Palestinan food is so tasty and absolutely wholesome. Love it 🇵🇸❤️! Iam so glad we can taste it in our country too. Lot of good arab restaurants near by.
I am from Cyprus (greek-speaking side) and we also make this. I love it when I see stuff that reminds us how we are all alike in our little fucked up neighbourhood.
Wow we eat this in Iran too! 😊 In my family, we accompany it with mini fried meatballs, fried raisins and fried dates! So cool to discover this similarity!
I've been making Mujaddara since my poor college student days 40 years ago. Kids grew up counting this as one of their favorite "comfort" foods. I make mine very similarly to yours but I add whole garlic cloves to the lentils while they boil (a friend from Jerusalem suggested that long ago & I liked it that way). Also, I make double the amount you make. This is an amazing and delicious and very affordable dish. Thanks for highlighting it.
Do you put brown sugar and cinnamon and allspice in yours? My Iraqi uncle makes it like that and it's so good. But I noticed Obi left those out. The sugar and allspice and cinnamon are also included in Sami Tamimi and Yotam Ottolenghi's recipe from their Jerusalem cookbook. I always make double because it's so comforting isn't it!
@@happydillpickle Even your name makes my mouth water! Going to fish out my dill pickles now! I have made this with Yotam's recipe. Cinnamon and allspice are too sweet in this recipe, to my taste. This recipe has the savory vibrancy that makes my mouth water -- like that dill pickle! Thank you for these wonderful recipes! I am especially looking forward to that Gazan dill sauce!
No I don't but I have had it with cinnamon, allspice, and yellow raisins added to it. There are so many lovey ways to cook the simple lentil :)@@happydillpickle
@@happydillpickleYUM! I usually add golden raisins and chopped dried apricots and a drizzle of date syrup to mine, cardamom along with cinnamon. And most of the time when it’s good to add pickles, I will add pickled jalapeños! Which makes it imperative to add lots of finely chopped coriander to the yoghurt. But that’s just me 😊❤
The first recorded recipe for mujadara appeared in a 1226 AD Iraqi cookbook called Kitab al-Tabikh. A pot in Iraq is still called Jidir, mujadara simply means: cooked in a pot
Love you brother! Thanks for this amazing dish. I first learned to enjoy this dish in the East Jerusalem neighborhood of Al-Tur with a loving Palestinian Family. It changed my life ❤️ Stay Blessed ✌🏼
We saw this video last evening and immediately had to try this recipe. Sadly, the market ni the village where we live in Italy did not have all the ingredients so we had to improvise, especially with the ingredients of the Gazan spicy salad. Still, WOW! We had a truly amazing lunch and can't wait until next summer when our garden is producing tomatoes and cucumber to try this again. Hopefully we will find a way to grow dill here as well as all we have is dried dill in our area. That said, what an amazing dish. We love your channel and the work you do. شكرا!
I actually saw your video from a couple years ago about 5 amazing Palestinian breakfast dishes in my feed which brought me to your channel again. Your recipes are always delicious and your explanations are fantastic, definitely subbing so I stop missing out on all the deliciousness. Also definitely going to make this for my mother. It's everything she loves in one dish.
My friend sent me this video thinking it sounded like a dish I would enjoy. Halfway through the video I had already decided I wanted to make it for myself! All the sides sound super tasty too. Looking forward to checking out more of your videos and learning about Middle Eastern food :) edit: Attempting these this week, but my food scale is dead and I'm used to using cup measurements anyway, so saving my conversions for future reference: Fried Onions: 3-4 Large Onions 1 1/5 cup Olive Oil (250g) Sprinkle of salt Mujaddara: 1.4 (approx. 1 1/2) cup lentils (275g) 1 cup white rice (200g) 3 cups room temp water (700ml) 1.5 tsp salt 1 tsp black pepper 1 tsp cumin 2 handfuls of fried onions 2 Tbsp Onion infused Olive Oil Arabic Salad: 2 persian cucumbers 2 tomatoes 3-4 spring onions or 1/4 onion 2 lemons 1 tsp vinegar salt and pepper olive oil (2-4 Tbsp roughly? unmeasured) Gazan Salad (Salata Ghazaweya): 2 green chillies 2 large garlic cloves (3 small) 1 small tomato (diced) 2 tbsp lemon juice 1 tbsp olive oil 1 tsp salt 1.5 Tbsp dill leaves, removed from stems Cucumber Yoghurt Dip: 4/5 cup (approx 3/4 cup) greek yoghurt (230g) 1 small cucumber (60g) 1 small garlic clove 1 tbsp lemon juice 1/2 tsp salt 1/2 tsp dried mint 2-3 Tbsp water (or until it reaches preferred consistency)
Loved this channel since day 1. Now I love it even more because you keep showing us some new Palestinian recipes I never heard of like the gazan salad. Keep up the good work Obi.
