Loving this recipe Steve! I'm the only keto person in my family and their was a last minute change in plans today and ended up having pizza at my nieces birthday party. (We originally were going to grill hotdogs) I didn't want to miss out on the pizza but we found out about 30 minutes before we had to leave. Long story short, I made a pizza with this Tortilla. I added Italian Seasoning to the batter and then after microwaving it, I threw it in a non stick pan and assembled a pizza on the fly. The bottom crisped a little. I sliced and packaged it up between two paper plates and wrapped it in foil. It was still warm when we got to the party. Pretty decent for a quick pizza. 😁
i applied solidified ghee on the plate before putting the mix on it did it in a microwave. it did not stick like it sticked without applying anything on the plate
I did your recipe trading out half the almond flour for lupin flour and i added a table spoon powdered urythritol and an extra tbs whipping cream and i used my dash mini to make waffels out of it. I love love love this recipe for the tortillas and the waffels. My body wasnt handling the cheese in the chaffels and this recipe can be made sweet or savory. Ive made breakfast tacos and use the waffels for hamburgers. Thanks so much steve ,for all you do to bring us good recipes. Love it!💞
Steve, I'd say a room temperature egg is a requirement. I made this recipe twice after the first video and had batter that didn't spread well and couple thick spots in the tortilla that were rubbery. Just made it with a room temp egg and the spread-ability (is that a word?) and uniform thickness was a million times better. Thanks for making this follow-up vid!
Thanks for that. Just found these wonderful videos, tried it tonight, and had the same experience. Wish I’d have paid more attention to Steve’s warning (and seen your comment). However, I cut the thicker “tortilla” into triangles and fried them, and they took on a kind of fried pita chip impersonation. Definitely worth exploring more…. 😉
Just for the record, I made a couple of these (standard recipe) on the stove in a non-stick skillet, and that worked just fine - the tortillas pretty much fall right out. However, Steve’s new silicone pad method really looks like the way to go.
It took almost a month for Amazon to get my 9” round silicone baking mats to me, but now I will be using them! I had to fold the rectangular cake mat to fit the microwave platter. The mats are easy to clean, so I’m all for them.
i tried this 90 second tortilla and i absolutely loved it. It’s really great knowing that i can make something so quick instead of planning and spending a fair bit of time preparing foods. One of my faves is scrambled eggs with tomato, feta, spinach and tazaziki and roll it up and its pretty awesome, tried it for a type of gyro as well which was great too. Thank you Steve 🙏🏻

I’m gonna try making them in bulk for enchiladas! My husband has been struggling since he started keto 3 months ago. I really think using those store bought tortillas every day has been holding him back. I’m definitely giving some of these a try!
Keto bread/tortilla/etc. you get at the store use a super-high-gluten form of wheat for that low-carb rating. There is research showing this specifically contributes to fat gain in excess of its calories and damages upper intestinal tight-junction lining (which causes inflammation, a key element of all disease and obesity). This is basically another form of "frankenfood" alternative for the lowcarb world. Super convenient, but if good health is the goal maybe not ideal. I wonder how they'd work for enchiladas?? Because gosh that would be a great thing if so.
@@neinazaveri9525 they worked great! They’re a lil fragile so you have to be careful wrapping them, but they held up nice in the oven. This is my go to for enchiladas!

