How to Make Butterfly Shrimp and Ebi Nigiri

- Making Butterfly shrimp and Ebi Nigiri is very simple, but a little tedious. This video is a little longer than I normally post, but hang in there! It's worth watching until the end.
Ebi Nigiri and Butterfly Shrimp are a great way to introduce sushi to someone who may be uneasy about eating raw fish, as most people are more comfortable with eating shrimp. Butterfly shrimp can also be used on top of maki (rolls)!
This technique for making nigiri can be used with almost any type of fish that is commonly used in sushi.

Two things you did here made a world of difference for me. One was pushing the skewers through the vein, which got my shrimp to finally stretch out perfectly straight. Was never able to get it that straight before. Second thing was the butterfly cut. I always sawed through it before and have been known to cut all the way through. Pulling the knife just enough to seat it in the shrimp and then pushing it straight down made a world of difference for me. You can actually feel the knife pop into it as it opens the vein. For a change I had nice butterflies on my shrimp.

My boys LOVE Ebi Nigiri!! When we eat at our local Sushi Restaurant....this is one thing they go crazy for. I THANK YOU from the bottom of my heart. I make a killer sushi rice and avocado roll, but I wasn't sure how to do the shrimp to make it flat! Thank you. :D

Boiling the shrimp for 5 minutes will overcook it making it very dry and tough. I found that using standard home gas stove, about 2 to 3 minutes is enough and 1 1/2 to 2 minutes using high power commercial stove.
Ah, yes. I have heard that you can fully cook shrimp within 3 minutes as well. I'm not sure if my little electric stove top had anything to do with it, but I wasn't able to fully cook the shrimp in that time.

Sushi rice uses seasoned rice vinegar to give it that "sushi" taste. The seasoned rice vinegar has sugar and salt added for the seasoning. You can buy it as Seasoned Rice Vinegar, or you can buy Rice Vinegar and mix up the seasoned vinegar yourself. I have seen some people adding lemon and orange peels in the boiling water , i wonder whats that for
amrit kc Yeah! Some people will add lemon juice or toss a whole lemon into the water as well. This adds a very subtle flavor to the shrimp as it's cooking, but it's not really necessary.

I did the boiling the shrimp but they seem like they dryed up was not nice and fresh like when go to a resturant I used tiger shrimp maby that was my problem??
I made the mistake in the video of saying to boil them for 5 min when it should have been closer to 3 min. The shrimp might be dry because they were over boiled.

Oops a long time ago when I was a kid I ate the whole shrimp (with the tail) I miss shrimp but I can’t eat them anymore :/