Amazing video as always. I hated this as a kid but it’s one of my favourites now 🙏🏼 Thank you again for using your platform for humanising us. You’re doing Gods work

I've actively been waiting for a mujadara recipe from Middle Eats and it's finally here! Have been experimenting with the dish since being introduced to Cypriot 'moutzentra' which is less spiced but more herby
Yes! My favourite food! I wanted to thank you, Obi and Salma. I've been struggling to eat properly and cook at home, but your recipes have changed my life. I'm motivated, and my cooking has just never been better. I didn't get the chance to learn how to prepare Palestinian food properly growing up, and now I can make all of my favourite things. I'll be preparing a special Christmas meal for my family, all thanks to you. Especially I appreciate how you explain how to prep and methods for cooking. That takes your videos to the next level, in my opinion.
Everyone knew the suffering of innocent Germans during WWII was Hitler's fault not the powers allied against his genocidal plans. Every dollar you give to Gaza will be stolen directly by Hamas or used to free up money to enrich its leadership in Qatar and conduct terrorist attacks.
I'd never heard of this dish before, but since seeing your video a few weeks back I think I've eaten this about six times. Thanks for introducing us to it.
thank you for the beautiful recipe and telling us more about the food of the Middle East. So sad to be reminded of what is going on in Gaza. Praying for a resolution 🙏
I just discovered this dish last week and I am making it for the third time today. Yours is the first recipe I've seen without tomato sauce/paste, but if the dish is as old as you say then I guess that would have to be a relatively recent addition, lol. I'm gonna try it this way today
Thank you Obi for showcasing my favourite dish in the universe! I add a teaspoon ground cinnamon, a teaspoon crushed allspice berries, two teaspoons crushed coriander seeds, 2 teaspoons slightly crushed cumin seeds and a teaspoon crushed black pepper to the oil I fried the onions in (same pan), then fry the dry basmati in that oil and spices mixture until the rice becomes translucent. The magic ingredient I add is two teaspoons of brown sugar, the darker you use, the more flavour. This makes is insanely moreish. I then add the cooked lentils, mix in with the water I drained from the lentils along with any extra water that might be needed. I fry my onions in batches in very hot oil til they're super crispy but not quite as brown (light olive oil is the best) after salting and flouring them and letting them sit in the bowl I floured them in for 5 minutes for their juices to absorb the flour first: different from your version but less oil needed and I find it easier. I'm going to have to try that huge batch all at once. It's reminiscent of the fisherman's rice you did a video of which was incredible.
This is one of those dishes I didn’t like as a child, but now I’ve come to love and miss! And now I finally have a solid recipe to recreate it again! Thank you for always coming up with the perfect recipes with each video
I had mujadara for the first time when I was in At-Tuwani (I was there to meet with an Italian association walking children to school as the colonists attack them on their way to school) and I found it delicious. It was served to us on a big plate to be shared and I couldn't stop eating! Thank you for the recipe, I'll try and make it.
This is my absolute FAVORITE middle eastern dish, ever! And that's saying a lot because I also loooove ful. But this dish is just perfect in every way.
I’ve been making and enjoying this dish for years. I make the lentils and brown rice with cumin and some broth. I add chopped spinach just at the end. After plating, each person adds their desired amounts of lemon, labne and sautéed onions. It is simple and healthy comfort food - a staple in our home!
So happy you got recommended to me by the algo lol it worked for good for once. I used to get mujadara at lunch in high school all the time and loved it, thank you for the recipe!