@@dezihaasch6976 I tried that. Found the plate to fit my microwave, only to buy a second hand microwave. They wanted a dollar less for the whole unit, including the plate.
Oat fiber is not a binder. But it works along with other flours to make it a little more like regular flour. I always tweak recipes and sub in part of whatever flour is being used with some oat fiber to lower carbs and calories. But the amount is different depending on what flour is being subbed for. I always use it in combination with other stuff to get a more wheat like texture. This is a fantastically useful and helpful video!
I made these with several of the substitutions and ultimately made one of my own! as follows: 90 Second Microwave Tortillas 1 tablespoon almond flour 1 tablespoon whole psyllium husk 1 tablespoon Perfect Keto unflavored collagen powder 2 tablespoons egg white (from a carton) 1 tablespoon heavy whipping cream Pinch of seasoning if desired Mix all ingredients in a one cup measure, scrape down sides with a silicone spatula and whisk again. Pour onto a 9” round silicone baking mat and place in center of microwave oven. Microwave on High 90 seconds; turn mat 90* and microwave another 15 seconds. Remove from microwave and peel off mat and place on a cooling rack. These are usable as-is but I find the flavor and texture are enhanced if they are placed on a hot skillet or griddle for just a short time, around 15 seconds, each side til they start to develop brown spots like a real tortilla. If you let them go too long they will start to crisp up and will not be pliable. AND these WILL brown and crisp up when shallow-fried in about an inch of oil in a skillet! You have to watch them closely as they will brown quickly, but you can fry them crispy and actually make tostadas that you can eat out of hand! Additionally, I tried cutting one tortilla into 8 triangles and frying til crispy - made decent chips. Just don’t let them get too brown or they will begin to get a bitter taste to them. Nutritional Info: Calories 151, Protein 10.7 grams, fat 9.5 grams, carbs 1.2 grams VARIATION - Cinnamon Crispas Use Perfect Keto Cinnamon Toast collagen powder instead of plain; cook as usual, let cool slightly, then shallow fry in 1” of oil til browned on both sides and remove to paper towel to dry. While still warm - sprinkle with a mixture of half cinnamon and half granulated sweetener of your choice. SO GOOD!

I made one of these tortillas today for the first time with the substitution for pysillium husk whole to ph powder + 1/2 tbs almond flour. It was very good. Not eggy tasting, not too much almond flour texture, and not too spongy. As good as it gets in my humble opinion. I did make a little mistake and microwaved it on a plate that was not completely flat and my tortillia bowed in the middle and so it was thicker in the middle than the sides. Next time I'll put it on a flat plate. I used the silicone 9" round mat that I already had and it slid right off after it was done. It just doesn't get any quicker, easier or better. Next time (tomorrow) I'll use a flat plate, some salt, onion powder and garlic powder. I betcha I could make two smaller ones and use them as sandwich or hamburger bun. Thanks a whole bunch for this recipe Steve and all the work you put in it for the substitutions. It's a keeper!
Thanx so much Stever...you are brilliant! I tried 1 egg, 1Tbsp al. flour, 1 tsp psyllium husk, 1Tbsp pea protein, 1 Tbsp al. yogurt, 1 tsp flax meal cooked for 60 seconds and they turned out great. I would advise that you let the batter sit 20 min so the husk and flax can absorb the moisture thus thickening the batter a bit. I ended up using an icing spatula to spread it thin on the silicone mat.
As soon as I saw this, I ordered the silicon mat and started making them! They are amazing and going to save me so much money. I have been purchasing the egglife wraps and while they are great tasting, these are better and so much less expensive! Thanks Steve!
I did this with the oat fiber (1tsp) sub along with a pinch of salt, and I liked the result. Also, I noticed if you use about 1/2 the amount of batter on the silicon mat, the tortillas become very crispy without frying -- perfect for making Mexican pizzas. Take that, Taco Bell!
I made these last week after you posted and everyone liked the tacos I made with them. Thanks for the reminder about using room temp eggs. That explains why my subsequent batches (after the first) turned out a little wonky. Thanks for the link to the silicon mats. Brilliant as always.
Excellent video. If I had 30 low carb tortillas in my fridge, we'd be eating various enchilada casseroles for days. Add meat, cheese, and lots of sauce. And more cheese. Could even use them for lasagna noodles, thin crust pizza, nacho chips, etc. With lots of cheese. Thanks for including the oat fiber in your test. I've used it some in muffins and cookies, and a little goes a long way.
Holy cow! You have been a man on a mission!! Oat fiber, to me, tastes like sawdust (or what I imagine sawdust tastes like.) I've used it in several recipes and they got the big thumbs down from my "test kitchen tasters." I found that a tsp of coconut flour works perfectly instead. That said, I need to try your coconut flour version of this recipe. Ordering silicone rounds first!! Thanks for being the crash test dummy!
Generally speaking, sawdust tastes about like toothpicks, but depending on how well the blade or chain was lubricated, you can have a nice hint of petroleum seasoning. Lol
@@vinyfiny2019 I can't imagine attempting to choke down anything where the main ingredient is oat fiber! The recipe where I first used oat fiber is for drop dead delicious (my description) blueberry sour cream muffins that called for almond flour, whey protein isolate and 1/3 cup oat fiber (which the author gushed would give the muffins a great mouth feel) OR 2 teaspoons coconut flour. The first batch were horrible. Next, and subsequent batches, were made with coconut flour and have been **divine.** The blueberry muffin recipe is from Kristie Sullivan's book, A Journey Worth Taking.

