    Makes about 30 rolls
    Fragrant shredded chicken:
    1kg chicken breasts
    30ml extra virgin olive oil
    2 tsp salt
    1 tsp black pepper
    ½ tsp ground cinnamon
    ½ tsp ground cardamom
    4 garlic cloves (minced)
    Sumac confited onions:
    6 medium onions (thinly sliced)
    75ml extra virgin olive oil
    1 tsp salt
    55g sumac (6 tbsp)
    ¾ tsp black pepper
    70ml lemon juice
    10g pomegranate molasses
    Musakhan rolls:
    10g flour + 10g water
    2 tbsp extra virgin olive oil
    3g sumac (1 tsp)
    4 large saj, shrak or markouk bread (substitute with 12 large tortillas or 24 small ones)

      @@pyroryx I used canned green one and did it as in the video and it works. For me for sure. I marinated for about an hour though.

      As a person who lost friends in the October 7 bombing of a musical festival, both Islamic and Jewish friends I feel that it is important to take a step back and not bring politics into this. Look at both sides please.. these people were at a festival of music. Hamas bombed them, they also abducted them. Some abducted have come home many have not, particularly women and children. others have been beheaded publicly. Both sides are suffering because radical extremists have chosen, yes chosen to use citizens as targeted collateral. To me that is unacceptable from either side. Islam does not accept homosexuality, it also states from Mohammad that women can be beaten by their husbands and fathers. This is way to complicated to just say , eating a meal, that I have eaten for over 50 years is a political statement. Please remember all of these people no matter what religion or creed are people. They are all someones child, parent, cousin etc. Please remember this when you state your stand .. Many people lost family from both sides, there is no right here.

    So, I had all of the ingredients to make this but the saj, but I DID have eggroll wrappers. Musakhan eggrolls were had for dinner tonight (in the air fryer).

The IDF gives warning so that civilians can remove themselves to safe spaces instead of being used as human shields by their own Hamas leadership. If the IDF wanted to murder Palestinian civilians they would not give them warnings to flee.

      ​@sarahgates6947 I got a huge 16 L container from Al Ard products. I'm not sure if they still have olive oil from last year's harvest, but I'd recommend trying their products. The olive oil was insane - so fruity and peppery and so fresh there's even a slight spice/burn to it when you eat it. Cannot recommend it enough if they still have the 2023 harvest oil - I was literally licking the oil off my hands

      I had the honor to try truly fresh high-grafe olive oil at a restaurant I worked at... I couldn't believe the difference.
      I feel like markook should be easy enough to make (well, smaller versions), but I feel like a couple sheets of phyllo dough (with brushed oil between) would be better than tortillas. Not the easiest stuff to work with though!

    Holy crap, just made the onions and chicken. The most unique and foreign (at least to my palate) flavour i think I’ve ever tasted. You weren’t kidding when you said tangy. Now that Ive got the onion and chicken under my belt I’m looking forward to trying it wrapped in the markook with the tahini yogurt dipping sauce.     I loved your musakhan fattah recipe so much, and this sounds even more delicious. I’ll admit that I originally thought the quantity of onions and sumac in your recipe was crazy, but I trusted you and ended up with a spectacular dish that I’ve made multiple times. Thank you for sharing the recipe. Food is the best way to share the story of a culture I think, and there’s no better time than now to share this story.

      It sounds crazy yeah, but given how weak sumac seems to be as a spice it's pretty required. I think subbing in lemon and balsamic vinegar would require a lot less of those than the spice.

    This is my absolute favorite dish to cook and eat. I still vividely remember more than 10 years ago eating musakhan in Beirut (homemade) and what happened to me was like what happened to the critic in Ratatouille. Awesome dish and great video.

    Thank you for this. I made a version of this tonight. I served it on some home made flatbreads with a yogurt and mint sauce as I didn’t have tahini. It was incredibly tasty.
    Thank you for the detail that you go into …. keeping the chicken covered so as not to dry out, slicing it thinly and waiting till the edges brown, it’s this level of detail that really make your recipes a success.

    The sumac made me think the onions were originally red onions lol! this looks lovely, I can't wait to try it! thank you for sharing this integral part of Palestinian culture, and taking a moment to discuss the atrocities being thrust upon the Palestinian people and Palestine as a whole over these long decades and most recently.     This looks AMAAAAAAZING and I can't wait to try it. Over the last couple of months, I have been making Palestinian dishes for events...whether it is a Karate tournament party, a bake sale, or just as a gift to drop off to people I know who (due to media misinformation and other such propaganda) support Israel.
    If you have not seen Taidgh Hickey's videos here on RUclips, look them up. Matthew Lieb is another good one.

    Thank you for sharing this. I have never eaten it before. I’ve just finished making the sauce while I wait for the rolls to crisp up. It smells divine! We just ate a little sample of what didn’t end up in a roll. Delicious! Especially with the sauce. It really is the perfect combination.

    Thank you. The first thing that went through my mind was that Palestinians can't make these. They are starving. I actually feel guilty for watching this knowing that men, women and children are being starved. I am speaking out as a human being with a heart. I'm not Muslim or Jewish, Palestinian or Israeli. I am just an American who believes that everyone should be kind to others. What is going on right now is heinous.

I encourage you to step out of your bubble. There is no comparison between the October 7th attacks and the genocide in Gaza that's been going on since then. Go read up on the continuous atrocities Israel has committed on Palestinians in Gaza, the West Bank, and East Jerusalem for decades and you will see how saying the October 7th attacks are as bad as everything the Palestinians have experienced, unless you just simply believe Palestinians aren't as human as Israelis.

    From what i can see, i think filo pastry would also work really well for these rolls? Looks similar in texture potentially

      It would work, but brush them all over with butter. The texture of filo is a lot more delicate

      At first glance, I thought it was filo pastry! So I was going to ask the same thing. There are no Middle Eastern grocers anywhere near me so I have no way to buy Saj bread. Supermarkets near me have lavash but this looks far too thick. Tortillas also look thick but a reasonable compromise. Maybe double sheets of filo?

    They make these down the street from me. With pickled onion and tahini dressing. The wrap is what really sets it apart

    When i started watching this i couldn't take the fact that i didn't have cardamom in my spice cabinet and went straight to Amazon and bought some. I love cardamom... Now i have to get some sumac which i have never tasted or if i did it was as a kid for someone like my uncle... Way to many decades ago. I hope i like it because all the black pepper and cardamom i know that tingles my taste buds....yummy. i gotta try these!