Fantastic. I am extremely compelled by the fried onion method (I've tried making crispy onions before and never gotten it right), and the salata Gazawiyya. You're right about cumin aiding digestion, and rice with yogurt - sounds like a really banal combination but it's divine. Bless you for consistently speaking up for Palestine. Palestine will be free!
mjuddara is SOO under rated! I was taught to make it 4 parts lentils to 1 part rice, but i think thats a testiment to the variations the dish can take and still be to true to what it is!.
I love mujadarah. Your recipe looks delicious and easy to make with your clear step by step explanation. In Levant rice is replaced by Burghul which is tasty too. You are right in saying that cumin reduces farts 😂
Mujaddara with rice or pasta, palestinian or egyptian style. With fried onions and hot peppers and tomato sauce. Both are delicious. We will definitely try this gazan salad as well 🇵🇸♥️
I grew up eating mujadara made with cracked bulgar wheat instead of rice and i really prefer both the flavor and texture and the ease of preparation. Instead of cooking with the lentils, which can result in either the lentils or rice being a bit under/over done, you can prepare the bulgar right in the bowl you plan to serve from by just adding boiling water to the grain and fluffing it up after a few minutes. Love this onion method!
Fabulous as always Obi.... Hope you remember me. I made friends with my neighbour and his family who are from Alexandria, Egypt...Our friendship has grown beautifully, and as you said last year, food builds bridges...Just checked your community page and yes iv'e donated to Palestinian Children's Relief Fund...It is disgraceful what we are seeing...So very painful to watch...I think the scene of the young boy crying for his father a few days ago after the missile strike will haunt me for the rest of my life, like other iconic images of war and suffering over the years still do....Love to you and your family from myself and my family.....
Making this for the second time in a month and it’s quickly becoming one of my favourite dishes! Thank you so much for sharing this and for using your platform for Palestine 🍉🍉🍉
This looks amazing specially with the sides of Salads! I think many country's cuisine has a basic one pot rice and lentil dish that serves carb, protein etc all necessary nutrition in one meal. In Bangladesh its Khichuri, made with rice, red lentil & simple spices. Ideal baby food, and ideal adult food both. When you add an omlete and/or Alu bhorta (spicy version of mashed potato) it tastes even more heavenly. Its a great student meal as well; as its cheap, nutritious and easy to cook.
You’re right, I do need to try this, looks delicious. I often make the Indian lentil and rice dish Khichdi, and I love that so I’m intrigued to try a different style. Thanks Obi.
Thank you for everything you are doing to keep our culture alive through food. Gratitude also for using your platform to talk about the situation in Gaza and Palestine. We all deserve to live in peace and justice no matter who we are. We are all the same.
I am not a fan of lentils (will eat but unenthusiastically) but I love mujaddara. I sometimes make it with bulgur wheat as well. Also love how you are not afraid to speak out for Gaza
I watched this today, decided to make it for dinner and I'm simply astonished. It is delightful, however I did not expect how filling this is. Can't wait to try other recipes you share!
Thank you so much for the delicious recipes some of which have become staples in our house! I am also grateful to you for drawing attention to the appalling and ongoing situation in Palestine. Keep up the wonderful work you do!
Love your channel. The food is so yummy. Thank you for speaking out for the Palestinians. It is such a tragic conflict and I just wish someone could wave a magic wand and allow the Palestinians and Israelis to live in peace and harmony. God bless 🙏🙏🥰
I love seeing commonalities and cross pollination across cultures from all things, be it music, food, language. In an Iranian household, this is a staple that never lets me down, in my house, this is often accompanied with a sunny side up, scrambled egg, ground beef, salad, just about anything to hand that you like. Just one of the staples I grew up with that I love seeing regional variations of.
I absolutely love this channel! Thank you for sharing all these amazing recipes and for speaking out and up for Palestine. I have been making mujudara for years, and can’t wait to try it with the sides next time!
I just finished eating, took me quite some time to chop up all these things but it turned out amazing! That combination of the salad, yoghurt sauce, spicy topping and lentil-rice was amazing!
