour is more than 338g, it equals 560g, doesn't it? Or I misunderstand something? Thank you.

I'm such a quitter at the kitchen, when something goes wrong I just straight away quit and sometimes trash it. Can't help but feel a little more brave if there's a next time

I am still figuring out the best methods for vegan cakes, and I think not overmixing is key. I followed your method exactly (except I did let the cakes cool completely), and the cake came out airy and perfect. Thank you!

I haven't tried it with frozen blueberries but it should still work. Try thawing the berries and draining any extra moisture you get from thawing it before adding it to the batter!
Made it yesterday, as for the cakes, they are just perfect, but shouldn't icing sugar melt in butter? I was following the whole instruction from the video, but still can feel small pieces in the cream🤷♀️
You won't know your batter is over mixed until after its baked and you find your cake texture is off. But a good rule of thumb to avoid over mixing is, once you see your batter is completely mixed with no dry flour in sight, then you stop. If you find your mixture had a few lumps, that's okay too!

This will also work in a loaf pan! But it may need to be baked longer depending on the size of the loaf pan you are using!

Good recipe. I tried it. texture and flavor are great but found it had a bit of an after taste due to the baking powder and baking soda.
