Back in my old country (Egypt), ful medames is an ubiquitous staple, and considered one of our national dishes. It’s a pleasure to see that this dish is also representative of Palestinian cuisine, and that it’s one of the many common ties of kinship that our peoples and cultures share. Thank you for this marvelous recipe and presentation of this simple yet delicious and nutritious Palestinian dish. Enjoy it, as we say in Egypt, _bil hana wil shifa_ (with joy and healing)!
I learned to make this from my Palestinian boyfriend many years ago. The way he showed me is a tin of small fava beans simmered with garlic, cumin, lemon juice, salt & pepper, then served with a glug of olive oil, handful of fresh parsley, and eaten with hands with flat bread, chunks of fresh tomato, and olives.
Palestinian cuisine. How wonderful to have access to such food - not only for the taste & nutrition but also for the ancient history of Palestine. I long to visit Palestine, free & proud. Thank you.
I made this for my family and they were almost confused by how delicious it was. They went from “Oh nice, a bean dip” to “what the heck is in this, this is incredible” over the course of a single bite. Delicious, nutritious, and the new (to us) flavor of fava beans. Thank you so much!

Huh I never knew that thought it was Umfitit or Sabaroag. I find it a bit annoying that its hard to learn more about some countries food and how to make them like Sudan for example.
It is not our national dish. it just happens to be the closest thing to a normal meal that Sudanese families can afford after 30 years of US sanctions...

@Oz - I see where you are coming from, but I think what you said is on an international governmental level, and I agree with you when politics gets involved things gets messier. But it doesn't have to be this way between individuals. I think individually it is much easier to resolve our differences if we are willing to talk it out. The first steps toward resolving conflicts is always getting a mutual understanding of each other and actually starting good discussions. In democratic countries people elect their governments. If the people themselves are willing to discuss the conflict that is separating them, and understand the differences between them and their so called "enemies," the people could potentially have say in elections that choose the most adequate candidate. And what better way to start that than sitting with a bowl of good food and talk it out? Again, this is solely my opinion.

@@Larkeshet Nadia prepared it the Palestinian way. Lots of Palestinians specially those from cities on the Mediterranean, like Yafa , have mingled with the Egyptians and vice versa. We have similar cultures regardless of the etymology of the names of dishes.

NY style pizza is a respected and unique version, but pizza is still Italian and thats just common knowlege for most people. Good video of a spesific style of an Egyptian dish, which arrived to that region probably with the arab conquests of the region circa the 7th century...

Lived in a shared house in London 40 years ago, there was an Egyptian guy there that made Ful Mudammas for us sometimes. It was nowhere near as pretty as yours is but, l still remember how good it was. Will definitely be trying this. Thanks.

I just made this. The only variation was adding some grilled Mussakhan around the outside of the serving bowl and a nice blob of yogurt in the center. This recipe hits on all cylinders: no intricate prep or ingredients from another dimension, complex flavors but sooooo deliciously comforting and filling... If you don't make this you're missing out on a transcendent food moment. Thank you Nadia for a recipe I will return to again and again. Like tomorrow. And Ima make for the peeps at work.

I finally found small Indian store that had it! Followed all the steps including roasting the cherry tomatoes. Served w pita and white wine. Mahalo for your enthusiasm and great recipe!

I’m actually trying this garlic thing tomorrow inshallah - my mom just made a batch of foul today 😋 On a side note: I’ve heard that some people put charcoal in the middle of it to give it a smokey flavor, never tried it though 😄