I fell in love with your channel years ago for it's great recipes that came from a place of love of life and good food. Years later, I am even more impressed with both of your incredible hearts. Thank you for sharing your message in support of Gaza and I appreciate the work that you do. Also, I have a recipe for tomorrow
I just made this tonight and let me just say i could eat this every day!!!!! The combination of flavors is a-ma-zing. I followed each step and I hope to make this at least once a week. You are right, it's difficult not to gobble up the crispy onions. Thank you for this delicious, nutritious, inexpensive meal😁
Such a great recipe. I followed his exact steps. Next time, I will use fewer lentils, and I will add more water and cook them longer! Give us more one pot wonders!!
Oh my word, that looks so amazing! I'm going to have to try a low-heat version (as my system cannot handle much spice). Thank you for sharing this recipe!
I attempted to make Mujadara the other night - but my onions weren't crispy like these. Definitely going to use your method and make the Gazan salsa ! - I love dill. Thank you !
Thank you so much for this recipe. Our hearts go out to Palestine and every beautiful Palestinian every single hour of every day. Sending love and respect from Alberta, Canada, where each of us who care is doing our part. Big hugs to you.
As a lot of people are saying, I'm so happy that the creators behind such an incredible food channel have the politics to back it up. Thanks for your content and viva Palestina!
Shukran for the recipe…..I like to try different recipes from Middle East…..& Bravo for raising Palestinians pleight…..may Allah bless them…..Love from India 🇮🇳
I'm going to follow this recipe next time. I've had such difficulty getting lentils and rice done well. Seems simple, but I've not been cooking the lentils before hand, which was the the problem. The accoutrements seem delicious also.
My daughter (11) is a fencer, and she trains for about three hours a day after school; I pack her a large "snack" of mujadara (or, alternately, koshari, a similar Egyptian dish) to fuel up between school and fencing. Energy, nutrition dense, etc. It's a perfect street food. For the salad, I usually add to the tomatoes and cucumbers some chopped fresh oregano and parsley, Kalamata olives, and chopped roasted bell peppers (if you add some feta it's basically a Greek salad).
Can you gently make the chili sauce in a food processor on low? I know the mortar and pestle is the preferred and classic, but I currently don't have mine. TY. Love how you include all the additional condiments and sides.
Method 2 : after rinsing the brown lentils, soak the lentils underwater with a tsp salt & keep covered on countertop for at 8 hours. Then drain out water & cook it together with your rice with 2 tsp salt & a tsp of mixed Arabica spices. The lentils will cook soft along with the rice.
You've consistently showed up for so many countries in pain, when the western world has turned a blind eye. You're an amazing cook and an even better person. I wish you didn't have to humanize middle eastern people, but I'm grateful you're doing this nonetheless. Thanks for another amazing recipe, I'm excited to try this out.
I love your channel. I always want to make everything. This is something I'll like to try for sure. Praying every single day for the victory of Palestine.
Just tried this dish, it was awesome! My only disappointment was the onions did not crisp up, I think I'll try a lighter oil next time. But it tasted great and this is a new favorite at my house. Thank you for sharing!
The gazan salsa looks fantastic. I was a bit surprised to see dill (which I love). Is that common in Gazan cooking? I always associate it with cold climates.
Solidarity from an Nde (Apache) person living on Coastal Salish lands in the Pacific Northwest. Thank you for sharing these wonderful recipes and words on behalf of Palestinians. Freedom for Palestine❣❤🍉❤✌🏽🌍
Cooking middle eastern food is like travelling through time, we can follow the journey of our ancestors from the very start of the human race through food. Your channel is a celebration of the best of humanity Also, its tastes amazing!
many families in the northerner part of Palestine like mine substitute the rice for bulgur and sometimes we cook the onions until they're charred and use their juices to stain the lentils blackish brown. interestingly enough we also only eat it with salata balady and yogurt but never kheyar blaban ( cucumber yougurt ) I'll have to try it next time although I'm sure it would be fantastic.

I am not a fan of lentils (will eat but unenthusiastically) but I love mujaddara. I sometimes make it with bulgur wheat as well. Also love how you are not afraid to speak out for Gaza
Me either, they've never been a favourite, but this was pretty great.
Thank you for the great recipe and the great message! I'll be making this and I'll be encouraging my friends to donate.
Absolutely delicious! I made all three sauces and I received so many complements on this dish.
I can’t wait to try this recipe.
Bravo to you for taking the time to address the injustices against Gaza! We are protesting here in Canada too!
