Folks, this recipe has been a long time coming. Ful Mudammas (sometimes spelled “fool”) is a savory dip made from fava beans, with garlic, seven spice and tomatoes. Ful has a long history - it has been a staple since Biblical times in Egypt and the entire MENA region as a source of protein, and is packed with fiber, iron, magnesium and many other vitamins and minerals. Here is a Palestinian version based on my family's recipe!
Fava beans have a distinctive taste that is nutty and savory, with that addictive umami quality that keeps you coming back for more. I have made this for so many parties and brunches. It is one of the most special things to wake up to and share with others. Super economical, super easy and quick, and will make your body feel so good.
I hope you make this, and let me know how it goes if you do- Sahtein!
What special ways does your family make Ful? Comment below!
Ingredient list below (No written recipe):
- Handful of cherry tomatoes

Back in my old country (Egypt), ful medames is an ubiquitous staple, and considered one of our national dishes. It’s a pleasure to see that this dish is also representative of Palestinian cuisine, and that it’s one of the many common ties of kinship that our peoples and cultures share. Thank you for this marvelous recipe and presentation of this simple yet delicious and nutritious Palestinian dish. Enjoy it, as we say in Egypt, _bil hana wil shifa_ (with joy and healing)!
Walahi she has a bebbar grinder esbeshally for cammoon.
She is better than us..
Oh wow! M a vegetarian from India and I’m surely gonna try this. You have some great food
I learned to make this from my Palestinian boyfriend many years ago. The way he showed me is a tin of small fava beans simmered with garlic, cumin, lemon juice, salt & pepper, then served with a glug of olive oil, handful of fresh parsley, and eaten with hands with flat bread, chunks of fresh tomato, and olives.
Palestinian cuisine. How wonderful to have access to such food - not only for the taste & nutrition but also for the ancient history of Palestine. I long to visit Palestine, free & proud. Thank you.
Greetings from Sudan ,this is our national dish .As a kid sometimes I’d have it three times a day.God bless Palestine!!
Alf sahtein and welcome to the channel :) We know what's up, Ful is the BEST. I didn't know it was the national dish of Sudan-- thank you for sharing that!
Huh I never knew that thought it was Umfitit or Sabaroag. I find it a bit annoying that its hard to learn more about some countries food and how to make them like Sudan for example.
Bravo chef
It is not our national dish. it just happens to be the closest thing to a normal meal that Sudanese families can afford after 30 years of US sanctions...
@@mashakos1 What would you consider to be the national dish?
I made this for my family and they were almost confused by how delicious it was. They went from “Oh nice, a bean dip” to “what the heck is in this, this is incredible” over the course of a single bite. Delicious, nutritious, and the new (to us) flavor of fava beans. Thank you so much!
I love this 🥺❤️
Wow. Did you use canned or dried ?
As a young Palestinian raised away from Palestine, finding your channel with all the foods my Jidoh made for me and my family has given me something great to show my family! Thank you so much!!
I am so happy to hear this, thank you for watching and alf sahtein!
Girl, you make me feel that cooking (especially vegetarian) may be the way to help people of all race and religions to get to know and appreciate each other’s culture.
I'm telling you. Food is the way to world peace ☮️
It's a great way to appreciate different cultures from your own
Anthony Bourdain displayed that really well!
@Oz - I see where you are coming from, but I think what you said is on an international governmental level, and I agree with you when politics gets involved things gets messier. But it doesn't have to be this way between individuals. I think individually it is much easier to resolve our differences if we are willing to talk it out. The first steps toward resolving conflicts is always getting a mutual understanding of each other and actually starting good discussions. In democratic countries people elect their governments. If the people themselves are willing to discuss the conflict that is separating them, and understand the differences between them and their so called "enemies," the people could potentially have say in elections that choose the most adequate candidate. And what better way to start that than sitting with a bowl of good food and talk it out? Again, this is solely my opinion.
Peace of plants.
I love how confident and comfortable you are in front of the camera. The dish looks amazing, will try it for sure.
Love the beautiful, positive energy that you spread! Please do more videos, you've encouraged my teenage daughter to rediscover her Palestinian roots, thank you!
An Egyptian friend made this for me and it was delicious!! I'll use your recipe. Thank you! #FreePalestine 🇵🇸 🇵🇸 🇵🇸

I was introduced to this dish by the mother of a classmate of mine. To this day, I enjoy this dish on a regular basis...!
there are two kinds of people in the world: people who love ful mudammas and people who haven't tried it yet. awesome video
I've made this about 5 times now and just can't get enough of it! Thanks Nadia.

