The 20 minutes of freezer time is to ensure that the pie crust (specifically the butter) is very cold. A crust with cold butter holds its shape better than a crust with warm butter. I make apple pies with honey instead of sugar because I find it not so sweet. I been making pies for over 65 year .I give people lessons on how to make flaky pie crust for their pies. Every year I do a della robbia design on my minced meat pies and I color each leaf and fruit designs with the "extra" crust. They are always the hit of the get-together holiday dinners and I enjoy doing this extra step very much. It's always those extra touches. I am new to your channel but am a subscriber now. I once made an apple pie with only three good size apples. The first time my father came to see me in my apartment in another city I served him a slice of apple pie. He said it was the best pie he’s ever had and not to change a thing. Start with Macintosh apples they are always soft and a beautiful flavor. 1/2 cup sugar 1/4 cup honey Dots of butter Cinnamon Tapioca Beautiful pie you just made xo❤

Marie, Love your imperfection💞! It reduces so much stress on learning a new project. At 65, a grandpa wannabe, made my first piecrusts with your help and am blown away hope simple it was to do! I would never by a pie crust again and the freezer always has a couple ready to go. The leaves were a great touch for fall.

I have tried for over 20 years to make an edible crust, without success. Maria’s tutorial on a single pie crust and this Apple pie video gave me the tools to dare another try. Using a food processor, the plastic wrap twist and the recipe itself is PURE GENIUS. I made the most delectable, flakey, delicate crust for an apple pie that is as close to heaven as I can get. Me, my family and our tastebuds will be forever in your debt. I advise the best way is to make the crust ahead and do not bother with wax paper to roll it. The perfection of the recipe permits you to roll it out in just a few minutes. #GodBless

Hi Marie, this is embarrassing, but I’m going to write it anyway. In November of 2023 I contacted you looking for guidance with a pie crust recipe (not yours) that I was struggling with. I love pie and used to make it occasionally and to be honest it wasn’t bad, but it was always a struggle and I felt less and less confident. (I also didn’t make pie often as I wasn’t blessed with good metabolism, so I’m usually dieting.) Anyway, you were very kind and reassuring, but I didn’t muster up the courage to actually try your pie crust recipe until now…late September 2024! OMG, this is a game changer!! I have made two apple galettes on two different days and the crust was SO easy to work with. Thank you, thank you, thank you for sharing the recipe and providing the clear instruction and the science behind it. I am now able to make your delicious pie crust with confidence and success.

Every year I do a della robbia design on my minced meat pies and I color each leaf and fruit designs with the "extra" crust. They are always the hit of the get-together holiday dinners and I enjoy doing this extra step very much. It's always those extra touches. I am new to your channel but am a subscriber now. I once made an apple pie with only three good size apples. The first time my father came to see me in my apartment in another city I served him a slice of apple pie. He said it was the best pie he’s ever had and not to change a thing. Start with Macintosh apples they are always soft and a beautiful flavor. 1/2 cup sugar

I have tried for over 20 years to make an edible crust, without success. Maria’s tutorial on a single pie crust and this Apple pie video gave me the tools to dare another try. Using a food processor, the plastic wrap twist and the recipe itself is PURE GENIUS. I made the most delectable, flakey, delicate crust for an apple pie that is as close to heaven as I can get. Me, my family and our tastebuds will be forever in your debt. I advise the best way is to make the crust ahead and do not bother with wax paper to roll it. The perfection of the recipe permits you to roll it out in just a few minutes. #GodBless

Hi Marie, this is embarrassing, but I’m going to write it anyway. In November of 2023 I contacted you looking for guidance with a pie crust recipe (not yours) that I was struggling with. I love pie and used to make it occasionally and to be honest it wasn’t bad, but it was always a struggle and I felt less and less confident. (I also didn’t make pie often as I wasn’t blessed with good metabolism, so I’m usually dieting.)
Anyway, you were very kind and reassuring, but I didn’t muster up the courage to actually try your pie crust recipe until now…late September 2024!
OMG, this is a game changer!! I have made two apple galettes on two different days and the crust was SO easy to work with. Thank you, thank you, thank you for sharing the recipe and providing the clear instruction and the science behind it. I am now able to make your delicious pie crust with confidence and success.

Dear Marie, I made the most beautiful pies I have ever made thanks to you. I made an Apple pie with your recipe. Made the lattes and painted leaves on the side. I also made a pumpkin pie with the painted leaves and made three pumpkins from the leftover crust. Oh my goodness they came out so beautiful. I wish I could show them to you!
