  • So what do you do with 5 pounds of frozen cranberries? Make cranberry sauce, of course! We need our favorite holiday recipe for cranberry sauce with orange made up for the coming season. This is a very quick recipe to use to make very delicious cranberry sauce!

    I read on a blog from a lady who has a cranberry farm, that freezing cranberries reduce the pecten in them by 50%, and frozen cranberries is what she recommends frozen berries to make juice with. I made my cranberry sauce from frozen berries and it gelled just fine.

      No kidding! I have about 15 bags of frozen cranberries, and now that I know that they loose pectin when frozen, I won't do a sauce with them, but a juice.

    I Love this channel. I'm a viewer from full-time Wyoming and vacation home in St George UT. I read about an Idaho hiker today from Wyoming that contracted botulism from canned soup not properly stored. He's been in SLC for 7 weeks; paralyzed. Safe canning is NO JOKE!     My son and I are the only 2 in the family that enjoy cranberries. I get a bag and then make the recipe on the back of the bag and water bath them so we can enjoy them throughout the year. I usually add extra orange juice and zest. I sometimes put a stick of cinnamon while they are cooking and remove it prior to canning.

      I made cranberries with mandarin oranges adding orange juice in place of the water and cinnamon sticks to can. Tasted fantastic. The 5 lb. bag of oranges was only $3.00 and cranberries were .88 a bag.I also adequate some orange marmalade with the oranges.

      @@midwestern925 That sounds wonderful using the mandarins and it's mandarin time here in N Commiefornia. I thank you for the post. I have to laugh tho as most of the mandarin growers here would shudder to hear you call them oranges. Lol they are mandarins, Satsumas or Honey Mandarins or Clementines and they are citrus not oranges🙄🤗🌷🤣🤣

    I always get extra cranberries and turkeys this time of year and can them up to use the rest of the year while they are so cheap. Doing my turkey broth today.

    I just made cranberry orange preserve for my family yesterday. I hope they like it. I made it from dried cranberries and it was only 2 jars. WOW. We both did the same recipe.

    My favorite recipe I learned from the guy conducting a wine tasting at the vineyard i was visiting. Its so easy and everyone demands that I make it every year since I first made it. I just use the recipe on the bag but substitute red wine for the water and add ground clove to taste. About 1/4 tsp to 1/2 tsp per bag of cranberries. I may consider adding orange zest this year. I make another version with is more of a sugar free jello relish with apple, orange pear and crushed pineapple. I throw in some chopped pecans too. I make a whipping cream cream cheese layer in the middle of a crystal bowl and it comes out so pretty. I love cranberry anything. Thanks for sharing your recipe!

    Another great video, Dr Pam! Many people don don’t know how easy it is to make cranberry sauce, so thanks for your demo. I’ve been making it since the 70’s from a cranberry package. Over the years, I’ve tweaked with the sugar amount & skip the water. We are happy with just the orange juice for liquid. Sometimes I add red wine, this year our paper has a recipe with cardamom and brown sugar in it.

    I just made my cranberry sauce by using cane sugar and fresh cranberries and water bathed. Yum
    Pam, I followed National Center for Home Food Preservation. It didn’t call for the OJ so I didn’t use it.

    I did buy the water booklet but never received an email verification. I have it saved on my hard drive but wanted a way to re download if my computer got corrupted in some way. I went back to the site and can't find a way to get that info. I am backing up the hard drive but with my computer stupids heaven knows what can happen.
    I don't like cranberry sauce but it may taste better your way than the store bought kind. Mom made cranberry sherbet when I was a kid. I think she gave me that recipe if I can ever find it. I love your channel and all the info you give me!! I am thankful I found your channel.

    Thank you so much for doing this video I really appreciate it for all of the new young canners out there. I have been making cranberry sauce for 40 years. It is one of the Christmas gifts that I give each year and I have several people who ask for it. For this past two years Sam’s Club in my area, Panama City Florida puts out one display and when it is gone they get no more. 2 of their bags (8 cup bags)makes 15 pints so I usually get 12 bags for the year.

