Pan size is 16cm/6"圆模
植物油 vegetable oil 40g / 3Tbsp
可可粉 cocoa powder 10g / 2Tbsp
牛奶 milk 50g / 3Tbsp
糖 sugar 20g / 3Tbsp
蛋黄 egg yolk 4
低筋面粉 cake flour 50g / 4Tbsp
蛋白 egg whites 4
糖 sugar 40g / 5Tbsp
Bake at 150°C / 300°F in water bath for 80-90 minutes
摄氏150 / 华氏300 水浴烤法 80-90分钟

This is the first time I finally succeeded in making a sponge cake. I used valrhona cocoa powder and baked it for 70 minutes. When my husband tried it, he smiled satisfied.

This cake become our family regular dessert or snack. Due to gluten intolerance, I replaced the cake flour with brown rice flour, it still taste so great! Thank you for your recipe!

I have one doubt can we add egg white mix to heated chocolate mix or shall we need to cool down the chocolate mix? Please reply
@@thommandrusravana6500 It's been four yrs I doubt you need this anymore... but no the chocolate mixture isn't heated at the end, or shouldn't be, anyway. Even though the oil was heated in the beginning, it should've been fully neutralized by all the added milk and ingredients (notice how the egg yolks didn't cook).

你好yap ruby,如在烤箱呆着门需要开一点小缝以防止烤箱温度过高。蛋糕回缩可能是烤箱温度太高,你也可以烤好后马上把蛋糕取出在桌上敲几下也是可以防止回缩的

I baked today the cake was soft and fluffy. I bake sponge cakes using similar method before and 6 x 3 (h) inches round pan is usually just nice for recipe with 3 large eggs. I thought for choc sponge would be different but my cake domed so high and cracked. Too much cake batter? Temperature too high? Next time I would probably use two 6in pans to make 2-layer cake or just reduce recipe accordingly to 3 eggs. However good spongy light cake with just tinge of sweetness. A keeper with minor tweak :)