I didn't use psyllium husk but I used parchment on a Corelle plate and didn't have any of the same issues. But I later used Lupin flour, vital wheat gluten and coconut flour and had breakage. When I used almond flour it was ok. I'll try the silicone next.

You, sir, are my tortilla hero!! I am a newly-diagnosed Celiac and have been missing my usual foods. I tried your original recipe and it absolutely hit the spot! After many months and many failed attempts at other recipes, I just enjoyed my favorite chicken taco with all the fixings rolled up into a delicious tortilla. No breaks or tears! Just perfect!! Thank you from the bottom of my heart (and stomach). I am allergic to egg yolks so I did use three tablespoons of egg whites to replace the whole egg and it worked great. I will be enjoying foods a lot better now thanks to you! ❤
I used the almond flour, vital wheat gluten, egg white powder and heavy cream version cooked on a silicone mat. My microwave is pretty powerful so I only cooked it 65 seconds (could probably get by with only 60). Still very pliable. This is so quick and easy, and there are so many possibilities with addition of different spices. Thank you for doing all the experimenting with the substitutions. These are amazing!

This is epic. Probably been a couple years since I’ve had a new keto recipe discovery, and this is a true banger. Legendary As I’m out of plain protein powder (on order), I sub’d varying amounts of coconut flour and extra cream. Worked out okay. Tonight, I’ll try it with collagen powder as well as completely omitting it. See how it goes. But I’m looking forward to my delivery of unflavored Tera’s Whey.

Good morning Steve, Got to say, you're going to have to become my go-to-guy. I just spent the last hour or so trying out different recipes for tortillas. What a waste of my time, not to mention about 10.00 in ingredients I had to dump in the bin. Then I remembered you. Thank you! I promise to come to your videos first! The original video you made on this, I made it perfect the first time. My husband will love these for the Chicken quesadillas I'm planning this evening. Do want to add. I DO watch your videos quite frequently, being kind of new to Keto and in the learning mode makes you quite the Teacher-to-Grasshopper.. One of your past videos you used Mesquite flour and described it as savory. So of course, I had to buy it. In my second go-round with more of YOUR original 90 second tortilla recipe, I used 3/4 tbsp of almond flour, and 1 tsp Mesquite flour. The taste is amazing! So not only do I get to "Thank-You" for a perfect recipe that wasted no more of these expensive ingredients, but a lovely, rich flavor depth to the tortillas I'm using this night, thanks to your description of the Mesquite. I also ordered the round silicone mats from you, they seem so much easier and I won't have to try to fold a rectangular one in the Nuker, lol. It may be possible to sub out the psyllium for some amount of beef gelatin, in which case, a person could make an almost zero carb tortilla that I think would qualify as carnivore. I just don't have enough experience working with gelatin to have put that in this video.
Looking forward to trying these, particularly as maybe a quick way to make lasagne sheets. I make my own sunchoke flour and so will be trying that in this