    I picked up a butane cook burner and cylinders last week and yes also a carbon monoxide detector, thanks to learning from your channel.
    I use to make a cranberry sauce with pineapple in it and can it. I didn't understand about canning enough and got scared and stopped canning it because it was a recipe given to me by someone else. Learning from your channel I see I can start canning it again safely.
    I also just finished making Ghee for the second time today following your instructions. They all vacuum sealed this time.

    Looks delicious. I usually peel a navel orange, chop into shreds and cook for a few minutes is a little water with sugar to soften before adding cranberries. A couple shots of brandy at the end adds the finishing touch

    If you don't care for orange in your cranberries, like me, you can chop up an apple with the skin on, which has pectin, too. I boil the chopped apple in the water first, with some spices (allspice, ginger, nutmeg, whatever you like). After boiling for 5-10 minutes, I add 1/2 the cranberries, simmer until popped, then add the other half and simmer for a few minutes, so I have some berries that still retain their shape. With all that pectin, I can cut the sugar in half, or use monkfruit to sweeten.

    It’s great layered in a postTurkey Day casserole. The sweetness & the fruitiness and the meat rly work.
    I even do turkey sandws (if I allow myself to waste some turkey that could go in a dinner) with a spread of it over the turkey. I freeze all the leftover turkey in 2-3c portions the nite as we have dinner at 1pm. I rest then start the keeping the leftovers.

    This is wonderful! We got a recipe from a potluck using cranberries. Bake meatballs, cool and refreeze. Using 1 can French Onion Soup (Campbells), FROZEN meatballs and 1 can cranberry sauce. Add meatballs to slow cooker, smash up the cranberries and mix with can French Onion Soup, pour over meatballs. Cook on LOW for 4 hours. (NO, you cannot speed this up, you'll just get awesome flavored ground meat). Serve and enjoy!

    LOL, Cranberries, last weekend my daughter and I made cranberry ketchup, cranberry sauce. I want to do dehydrated Cranberries next. One of our stores nearby had them on sale for 99 cents a bag so my mother brought me another 6 bags. Those are the ones I want to dehydrate. I found a couple instructions to do that, but if you have a video on it will you please let me know? I've been looking for a video from you but am yet to find it.     Cranberries are very acidic. Cranberry sauce has lots of sugar. It lasts a long, long time in the fridge. I e made it at thanksgiving and served the (planned) leftovers with ham at Easter.
    Cranberry sauce is versatile - it works with dark poultry (e.g., duck), pork, lamb.
    For those who use alcohol, I add a shot of orange liqueur once the cranberry sauce is cooked while it’s still hot.

      Pam's uses stainless, except her 23 QT Presto. You will not want to use your water bath canners on your glass stove tops. Jim

    You can use the old cranberry sauce in a British style Christmas cake! That is if it still tastes like cranberries, as everything is brown from the raisins.

    Wow, that was so easy. I have some whole dried cranberries the I purchase back in March of 2020. I don't know if they are still good. They have been in the cupboard all this time. I wonder if I can make cranberry sauce, and can it? Anyone know? Best by date was February 2021.

    QUESTION: Have you pressure canned in a 1/2 gallon/64 oz. canning jar? Someone on RUclips said it is not safe - WHY? I want to do broth in those jars. Judi

      USDA says to use the 64oz jars for apple and cherry juices because other food items have not been adequately tested. I would be better if you did the broth in quart jars. Jim

    What about washing the cranberries before use as directed on the package? Since I use cranberries mainly for breads and muffins, I have never frozen them because washing the frozen berries would make them too soggy to chop.

      For canning the pH paper is more than sufficient. With a meter I'd be concerned about drift. Then you'd have to buy buffers to recalibrate or at the very least check it. Depending on the probe some meters are wildly inaccurate/inconsistent and the most reliable are not inexpensive as our lab purchasing manager found out the hard way. When stored properly the paper is reliable for years. I wouldn't take a chance on food safety unless the meter was routinely checked and calibrated.

    I made and canned cranberry sauce today for the first time. Throwing it away. It came out nothing like cranberry sauce. It’s like a spread and it’s bitter. I used 8 cups of fresh cranberries and 2 cups of sugar.
