Discada is a traditional Mexican dish that originated in the northern states of Mexico. The dish is typically made on a large, concave metal disc, simply know as disco. It’s a very versatile dish and the cuts and types of meat may vary depending on the situation. It usually consists of beef, pork, chorizo, and veggies; but you could also add chicken if you prefer. One thing does remain the same: the enjoyment and aromas while cooking different types of meat and vegetables in a single container. This is a great alternative for tacos. discada tacos! Discada Recipe
8 oz (8 slices) smoked bacon
8 oz (5 ea) Hot dog links
8 oz pork chorizo
14 oz pork loin - 1/4 tsp kosher salt and black pepper to taste
2.5 lbs chuck steak boneless - 1/2 tsp kosher salt and black pepper to taste
1 ea medium onion
2 bell peppers (red and green)
4 garlic cloves
6 oz tomatoes
3 serrano peppers
1/4 bunch cilantro
1 cup of low sodium beef broth
4 Spring onions
Salt to taste (at end 1 tsp)

I'd never heard of a tlayuda before, but I just saw Action Bronson eat one in his NYC Top Dishes series. They look awesome. I'd like to see Rossana's take on it too.

Try to find a Amish Store around your area, they make their own bacon. At least they do here. It’s such a different taste. It doesn’t have that heartburn taste to it like bacon does. Idk what that taste is but I don’t like it.
