I’m not sure what I was thinking when I set out to make this, especially with a newborn and a toddler running around. But man did it pay off! I thought it was going to take a long time to cook, but I spent maybe 40 mins actively doing things. As most Egyptians, I am a big Koshri lover, this recipe is by far the best I have had... Big thanks Obi for the great video. Worth pointing this is a perfect meal for both vegetarians and vegans.
Watching you from Egypt, Ironically, I like your videos more than the local ones, as they are easier to follow and most likely to succeed, the local videos assume that we understand many traditional ways, which is not true for newly weds. Thank you for all the details and great description
So I made this dish yesterday. Started cooking with a clean kitchen at 315, prep work went on forever finally served ar 7 pm.. The final step of having the base come out not mushy and not dry was nail biting. But at the end my family loved it and my daughter in law asked for the recipe. I will be making more of your dishes. Tnx
Haha that's the issue with koshsri, it takes so long and uses up every pot. It definitely is worth the effort though, my rule is someone who wasn't cooking does the washing. I know right, but I'm happy it turned out good. Glad to hear everyone liked it and I hope you try more of the recipes.
For the onions, after I chop them, i mix them with one table spoon all purpose flour and it comes our crunchy, no extra effort, just keep it on low heat

Thank you Osamah! Honestly it's my mother in law's recipe and I feel it tastes even better than any street Koshari. Hope you enjoy the recipe and you try some of the other dishes too. Thanks!

Thanks for the suggestion, my only issue with the cornflour is that some of it will remain in the oil, and when it's used in the rice will cause it to be a bit gloopier. But if you are just making them alone then it's a good idea.
Thank you for painstakingly explaining each component of this beautiful dish in detail. Your narration style is very engaging. Your cooking looks simple and hearty and yet it has so much finesse! Could you please let me know whether you still need to boil the chickpeas with the onions , whole tomato and cumin , if you are using cooked canned chickpeas? Thank you! ❤️
The cooking infuses them with flavour, so its best to still do that, but for a shorter time. Thanks. I try to cover all my recipes like this so you can make them perfectly

Yeh that is a lot of carbs but I will do it. Thanks for breaking down the elements because I can see that it is possible to do just certain parts of this and add tgen to other dishes. That soup you showed the other week fed me for 5 days and was delicious every day. Thanks for making this one vegan
You are lucky to be able to do it, but you have to supply the sauce more than I am from Egypt Note: You must turn it over after placing it on a serving dishانت محظوظ لانك تمكنت من عمله لاكن يجب عليك ان تقوم بتزويد الصوص اكثر انا من مصر
I've heard about this dish from an Egyptian classmate just this morning and I'm very curious about it. Being Italian, I'm a bit suspicious about the mix of pasta + rice (the mere idea can make an Italian brain explode), but she was talking about it with such a sincere delight that I'm definitely going to try it. I mean, if so many people like it, it must be good :D Thank you for the detailed recipe! (BTW, as a "pasta expert", I confirm what you said: usual dried pasta doesn't have eggs, so it's vegan friendly. The pasta with eggs is called "pasta all'uovo", can be fresh or dried and eggs must be listed in the ingredients )
I'm confident that you will enjoy it a lot. It's probably very different from anything you've had before, but in a good way. Please report back and let me know how you find it. In the UK nearly all dry pasta is eggless and fresh pasta has eggs like you mentioned. Same in the middle East too.
Did I miss the finish of the chick peas cooking? What happened to the whole tomato & onion that was added to the pot of boiling water & chick peas? I had a chance to eat this when I last traveled to Egypt and boy I loved it!! A ton of cooking involved, makes me think twice attempting this at home though.
Wow this is definitely batch cooking at it finest. I need to try a version of this for the family I nanny for. They love beans and lentils. Especially for the young lady who is vegetarian. I just need to make it for a much smaller amount. This will be fun. Thank you for the inspiration. It is the first time I have seen your videos. I look forward to seeing more.
Yeah this recipe definitely makes quite a few servings. The good news is it reheats well, so it may be worth just doing a full batch as it's really yummy. Hope you enjoy it. Thank you!
what a wonderful vegan meal and thank you so much for the way you shared the recipe so clear and smart, lovely, I wish I'll find mujadra recipe from you
Absolutely the most amazing dish I've ever eaten! The recipe is perfect. I didn't make the 2nd spicy tomato sauce but everything else was pretty much the same - I can't stop eating it! Thanks for the thorough explanation.
That looks lovely but gosh your recipe looks like it makes a massive amount. How many servings (approximately) would you say your recipe makes? For a test batch for 2 adults, perhaps I should start with a quarter of the recipe?
It definitely does make a lot. A quarter will be plenty for two people, but maybe half the sauces rather than quarter them. I'm sure you'll wish you made a half batch instead. If will reheat well if you do make it so don't worry about it going stale.
Hello there. The dish looks amazing. I, however, wanted to point you on some cooking preparations. Legumes like chickpeas and lentils should always be pressure cooked after being soaked in water (to remove all the lectins= silent killers for humans). The salt for legumes is added at the end. This way it cooks quicker. It's always better to peel the tomatoes and remove the seeds (also all nightshades such as paprikas). Why? Because of the lectins. These are plant proteins that are actually poisonious for humans causing artritis, burning stomach pain, inflammation,....
I have watched so many koshari recipes online and this is the most authentic one by far. People don't realize how you have to season and take your time with each component like you did in this video. So many other bad recipes don't properly season anything but the sauce. it's upsetting. thank you for sharing Egyptian food properly with others
Hey Obi, I just tried your recipe for the first time today. Our family recipe is close to yours but the little differences in yours made if much closer to the street version. The taste took me and my wife in a nostalgic mind trip back to the streets of Cairo and Alexandria. From an expat to another: Thank you.
You know what this dish needs? Some carbs and cumin. LOL... just kidding. It looks delicious. I actually want to try this, but as a single person, I have no idea what I'd do with _all of that food!_
I just found this channel today and I am so pleased! I like that you are actually showing layers to recipes, sauces that can be used for other things, and sharing useful techniques. Stupidly, I had never thought to cut an onion in half before peeling... huh. Your videos are getting me excited about food again. I've been so bored with cooking lately. I feel like I make the same foods all the time, or spend a lot of time making something different that is just eaten up too fast. It's nice to find home cooks that actually care about sharing their love of food! These videos are so nicely made, with no annoying music and no fake enthusiasm or product promotion. Thank you!! Keep the vegan recipes coming, please! :)

