Rotisserie Cherry Chicken Salad
Serving Size: 1 cup | Makes about 4 servings | Cook Time & Prep Time: 40 minutes
Ingredients
- 1 rotisserie chicken, shredded (about 4 cups)
- 1 cup Greek yogurt
- 1/4 cup dried cherries, chopped
- 1/4 cup celery, finely chopped
- 2 tablespoons red onion, finely chopped
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon lemon juice
- Salt and pepper, to taste
Assemble
- Remove the skin from the rotisserie chicken and shred the meat using a fork.
- Chop the dried cherries, celery and parsley into small pieces.
- In a large bowl, combine the shredded chicken, Greek yogurt, dried cherries, celery, red onion, parsley, and lemon juice. Note: add more Greek yogurt based on preference.
- Mix well until all ingredients are evenly coated.
- Season with salt and pepper to taste.
- Chill in the refrigerator for at least 30 minutes to allow flavors to meld.
- Serve chilled. Enjoy!

I love this video. I have found the magnesium to help me throughout the day with mood especially! Can you explain again why this supplement isn't something we're getting enough from food (or point me toward a good resource or previous video) especially for someone who eats mostly nutrition dense foods? If you're not soaking the produce for 15 mins in a vinegar bath... there's no need to soak them in a full IKEA bowl of plain water EACH time. Just rinse them instead. Using that much water is extremely wasteful. Please, do better.
