I wish you'd give out some secrets, because not all of us can afford the prices anymore. I'm older now, and I have to cook at home because we can't afford $25 for the two of us -- just to get a burrito and a taco bowl.
The chicken is cooked very well great color there’s a lot of juice, and how all the ingredients work together as one to give the dish that great flavor you’re looking for.
Nelson knows how good he has it and it shows. My sweetheart is also a graduate of a cooking school (CIA in Napa, CA) and used to own a restaurant. She only cooks for pleasure now and I am the lucky beneficiary. I've suggested she start a RUclips cooking channel, but she doesn't want to work that hard. We are both retired.
This evening we tried out this recipe. We cooked it on a pellet grill and it was fantastic. We tried on corn tortillas and flour tortillas. I’m partial to the corn tortillas on this one. It fed three of us, and we have enough left overs to make enchiladas tomorrow night.
I eat this chicken as much as I can. I found EPL in Los Angeles about 40+ yrs ago and loved it then. It finally opened in Houston a couple years ago. Everything they fix is wonderful. Pozole soup at Christmas is a winner also.
I agree, small clove garlic sucks big time. I find myself buying elephant garlic over regular garlic this past year because of all the small clove garlic they've been selling. This looks really delicious and will be making this soon. Great job showing us how it is made.
My ex wife's Uncle started this company from Mexico back in the 60's, brought to the US in the early 70's if i remember correctly...best chicken and the menu for sure...
Agreed 100% I do home distilling, and with gin it's the second most abundant spice, because it has limonool. It's that citrus molecule that's a little subtle. Oh crap, I just went chemistry on someone I don't know😮 and I'm not a chemist😁🙉

i used to eat EPL every single day for lunch. i always ordered Double Chicken Tostada Salad. my daughter got hired at EPL and later became a manager. i'm hungry.🌮🌮🌮
Very awesome. I caught their trick awhile back and never told my friends. You can get away with the basics of: squeezed Lemon/Lime/Orange and some salt, garlic pepper with a hint of chili power. I sometimes marinate it but when its last minute..I am basting as we go. You know guys..they are the best brisket BBQ guys...but they cant touch my chicken...another thing...AIR FRYER...works awesome for wings and small chicken parts. Thank you !

I have been using a marinade similar to yours. I cook like my mother taught me, without the use of a thermometer and my chicken always come out juicy. I guess with practice you know when its done. Thanks for sharing.

I've never been very good at it and always end up butchering the chicken, especially when trying to remove the two breast sections. Can you say how you'd do it on the Traeger? I have one also. I know how to smoke, but I don't know how to grill it. Can you, please, explain? If so, thanks.
Sure, set your Traeger to smoke with the lid open for 10 minutes. You want to make sure the fire pot is ignited. After 10 minutes close the lid and turn the heat up to 350 degrees. Once it reaches 350 you can cook on it as if it were a grill. Took me a while to learn that as I had tunnel vision that it was only a smoker. Some of the best steaks so far have been with my Traeger. Hint of smoke to them. Hope this helps. I have a nice Weber that I’m not even using any longer.
I was a cook at El pollo loco very briefly transitioning from state to state, and thought your marinade looks way more delicious, the trick to grilling the chicken is in how you break the back, tuck the wings after you dislocate them so they actually stay and lay flat, same with the thighs and legs, start grilling skin side up if I recall our gill was set up to grill each side like 16mins, but I can't remember exact but something like that 😂 I would eat the most choice burritos for lunch working there that was the bonus making your own fat fresh burrito, sometimes I didn't want to go back to work after eating 😂
I miss El Pollo Loco. I moved away from California like 25 years ago and haven't had it since. There is one in my state, but it's like a 2 hour drive. I'll have to try this.

I'm positive your chicken is waaayyyy better than EPL. Not much a fan of theirs. Must of tried 10/12 times. After a few times, the only thing I could count on was undersized dry chicken. Nice Vid😄👍
I though marinating with citrus is the kiss of death for the meat. The last time I marinated overnight, the chicken became chicken paste after cooking.
The best chickhen I ever ate was when I was in Cuba called Arroz con Pollo.Never could find it in states,as it was not the same.It was made with sour oranges,garlic and never found out the rest.It would fall apart.They wouldn't give out the true recipe.That was 60 years ago or more

Just a note- check out zwilling glass storage - it come with a hand held vacuum and 60 minutes works for the marinade.