It's literally the best comfort food ever. Thank you for watching. عجبتهم أوي
As an Egyptian who has experimented with so many koshery recipes until I perfected the authentic street taste, I will give you 10/10.
Not only that, I learned a few tips that I will incorporate the next time I make the dish.
I saw a few of your other videos, and I am now a subscriber!
Thank you Osamah! Honestly it's my mother in law's recipe and I feel it tastes even better than any street Koshari. Hope you enjoy the recipe and you try some of the other dishes too. Thanks!
Ya habibi come on now, we do not mix the lentils with the rice. We cook everything separately and layer it at the end.
Made arayes for my housemates tonight after reading your reddit post the other day, and asking you about aleppo pepper... 5 star reviews all round :)
Keep doing what you're doing: no filler, no pretension, all killer tips on a sorely neglected range of cuisines. Two thumbs up from me!
That's great, I'm so happy they turned out well!
I appreciate the support, still loads of great recipes to come.
Looks like a lovely vegetarian dish but what a lot of work! Very clear instructions. Thank you.
I was looking for a video created by an Egyptian and I'm glad I found it. I saw Koshari in the show Ramy and that's got me excited to try it
Amazing !! 💕 try to add some corn flour to the onions before frying , it will absorb any excess of humidity and helps make it crunchy
Thanks for the suggestion, my only issue with the cornflour is that some of it will remain in the oil, and when it's used in the rice will cause it to be a bit gloopier. But if you are just making them alone then it's a good idea.
You are an undiscovered treasure and I am being selfish. I am glad you are still on RUclips cuz soon you will have your own tv show
This is so much similar to Indian Khichadi with tomato chutney. I am definitely gonna make it for family and friends..... Thank you so much. subbed!
I'm not Egyptian but I can tell that dish is amazing. We eat plenty of rice and lentils. I have to make it. Thanks for the wonderful content.
No problem, hope you really like it.
Where are you from?
@@71espn I was born in the United States but my ancestry is from Latin America. Typical American from all over the world.
This is the best koshari recipe I've followed. Thanks for sharing ❤
Thank you, glad you enjoyed it. It's my mother in law's recipe and I think it even tastes better than the street one.
انا عامة مبحبش الكشري بس الفيديو ده مخليني عايزة اجرب اعمله بطريقتكوا!!
@@MiddleEats yes, you're right. Cooking it for a shorter time, infused it with flavour and it wasn't overcooked or mushy at all, just soft and delicious! Thank you! ☺️
20 cloves!? Make sure your partner eats this as well

wonderful, glad to have stumbled upon this.
I take your word for it! Sounds like Egyptian dishes surpass french ones in steps & fussiness:) love your teachings ❤️
This is exactly what I was hoping to get from your channel! I have literally never heard of koshari before, I haven't made it yet, but now I have a new favorite food! :9 :9 :9
Oh you are absolutely going to love it then. It's quite a bit of work to make, but when it all comes together, it's just a whole new experience!
High carb low fat paradise
I've heard of Koshari before but I would have never guessed that it was inspired by Indian kichidi, they seem like such different dishes to me. Going to try this soon! This is my favorite channel for Middle Eastern cuisine.
Thanks, hope you like it.
I made this recipe for my birthday and it was such a hit. It took quite some time to get everything ready, but after everything was done it was soooo good. Obi i love your videos and im really excited for every new dish you show us how to cook :)
I'm glad you liked it so much, and honestly it's a great new meal to have for a birthday. Though I am sorry for the cooking time, but it's definitely worth it. Hope you enjoy more of them!
Kofta, stuffed grape leaves, kebab halla, and okra!
Thanks for the suggestions, I'll add those to my to do list. Hopefully I'll be able to get to them soon!
Oh yes please these are dreams
I mean, all of these videos are dreams
Delicious food! Handsome face! And a very intelligent sounding British accent 😂 what else could you ask for haha!