Yes!!! Majaddura for the win. the ultimate comfort food on a budget
I absolutely love this channel! Thank you for sharing all these amazing recipes and for speaking out and up for Palestine. I have been making mujudara for years, and can’t wait to try it with the sides next time!
Thank you for bringing light to the people of Palestine. May God reward you.
Thank you !
Every bit of these recipes look absolutely delicious.
Thank you so much for this recipe. Our hearts go out to Palestine and every beautiful Palestinian every single hour of every day. Sending love and respect from Alberta, Canada, where each of us who care is doing our part. Big hugs to you.
thank you for your wonderful recipes, and your wise words 💚
As a lot of people are saying, I'm so happy that the creators behind such an incredible food channel have the politics to back it up. Thanks for your content and viva Palestina!
I tried this and i like it very much. Especially Gazan salad, even if i normally dont like dill
This looks great for week night meals. Thank you for sharing!
I really enjoy the way you make your videos and your overall vibe. I don't even know you, but I feel like you're my friend.
Shukran for the recipe…..I like to try different recipes from Middle East…..& Bravo for raising Palestinians pleight…..may Allah bless them…..Love from India 🇮🇳
THANK YOU for your wise and delicious work!!!
I'm going to follow this recipe next time. I've had such difficulty getting lentils and rice done well. Seems simple, but I've not been cooking the lentils before hand, which was the the problem. The accoutrements seem delicious also.
I made it today. It was absolutely delicious. Thank you for your videos.
Thank you for this receipe and your powerful message You are a good man
and still not rotten…amazing
We love you !!! Even.more now ! United in love peace and cause ❤
I don't think I'll have a chance to make it for a few days but this might become a new fav as a student. Love your channel
In Iraq we have a similar dish using rice and mung dal beans! So delicious
Best of the best on RUclips! Looks amazing Chef.
You've consistently showed up for so many countries in pain, when the western world has turned a blind eye. You're an amazing cook and an even better person. I wish you didn't have to humanize middle eastern people, but I'm grateful you're doing this nonetheless. Thanks for another amazing recipe, I'm excited to try this out.
ah thank you for this and showing me how to make non-clumpy mujaddara!! Cant wait to make that Gazan salad
I love your channel. I always want to make everything. This is something I'll like to try for sure.
Praying every single day for the victory of Palestine.
Mmmm love Mujadara! We also sometimes use course bulgar instead of rice! Love this meal!
The entire meal looks so tempting, satisfying and delicious!
Love love love ❤❤ can’t wait to try 🥰 thank you for the beautiful vegan recipe
Just tried this dish, it was awesome! My only disappointment was the onions did not crisp up, I think I'll try a lighter oil next time. But it tasted great and this is a new favorite at my house. Thank you for sharing!
The gazan salsa looks fantastic. I was a bit surprised to see dill (which I love). Is that common in Gazan cooking? I always associate it with cold climates.
It's common in some parts of India.
Yeah it seems like it's popular in Gaza. It's also used quite a bit in Egypt, especially in stuffed vegetables.
Thank you for always talking about and reminding people about the plight of Palestinians.
Thank you so much for this recipe and for speaking out for what's happening in Gaza/Palestine
One of my favorite dishes. My Indian wife is going to try making it. Ghazza will rise again. Falastiina 9arabiyya!
thank you obi! the part urging those who enjoy the middle east’s best moments to care about its worst moments gave me chills
Solidarity from an Nde (Apache) person living on Coastal Salish lands in the Pacific Northwest. Thank you for sharing these wonderful recipes and words on behalf of Palestinians. Freedom for Palestine❣❤🍉❤✌🏽🌍
My friend is Palestinian and makes this. And we love it so much we’re always asking her to make extra so we can take it home for leftovers!
Cooking middle eastern food is like travelling through time, we can follow the journey of our ancestors from the very start of the human race through food.
Your channel is a celebration of the best of humanity
Also, its tastes amazing!
many families in the northerner part of Palestine like mine substitute the rice for bulgur and sometimes we cook the onions until they're charred and use their juices to stain the lentils blackish brown. interestingly enough we also only eat it with salata balady and yogurt but never kheyar blaban ( cucumber yougurt ) I'll have to try it next time although I'm sure it would be fantastic.