I buy the 4 pack at Costco when it's on sale and cut them to different sizes and shapes for my needs. I've even cut them to line square and rectangular baking dishes going up all 4 sides in place of parchment. Cost effective way to get round silpat mats.
Well I have to say you are bloody amazing! I’m not even halfway through and I’m already excited as can be! Oh my gosh I already ordered the rounds lol because I buy my almond flour tortillas from Costco and they are so expensive so this is gonna be my new go to and with all the different variations I’m gonna have fun trying them all out. I've made two tortillas. First, I tried the basic recipe (using almond flour) first. I loved it. I wrapped it around a left bratwurst. It stayed soft and pliable til the very last bite. Tonight, I wanted something sweet. I made the tortilla using coconut flour, a tiny splash of vanilla extract and a dash of pumpkin spice seasoning. For the filling, I used about an ounce (maybe less)of cream cheese and about a teaspoon of Swerve Brown sugar. It was soooo delicious. I will be making these tortillas a lot!! (I used Kate Naturals Heavy Cream powder instead of protein powder)
Tried it using very old psyllium, very old CA Gold protein powder. I was amazed!! I did one of my old favs, hot ham and cheese on a tortilla. If I had not made it myself I would not have been able to tell the difference. A tiny bit rubbery, but tiny. Another winner!!! Thanks dude. If I had had your recipes when I 1st started low carb about 1973 I would have been Mr. Universe.
This is a revelation: psyllium husk vs husk powder. Didn't know there were two different things. I think I've been using powder all this time and found it tricky to work with because it clumps up in drinks if not very careful. Always learning something on this channel, thx.
That looked like fun. I will have to experiment, due to needing to go dairy free for a month to see if it helps with some health stuff. I would be fine substituting using coconut cream for a tortilla but am dreading having to drink black coffee. I have never found a coffee I like black and there is no non dairy and non sweet creamer that doesn't taste like you know what. I might have no friends left by the end of July...
I hope You made it & everyone is still alive ;-) I use Artisana coconut butter &/or Native Forest powdered coconut milk & So Delicious unsweetened plain coconut milk to give my coffee the full fat experience. at first took a lil getting used to but none of those products for me has a huge coconut flavor. As we get new taste buds every seven days... :-) After a yr or so I found some of my favorite Creamora peppermint mocha & thought it would be worth having it for a couple days... It actually tasted like what it is - toxic cocktail! I poured it out & went back to my clean fatty creamy coffee with coconut fat! What has worked for You this last month??

Can't thank you enough for this so very easy recipe. I used the oat fiber sub for the whey protein. Worked beautifully and tasted great. My round silicon mats are smaller so made a double recipe and made three smaller tortillas. Took one and made a quick pepperoni pizza in my air fryer. Delicious. Thanks for doing the research.
Wow Steve...you've been busy! I think I'll be sticking to your original 90 second tortilla! I'm going to try and make a few tortilla chips and do a nacho plate with chips, Mexican white cheese, beef, avocado, sour cream and some salsa!😋
I did try 1 tsp psyllium powder, because that's all I had, and 1 1/2 or so ground flax seed. It worked. So flax might work in replacement for some of the flours.

Some folks are offended by the microwave? Seems strange to me, but I live in Texas where anything goes! By the way, I now have an incredible store of kitchen gadgets and keto ingredients in my home since I started watching these videos :)
Instead of one fat tortilla I made two tortillas out of the recipe and microwaved them separately on a silicone sheet, each for 1:30. They were thinner and more "tortilla" like. Thanks for this great recipe! It's a keeper.