Thank you, not so sure about the handsome and intelligent parts 😁.
I hope so 🤞🤞🤞
shame you cant walk down an egyptian street to buy this food without getting harrassed by camel riders, taxis and fake gucci sellers
You make Koshari that looks like Koshari. Me: Subscribe!
Thanks, it even tastes like it too!
My beautiful friend made this for us and it was AMAZING... am going to make it myself and cant wait, my mouth is watering just thinking about it.🙏
What an amazing friend, this dish is a labour of love but so worth it. Glad to hear you enjoyed it so much!
@@MiddleEats And today I saw the Pictures of when she made it herself!
I'd love to see them, send them to me in Instagram!
@@MiddleEats I'll try
@@MiddleEats on Instagram.. thank you I'm going to look for more. I made the kisar too. Beautiful
Thank you for such detailed recipe! I personally always wash my dry goods- rice, lentils before cooking them. Chickpeas and lentils are amazing! 🙌🏻
Thank you so much for this recipe. I have made Koshari twice already in the last two weeks and it turns out amazing every time :) You are my go-to channel for middle eastern dishes!
Oh wow, that is a lot of dedication to koshari. We probably make it once or twice a year because of how much work is involved
This looks delicious.
How many servings is this recipe for?
Just made and ate this dish! Really lovely! Absolutely recommend. Thanks Obi for sharing. I've shared with people who tried and liked mine.
I'm glad to hear you liked it and it turned out well. Thanks for sharing the good word, hope you try out some more of these delicious meals!
You can keep the onions crispy by letting them drain on a metal mesh strainer and bypass the paper towels altogether :)
Yeh that is a lot of carbs but I will do it. Thanks for breaking down the elements because I can see that it is possible to do just certain parts of this and add tgen to other dishes.
That soup you showed the other week fed me for 5 days and was delicious every day.
Thanks for making this one vegan
No problem Steven. This one is always served vegan in Egypt and it's one of the most popular street foods.
I made it exactly as you guided. It came out perfect. Thanks
You are lucky to be able to do it, but you have to supply the sauce more than I am from Egypt
Note: You must turn it over after placing it on a serving dishانت محظوظ لانك تمكنت من عمله لاكن يجب عليك ان تقوم بتزويد الصوص اكثر انا من مصر
The sauce is plenty I doubled it in the description, but if someone wants to make more, it's always possible.
It looks like Afghan Kitsheri! We do the same, just without pasta
I love middle eastern vegetarian dishes. On par with vegetarian Indian dishes. I could eat these and never eat meat for the rest of my life
Easy ingredients and as you say is a Marathon of cooking time but it's worth it ... is one of the best and tastiest dishes in the Mediterranean
Fantastic video, and I'm drooling watching. I eat vegan so I need to add this to my Middle Eastern repertoire ASAP!
قناة محترمة اوي. والاسم عبقري. تحياتي اك.

I mean, if so many people like it, it must be good :D
Thank you for the detailed recipe!
Thank you!
what a wonderful vegan meal and thank you so much for the way you shared the recipe so clear and smart, lovely, I wish I'll find mujadra recipe from you
Sure, I'll definitely make mujaddara soon.
Absolutely the most amazing dish I've ever eaten! The recipe is perfect. I didn't make the 2nd spicy tomato sauce but everything else was pretty much the same - I can't stop eating it! Thanks for the thorough explanation.
Checkpease are optional, they're not always part of the dish
Wow, this looks so mouthwatering! I'm gonna try this out for sure! 🤤
ive to stop watching this at night, im fucking hungry now
This looks yummy! Question: For how long does it stay good? Could I make a large amount and refrigerate or freeze it?
That’s not a good idea as the lintels and the rice will dry
@@omaraboelneil2251 Ah I see. Thanks so much for the info! :)
Sure, you can make a large batch of the base and refrigerate. Even if the texture changes it will still taste good.
Oh my goodness I made this today and it was absolutely scrummy...took me right back to Egypt 🇪🇬 thank you! 😊
That's great! Happy to hear you liked it. I'd love to see some photos if you took any!
It's called Khichadi खिचडी in India
Brilliant!!!! .. this is soo my kinda food👍🏼👍🏼 ..only recently found this channel -love the passion and amazing dishes 👍🏼👍🏼
I love how many helpful tips are packed into the preparation reminds me of cooking content I grew up with :)
Thank you, glad you're enjoying the detail!
My man said 22 cloves of garlic ☠️☠️
