Braised mackerel with radish (고등어무조림)

    "godeungeo jorim," which is braised mackerel and radish in soy sauce based broth. Along with grilled mackerel, this is the most popular way of cooking mackerel in Korean cuisine.
    For 4 servings
    Cooking time: 50-60 minutes
    Ingredients:
    Mackerel, soy sauce, sugar, hot pepper flakes, garlic, ginger, white radish (or daikon), onion, green onions, green and red chili peppers.
    Directions:
    Prepare 2 medium sized fresh or frozen mackerel (750 grams, or 1.7 pounds). Thaw them out if frozen.
    Cut off the fins and heads.
    Make a slit from the top to the vent and clean the guts.
    Cut the fish across into 2 inch pieces, rinse in cold water, drain, and set aside
    Prepare your vegetables:
    Peel a large, heavy Korean radish. Cut 1 kilogram (2.2 pounds) worth of radish into pieces 2 inch wide, 2 ½ inch long, and 1 inch thick.
    Add the radish pieces to a large thick bottomed pot with. Spread them out evenly, by hand.
    1 large onion or 2 medium sized onions (about 400 grams', or 2 cups' worth), cut into ¼ inch thick slices and place over the radish.
    Cut 3 stalks of green onions into pieces 1 inch long, and chop 2 green chili peppers and 1 red chili pepper. Set aside
    Let's make godeungeo jorim:
    Place the mackerel on top of the pieces of radish.
    Make seasoning sauce in a bowl by mixing ½ cup soy sauce, ¼ cup hot pepper flakes, 2 tbs sugar, ⅓ cup garlic cloves minced (12 cloves), and 1 tbs of minced ginger.
    Pour the seasoning sauce over the fish. Pour in 1 cup of water along the edges of the pot.
    Close the lid and bring to a boil over high heat for 20 minutes.
    Open the lid, tilt the pot, and use a spoon to push aside the mackerel and radish to make empty spot for the broth to well.
    Scoop some broth from the empty spot and pour it over top of the fish and radish. Repeat several times.
    Add the chopped green onion, green and red chili peppers.
    Close the lid and lower the heat to a simmer for 30-40 minutes, until the radish is cooked thoroughly. The radish will absorb the soy sauce based broth, so it will look brownish and a little translucent when cooked nicely.
    Open the lid and turn up the heat to boil off excess broth.
    Tilt the pot and use a spoon to push aside the mackerel and radish to make empty spot for the broth to well.
    Scoop some broth from the empty spot and pour it over top of the fish and radish. Repeat it off and on for about 5-7 minutes.
    Turn off the heat and transfer to a serving plate. Serve with rice, kimchi, soup, lettuce, and a few more side dishes.

    Walked to Chinatown and back to get fresh mackerel. This recipe did not disappoint. So clever using radish/onions as a pedestal to steam/braise fish. Mackerel is so easy to prepare and bones are so simply dealt with in eating.
    Thought there would not be enough liquid in early stage, but radishes really sweated a lot of delicious liquid.
    Thought it might be fishy, but it was perfect and made my apartment smell fantastic, simmering.
    Yet another keeper from Maangchi.

    I recently watched the Koren drama "Let's Eat" and this was one of the dishes they had. It looked so good! This looks delicious too! I have only gone to a Korean restaurant twice but I am already in love with the sesame, sweet, salty flavors of the cuisine. I'm going to try to make some of these things myself!

    My daughter and I are big fans. She sent this to me and asked me to make it. I didn't have the Korean radish so I used potatoes. We also left the head on and she said it tasted amazing.

    Dinnertime was sooooo quiet - everybody loved loved loved it and was busy just chewing and eating! I actually don't cook off all the liquid - it is so tasty we ate it all mixed with rice :) This recipe is awesome and sooooo simple to make! One of my best go-to dishes now!     @ichom20 great! It's called heukmi chapssal which is black sweet rice. Sweet rice is glutinous rice and it has nothing to do with sweetness but it's more sticky than usual short grain rice. Check out the photo of black sweet rice on my website. When you visit my website, you will see search box. Type simply "black sweet rice", then you will see the photo and the recipe in the comment section for the multi-grain steamed rice that I had in the video.

    @meggoflower potatoes have a shorter boiling time than radish, and they contain so much starch your stew will thicken up a bit! but if you're familiar with boiling time of potatoes, you can adjust when you add final ingredients :) potato stew is delicious! you can still serve it with very fresh lettuce - to even out spicy/savory taste my mother would make salad like this: romaine lettuce leaves hand torn. dressing: 3 parts white vinegar, 2 parts white sugar, 1 part water. it's addicting!!!

    I watch Maangchi whenever I need inspiration on what to eat and when I don't have appetite. I am pregnant now and I plan on making a huge batch of different kinds of stocks and broths and freeze them. gonna use them when I become lazy :D

    i love mackerel! i've always eaten them with the bones (i mean, i dont eat the bones but the fish is cooked with it intact). this recipe looks so good maangchi! but the part of europe im in, it's so difficult to get a whole fish like this ): can't even get them frozen, much less fresh T___T im always happy when i go back home in asia because i can even get prawns bigger than my hand lol *big fan of seafood*
