this video is actually a pretty good way to study legit ramen. and although i think way of ramen is a great guy and enjoy watching him learn. He probably isn't the best to learn from cause he's not quite there yet. and i believe he would agree. From a ramen cook here, good luck man. 1 tip i would give that i don't reallycare for in this video (not that it's wrong) is adding veggies to the broth. I'm more for creating a fantastic broth and then letting the flavor base (shio, shoyu, etc) and aromatic do the flavoring. but it's not a big deal.

奈良にある店舗にかよって学生時代を過ごしました。開店初日に食べに行って、看板に写ってるおじさんが大釜の骨を砕きながら、砕いた骨から出てくるとんこつスープを掻き回すのを見て衝撃を受けて以来ずっとファンです。近隣にあるとんこつラーメン屋はペーストを溶いて作るものばっかだったため本当に感動したものです。
あの頃からずっとキムチとあげニンニク食い放題、値段は上がってしまいましたがいつまでも帰省した時には必ず食べる自分のソウルフードになってます。
手作りのため、味がごく僅かに、気候や料理人によって変わるのが、本当に手料理を食べれているという実感と共に、それであっても美味しいという感動を味わってます。オススメです。
2011年の日本ワーホリの頃、河童ラーメンさんには何度もお世話になりました。今でも人生ラーメンTop1です。

집에 오사카라서 여기 가끔가는데 라면 맛있습니다. 김치도 일본에서는 돈주고 사먹어야되는데 테이블에 있어서 무한 리필이고 참고로 볶음밥도 괜찮음.. 라면에 볶음맛(소)자에 만두(교자)하나 시키시면 추천메뉴입니다. 교통편이 안좋아서 차없으면 가기 힘들지만 기회되시면 추천드립니다. 아니구나 체인점이라서 찾아보이시면 금방 갈수도 ㅎㅎ