You haven’t yet started the actual recipe and I’m hooked! I so appreciate your dialogue and history/culture lessons to go with your recipes. It’s the one happy thing that came out of the pandemic: people learning excitedly at home, alone about our global friends and their culinary prides. Sharing is caring! Shalom, salut, cheers from Canada!

You're so refreshing and you lifted my spirit. Just subscribed. Never change a thing, just wonderful how you come across.
I love your positive energy. I also admire your way of educating the audience on Palestinian food . Great videos. Please keep them coming.
But its Egyptian...even the origin of the word Mudamms is Coptic...
@@Larkeshet Nadia prepared it the Palestinian way. Lots of Palestinians specially those from cities on the Mediterranean, like Yafa , have mingled with the Egyptians and vice versa. We have similar cultures regardless of the etymology of the names of dishes.
@@najatskitchen well. Its kinda like an American from NY gives a recipie for pizza. NY style pizza is a respected and unique version, but pizza is still Italian and thats just common knowlege for most people.
Good video of a spesific style of an Egyptian dish, which arrived to that region probably with the arab conquests of the region circa the 7th century...
@@Larkeshet BTW , Are you Egyptian?
@@Larkeshet Palestinians have been living in Palestine for centuries. They are a mix of different ethnicities not including jews. Save your attempts my friend!
You nailed it. Amazing! Made it twice.... actually typing this while it is cooking! The roasted tomatoes, Yes! Really adds to it. Fresh sagnak bread and your soft boiled eggs.... our new favorite. Thank you

Thank you for a wonderful presentation of a classic dish. You brought back some very old memories when my grandmother used to make it when I was 8 or 9 years old. I loved it then and I am looking forward to making it myself now.
Lived in a shared house in London 40 years ago, there was an Egyptian guy there that made Ful Mudammas for us sometimes. It was nowhere near as pretty as yours is but, l still remember how good it was. Will definitely be trying this. Thanks.
It must have been FIRE

beautiful! I have to get all the different ingredients to make this type of foul. Thank you ... your doing wonderful job.
8:30 I feel that. Ohh, the sweetness of the onion, the crunch, and tangy taste. With the Ful, such heaven. Then, alternately eat it with Tamees. Brings back memories.
My heart exploded when she pulled out the onion ❤️

I just made this. The only variation was adding some grilled Mussakhan around the outside of the serving bowl and a nice blob of yogurt in the center.
This recipe hits on all cylinders: no intricate prep or ingredients from another dimension, complex flavors but sooooo deliciously comforting and filling...
If you don't make this you're missing out on a transcendent food moment. Thank you Nadia for a recipe I will return to again and again.
Like tomorrow. And Ima make for the peeps at work.

I cooked it. The taste was amazing. You were right, it is addictive; I am going to cook it again this week. Thank you for sharing 😊
j absolutely love Fava Beans. And, I found them last year in Seattle in an Asian store and brought back about 5 cans. Now I know how to make this dish and will try it soon. Before I just drained and rinsed off the juice/grease from the can and added spices and made soup. I will make your dish. I had it in Egypt in 2004 and love it.
Yay! Welcome! I hope you enjoy it, it's one of my favorite things in the world and so nourishing
Was wondering what is Fava beans so I searched up for translation in my native language, Malay. If you’re Malay and wondering what is Fava beans, it is Kacang Parang (literal translation: Machete Beans). Now I can go find these in my local grocery store! Excited to try!
We call 'em board beans in UK
In America what are they called?