Tried the original recipe and it came out disastrously. I'm thinking that leaving my eggs out in my kitchen which is almost at fridge-like temperatures isn't helping. But will be trying again in the weekend. Loved this update and have a number of these substitute ingredients in case all doesn't go to plan. Oh, and maybe I'll throw my eggs in a bit of warm water too before use. Have also ordered the silicone mats - but not holding out for those as it's going to take a while for them to make it here in good ole New Zealand. Thanks again Steve for your videos. I'm surprised because the original recipe worked out great for me. My egg was warmed up in warm water and I used a Correl plate....it was great (also used Pogo whisk), that might make the difference, as it didn't work with the fork. Wishing you great success.
Thanks for the advice, both helpful 😊. Tried again and much better outcome. Batter wasn't as doughy. Still need to fine tune it so that it doesn't have that rubbery texture but it was edible and served its purpose.
Just tried this with flax seed meal in place of psyllium husk and it worked out pretty well. I used a plate and it's thickness interfered a bit with the cooking process so I had to flip add 30 seconds to the time to fully cook the underside. Even with that it was not as dry as I expected. I'll try again when my silicone rounds arrive tomorrow and I think the only change I'll make is the addition of a pinch of salt.
@@CarbageMan yes, I am not talking about the "cremora" coffee mixer. This is cream in a can. No sugar. You can find it in the mexican food area of your market.

You are correct about this being the chaffle of tortillas! Here's my recipe... 1 Egg 1.5 Tbsp Almond Flour 1 Tbsp Pork Rhind Panko 1 tsp Oat Fiber 1/2 Tbsp Macadamia Nut Milk

Good recipe. I found the tortillas tasty. They were a bit thick, so the next batches will have a little more cream in them to thin them out. My microwave is 1500watts, so I tested 55 seconds. The very center of the circle (@ 2 cm) was not quite cooked. The second one, I cooked at your suggested 60 seconds. Perfect! Btw, I looked at the original recipe and was grateful you translated it into English! My Hebrew is non-existent, except for shalom, chutzpah, and hava nagila! Thanks, Steve. Thanks for that. Just found these wonderful videos, tried it tonight, and had the same experience. Wish I’d have paid more attention to Steve’s warning (and seen your comment). However, I cut the thicker “tortilla” into triangles and fried them, and they took on a kind of fried pita chip impersonation. Definitely worth exploring more…. 😉
Just for the record, I made a couple of these (standard recipe) on the stove in a non-stick skillet, and that worked just fine - the tortillas pretty much fall right out. However, Steve’s new silicone pad method really looks like the way to go.
It took almost a month for Amazon to get my 9” round silicone baking mats to me, but now I will be using them! I had to fold the rectangular cake mat to fit the microwave platter. The mats are easy to clean, so I’m all for them.
I've done both and I prefer the stovetop method.
i tried this 90 second tortilla and i absolutely loved it. It’s really great knowing that i can make something so quick instead of planning and spending a fair bit of time preparing foods. One of my faves is scrambled eggs with tomato, feta, spinach and tazaziki and roll it up and its pretty awesome, tried it for a type of gyro as well which was great too. Thank you Steve 🙏🏻

I’m gonna try making them in bulk for enchiladas! My husband has been struggling since he started keto 3 months ago. I really think using those store bought tortillas every day has been holding him back. I’m definitely giving some of these a try!
Keto bread/tortilla/etc. you get at the store use a super-high-gluten form of wheat for that low-carb rating. There is research showing this specifically contributes to fat gain in excess of its calories and damages upper intestinal tight-junction lining (which causes inflammation, a key element of all disease and obesity). This is basically another form of "frankenfood" alternative for the lowcarb world. Super convenient, but if good health is the goal maybe not ideal. I wonder how they'd work for enchiladas?? Because gosh that would be a great thing if so.

Ha ha! When he removed the plate I wondered to myself how many viewers would inadvertently be breaking their micro plate trying this.
Oat fiber is not a binder. But it works along with other flours to make it a little more like regular flour. I always tweak recipes and sub in part of whatever flour is being used with some oat fiber to lower carbs and calories. But the amount is different depending on what flour is being subbed for. I always use it in combination with other stuff to get a more wheat like texture.

