Damn just imagine being a tourist coming to a lonely and quiet town in japan. All the food outlets are closed and there’s not a single soul out on the dark and empty streets. It’s 11pm now but you are cold and hungry. Then, you notice a little pop up shop in the distance, emitting a warm faint orange glow in the surrounding darkness. You approach the store and you can smell the strong and delicious aroma of broth. A kindly old man greets you and serves you a warm steaming bowl of delicious ramen in a cold winter’s night (Thanks for the sweet comments guys imma go buy a ramen lol. But as good as these words sound, nothing will ever surpass meeting these folks and savouring the food in person. Who knows, maybe you’ll even experience something more beautiful when you’re there yourself ❤)
Traditions fade unfortunately. Keeping them alive is nice but, with how busy the work and school schedules it's easy to see why they are disappearing. These last remaining stall owners are truly amazing and it's sad to think that someday they might not be around anymore at all.
It seems like this “ramen experience”, going to a stall like this and just having a cozy time with some great food, seeing it being made right there for you in the middle of the night… it must be something of a national treasure of Japan. Thank you for documenting it
The hygiene and the quality of food of this stall put any stalls and restaurants in my country to shame. The relaxed atmosphere and the food quality worth at least a 5 star rating. Good god you never cease to amaze me Japan!

I always love seeing someone who is working hard everyday. It’s a great motivation and I’m sure he has made thousands of people happy through his ramen. He may not have chose the easiest way to make a living but he has put his heart and souls into it.
I agree. Hard work is very honorable. These ramen stall owners are truly passionate in what they do. I'm sure it's not easy to get all of this stuff together. I've watched a few of these kinds of videos and one guy said his stall hasn't been busy because of how busy people are and go for faster prepared food. It is sad to think that these remaining stalls just might be the last. I love seeing them smile and hearing the laughter. Really makes me love these even more.

Most of the time these kind of stalls have the most Authentic taste specially if the Maker/cook is a Senior Citizen. They always use the same ingredients when they started the Ramen business. Godbless grandpa :) Love from Philippines.
I actually have high respect to these kind of jobs, even if its just a stall he's running his own business, this is one of my dream job when i retire from my present occupation. Its not much but its an honest work.
This is kind of food I want to try if I'm a tourist in any country. Ordinary, low-budget dish prepared by ordinary chef for ordinary people. I'm sure the taste won't be anything special compare to proper Ramen restaurant, but the feel man, the feel.

@@greenlawnfarm5827 the black stuff is called tare. Just look it up how to make different kinds of tare. On top there's usually green onions, meat and seasoned boiled egg.
After seeing thousands of videos of Asian cuisine I have learned new recipes and dishes that I make at home. The Asian cuisine is one of my favorites and I eat more of it than the traditional food we have here in the US.

he modified the truck into a mobile kitchen, which amazed me so bad. and the noodles is wonderful as well.

自分が小学生の頃、家の前を通る屋台のラーメン屋さんを止めて食べたラーメンを思い出した。晩御飯は終わってるのにまたラーメンを食べられる特別感がなんともいえなかった。泣きそう。
