      +random dude real Wasabi is not even close to beeing as hot as the one that you now, most restaurants use colored horseraddish, chances are you never tasted real wasabi. its really expensive

    That is cool shizzle. This is different from other videos I've seen on making nigiri. I like this way better, more artistic. Presentation is 50% of the enjoyment of food.

      Never seen such a dumb combination it is not even a dish.
      Raw fish and rice without seasoning seems like you can't come up with anything.
      Worst taste worste hype ever.

    can you use rice vinegar if you don't have normal vinegar? (with water)

      Rice vinegar works pretty much the same way as normal vinegar. It just contains more ratio of rice, besides wheat and other cereals. If you use it for cooking, it gives you more mild flavor.

      Elle Groover I don’t live in Oklahoma so I can’t give you a precise answer. But try some ethnic supermarkets maybe in Asian district. Wherever Asian community is, there should be some stores that carry Asian products.

      I live in Tulsa. Pretty much all grocery store has seaweed, usually in the asian food aisle.

    What is the sauce used to brush them on the top?

      It's called Nikiri. It's a reduction of soy sauce, mirin, sake, and dashi.
      There are plenty of ways to make it.
      1 is throwing everything in a pot and reducing everything down.
      2 some people first prefer to reduce the mirin (make sure it's Hon Mirin or Takara Mirin, not Aji Mirin) and sake, to get rid of the pungent alcohol smell and taste. Then add the rest and reduce.
      3 you can switch the soy sauce around with double brewed soy sauce or tamari. Double brewed soy sauce is deeper and less salty. Tamari is lighter in taste and has no wheat, so it's gluten free.

      Basically Japanese short grain rice is preferred. Not just the quality of rice itself, but it wants to be better AFTER mixed with vinegar. Usually sticky type of rice will get much stickier by absorbing vinegar, so probably less sticky type will make it good balance when it comes to sushi rice.

      Originally (thousand years ago) sushi used fermented fish, and pickled or marinated fish later (couple of centuries ago). So it is quite recent started eating raw fish as in today. This was made possible thanks to the preservation technology for sashimi grade fish, and of course, to the skillful chefs making the best of its freshness.

      There are hundreds of different kind of fish. It’s totally depends on your preference, but salmon and tuna are pretty popular around the world and easy to arrange the taste.

      SquirrelKnight the air pocket technique is called the Edo style of nigiri. It’s a little more time consuming. The way the guy does it in the video is usually the norm. I’m a sushi chef

    Cutting raw fish in Japanese culture is the same as cutting corned beef in the united states. Always cut as thin as possible and cut against the grain. Layering isn't an issue.