I made these with several of the substitutions and ultimately made one of my own!
as follows:
90 Second Microwave Tortillas
1 tablespoon almond flour
1 tablespoon whole psyllium husk
1 tablespoon Perfect Keto unflavored collagen powder
2 tablespoons egg white (from a carton)
1 tablespoon heavy whipping cream
Pinch of seasoning if desired
Mix all ingredients in a one cup measure, scrape down sides with a silicone spatula and whisk again.
Pour onto a 9” round silicone baking mat and place in center of microwave oven. Microwave on High 90 seconds; turn mat 90* and microwave another 15 seconds.
Remove from microwave and peel off mat and place on a cooling rack.
These are usable as-is but I find the flavor and texture are enhanced if they are placed on a hot skillet or griddle for just a short time, around 15 seconds, each side til they start to develop brown spots like a real tortilla. If you let them go too long they will start to crisp up and will not be pliable.
AND these WILL brown and crisp up when shallow-fried in about an inch of oil in a skillet! You have to watch them closely as they will brown quickly, but you can fry them crispy and actually make tostadas that you can eat out of hand! Additionally, I tried cutting one tortilla into 8 triangles and frying til crispy - made decent chips. Just don’t let them get too brown or they will begin to get a bitter taste to them.
Nutritional Info:
Calories 151, Protein 10.7 grams, fat 9.5 grams, carbs 1.2 grams
VARIATION - Cinnamon Crispas
Use Perfect Keto Cinnamon Toast collagen powder instead of plain; cook as usual, let cool slightly, then shallow fry in 1” of oil til browned on both sides and remove to paper towel to dry. While still warm - sprinkle with a mixture of half cinnamon and half granulated sweetener of your choice. SO GOOD!

I made one of these tortillas today for the first time with the substitution for pysillium husk whole to ph powder + 1/2 tbs almond flour. It was very good. Not eggy tasting, not too much almond flour texture, and not too spongy. As good as it gets in my humble opinion. I did make a little mistake and microwaved it on a plate that was not completely flat and my tortillia bowed in the middle and so it was thicker in the middle than the sides. Next time I'll put it on a flat plate. I used the silicone 9" round mat that I already had and it slid right off after it was done. It just doesn't get any quicker, easier or better. Next time (tomorrow) I'll use a flat plate, some salt, onion powder and garlic powder. I betcha I could make two smaller ones and use them as sandwich or hamburger bun. Thanks a whole bunch for this recipe Steve and all the work you put in it for the substitutions. It's a keeper!
Thanx so much Stever...you are brilliant! I tried 1 egg, 1Tbsp al. flour, 1 tsp psyllium husk, 1Tbsp pea protein, 1 Tbsp al. yogurt, 1 tsp flax meal cooked for 60 seconds and they turned out great. I would advise that you let the batter sit 20 min so the husk and flax can absorb the moisture thus thickening the batter a bit. I ended up using an icing spatula to spread it thin on the silicone mat.
As soon as I saw this, I ordered the silicon mat and started making them! They are amazing and going to save me so much money. I have been purchasing the egglife wraps and while they are great tasting, these are better and so much less expensive! Thanks Steve!

I did this with the oat fiber (1tsp) sub along with a pinch of salt, and I liked the result. Also, I noticed if you use about 1/2 the amount of batter on the silicon mat, the tortillas become very crispy without frying -- perfect for making Mexican pizzas. Take that, Taco Bell!

Excellent video. If I had 30 low carb tortillas in my fridge, we'd be eating various enchilada casseroles for days. Add meat, cheese, and lots of sauce. And more cheese. Could even use them for lasagna noodles, thin crust pizza, nacho chips, etc. With lots of cheese. Thanks for including the oat fiber in your test. I've used it some in muffins and cookies, and a little goes a long way.

Oat fiber, to me, tastes like sawdust (or what I imagine sawdust tastes like.) I've used it in several recipes and they got the big thumbs down from my "test kitchen tasters." I found that a tsp of coconut flour works perfectly instead. That said, I need to try your coconut flour version of this recipe. Ordering silicone rounds first!!

Generally speaking, sawdust tastes about like toothpicks, but depending on how well the blade or chain was lubricated, you can have a nice hint of petroleum seasoning. Lol

Oat fiber should really only be used in limited quantities. It should never be the primary dry ingredient in a recipe.

