    This meal brings back so many memories. My mom always made this with French fries and that's the way I had it growing up. I prefer it with fries, but cooking it myself many years later, I have used potatoes, maduros, and even tostones (it's great with tostones).
    Being Puerto Rican is a privilege! I am proud of my rich, beautiful culture and especially of our incredibly awesome meals. Puerto Rican mothers, because of poverty, had to learn how to be creative with meals and make them stretch. These incredible Puerto Rican mothers created the amazing meals that we have today. When I was growing up in the Bronx, we were as poor as they came. Still, we were never hungry and my mother's kitchen always smelled amazing. My mother did so many wonderful things with food! I am grateful and I feel incredibly lucky to have been born Puerto Rican!
    Because we are always creating... If you want to try something especially tasty, try the twist on this meal that I made for my kids and have made many times over since the first time I made it many years ago. Make this meal the way you would normally make it, but instead of corned beef, substitute the corned beef with pulled pork! The next time you make pernil, take a small amount, shred the pork with a fork and then make it like normal adding the corn, potatoes, and your other ingredients (I would recommend fries). What you end up getting is an amazing meal that you will make many times over. Maybe I take after those great Puerto Rican mothers who were always inventing new twists on old meals!

      I can very much relate! I grew up in Queens, we didn’t have much growing up and sometime in Arroz blanco bien echo con in huevito frito was the best this ever!!!
      I’m definitely going to give it a try with pernil next time I make it! It sounds really tasty 🤤

    My sons freinds fam cooked this and my son begged me to figure out how to make it but I’m Mexican and didn’t know what it was 😅and I just found it! Ty so much he’s gona be one happy kiddo 🤗

    When I lived in PR I was taught to make Cornedbeef and fries
    Make the cornedbeef and fry the thin French fries and just before serving
    Add the fries to the cornedbeef…another whole level yummy

    Hola! Well done! I make it the same in stead from time to time I add salchichas (Vienna sausage) . When done I serve with arroz blanco, I had a slice of guava on top of corn beef! Yummy 😋

      I cook my plantains Maduro and put them inside my cornbeef to simmer and eat it with rice!!! So yummy!! 😋

    I'm Dominican but I love Puerto Rican style corn beef with yellow plantains eggs and rice and beans 🤤🧔🤙🏼😎🎸🇩🇴🇪🇸 I eat it like a wolf I make growling noises like a bear when I eat PR corn beef 🤤👔🥃🍾

      Yes you can! Just dilute the tomato paste with water to substitute the tomato sauce 🙂