The recipe where I first used oat fiber is for drop dead delicious (my description) blueberry sour cream muffins that called for almond flour, whey protein isolate and 1/3 cup oat fiber (which the author gushed would give the muffins a great mouth feel) OR 2 teaspoons coconut flour. The first batch were horrible. Next, and subsequent batches, were made with coconut flour and have been **divine.** The blueberry muffin recipe is from Kristie Sullivan's book, A Journey Worth Taking.

I didn't use psyllium husk but I used parchment on a Corelle plate and didn't have any of the same issues.
But I later used Lupin flour, vital wheat gluten and coconut flour and had breakage. When I used almond flour it was ok.
I'll try the silicone next.

After many months and many failed attempts at other recipes, I just enjoyed my favorite chicken taco with all the fixings rolled up into a delicious tortilla. No breaks or tears! Just perfect!! Thank you from the bottom of my heart (and stomach).
I am allergic to egg yolks so I did use three tablespoons of egg whites to replace the whole egg and it worked great. I will be enjoying foods a lot better now thanks to you! ❤

I used the almond flour, vital wheat gluten, egg white powder and heavy cream version cooked on a silicone mat. My microwave is pretty powerful so I only cooked it 65 seconds (could probably get by with only 60). Still very pliable. This is so quick and easy, and there are so many possibilities with addition of different spices. Thank you for doing all the experimenting with the substitutions. These are amazing!

As I’m out of plain protein powder (on order), I sub’d varying amounts of coconut flour and extra cream. Worked out okay. Tonight, I’ll try it with collagen powder as well as completely omitting it. See how it goes. But I’m looking forward to my delivery of unflavored Tera’s Whey.

Do want to add. I DO watch your videos quite frequently, being kind of new to Keto and in the learning mode makes you quite the Teacher-to-Grasshopper.. One of your past videos you used Mesquite flour and described it as savory. So of course, I had to buy it. In my second go-round with more of YOUR original 90 second tortilla recipe, I used 3/4 tbsp of almond flour, and 1 tsp Mesquite flour. The taste is amazing!
So not only do I get to "Thank-You" for a perfect recipe that wasted no more of these expensive ingredients, but a lovely, rich flavor depth to the tortillas I'm using this night, thanks to your description of the Mesquite. I also ordered the round silicone mats from you, they seem so much easier and I won't have to try to fold a rectangular one in the Nuker, lol.

It may be possible to sub out the psyllium for some amount of beef gelatin, in which case, a person could make an almost zero carb tortilla that I think would qualify as carnivore. I just don't have enough experience working with gelatin to have put that in this video.

I buy the 4 pack at Costco when it's on sale and cut them to different sizes and shapes for my needs. I've even cut them to line square and rectangular baking dishes going up all 4 sides in place of parchment. Cost effective way to get round silpat mats.

I've made two tortillas. First, I tried the basic recipe (using almond flour) first. I loved it. I wrapped it around a left bratwurst. It stayed soft and pliable til the very last bite. Tonight, I wanted something sweet. I made the tortilla using coconut flour, a tiny splash of vanilla extract and a dash of pumpkin spice seasoning. For the filling, I used about an ounce (maybe less)of cream cheese and about a teaspoon of Swerve Brown sugar. It was soooo delicious. I will be making these tortillas a lot!! (I used Kate Naturals Heavy Cream powder instead of protein powder)

Tried it using very old psyllium, very old CA Gold protein powder. I was amazed!! I did one of my old favs, hot ham and cheese on a tortilla. If I had not made it myself I would not have been able to tell the difference. A tiny bit rubbery, but tiny. Another winner!!! Thanks dude. If I had had your recipes when I 1st started low carb about 1973 I would have been Mr. Universe.
This is a revelation: psyllium husk vs husk powder. Didn't know there were two different things. I think I've been using powder all this time and found it tricky to work with because it clumps up in drinks if not very careful. Always learning something on this channel, thx.
That looked like fun. I will have to experiment, due to needing to go dairy free for a month to see if it helps with some health stuff. I would be fine substituting using coconut cream for a tortilla but am dreading having to drink black coffee. I have never found a coffee I like black and there is no non dairy and non sweet creamer that doesn't taste like you know what. I might have no friends left by the end of July...
I like Nutpods, they have flavors and you can add your own sweetener. Also coconut milk creamer recipes on Pinterest. ☕️
I hope You made it & everyone is still alive ;-) I use Artisana coconut butter &/or Native Forest powdered coconut milk & So Delicious unsweetened plain coconut milk to give my coffee the full fat experience. at first took a lil getting used to but none of those products for me has a huge coconut flavor. As we get new taste buds every seven days... :-)
After a yr or so I found some of my favorite Creamora peppermint mocha & thought it would be worth having it for a couple days... It actually tasted like what it is - toxic cocktail! I poured it out & went back to my clean fatty creamy coffee with coconut fat! What has worked for You this last month??

Can't thank you enough for this so very easy recipe. I used the oat fiber sub for the whey protein. Worked beautifully and tasted great. My round silicon mats are smaller so made a double recipe and made three smaller tortillas. Took one and made a quick pepperoni pizza in my air fryer. Delicious. Thanks for doing the research.

I did try 1 tsp psyllium powder, because that's all I had, and 1 1/2 or so ground flax seed. It worked. So flax might work in replacement for some of the flours.

Instead of one fat tortilla I made two tortillas out of the recipe and microwaved them separately on a silicone sheet, each for 1:30. They were thinner and more "tortilla" like. Thanks for this great recipe! It's a keeper.

Tried the original recipe and it came out disastrously. I'm thinking that leaving my eggs out in my kitchen which is almost at fridge-like temperatures isn't helping. But will be trying again in the weekend. Loved this update and have a number of these substitute ingredients in case all doesn't go to plan. Oh, and maybe I'll throw my eggs in a bit of warm water too before use. Have also ordered the silicone mats - but not holding out for those as it's going to take a while for them to make it here in good ole New Zealand. Thanks again Steve for your videos. I'm surprised because the original recipe worked out great for me. My egg was warmed up in warm water and I used a Correl plate....it was great (also used Pogo whisk), that might make the difference, as it didn't work with the fork. Wishing you great success.

Just tried this with flax seed meal in place of psyllium husk and it worked out pretty well. I used a plate and it's thickness interfered a bit with the cooking process so I had to flip add 30 seconds to the time to fully cook the underside. Even with that it was not as dry as I expected. I'll try again when my silicone rounds arrive tomorrow and I think the only change I'll make is the addition of a pinch of salt.

Heavy cream powder looks very interesting! I have a hard time keeping heavy cream around because I don't put it in coffee.
I keep mexican cremora on hand in my pantry. It is handy to have ready at a moments notice. Basically cream in a can.
@@alexiskiri9693 Mexican Cremora must be a lot different, because the stuff on Amazon is mostly corn syrup.
Trader Joe's sells cream in a juice pack type container in the baking section. Nice to have as a backup.
@@CarbageMan yes, I am not talking about the "cremora" coffee mixer. This is cream in a can. No sugar. You can find it in the mexican food area of your market.

Thank you for sharing!!! I made 3 of them last night and they all turned out perfect! I was able to use the silicone lid from my egg bite mold. I used powdered milk for the whey protein, and it worked great.

Good recipe. I found the tortillas tasty. They were a bit thick, so the next batches will have a little more cream in them to thin them out.
My microwave is 1500watts, so I tested 55 seconds. The very center of the circle (@ 2 cm) was not quite cooked. The second one, I cooked at your suggested 60 seconds. Perfect!
Btw, I looked at the original recipe and was grateful you translated it into English! My Hebrew is non-existent, except for shalom, chutzpah, and hava nagila!
