I read on a blog from a lady who has a cranberry farm, that freezing cranberries reduce the pecten in them by 50%, and frozen cranberries is what she recommends frozen berries to make juice with. I made my cranberry sauce from frozen berries and it gelled just fine.
No kidding! I have about 15 bags of frozen cranberries, and now that I know that they loose pectin when frozen, I won't do a sauce with them, but a juice.
I Love this channel. I'm a viewer from full-time Wyoming and vacation home in St George UT. I read about an Idaho hiker today from Wyoming that contracted botulism from canned soup not properly stored. He's been in SLC for 7 weeks; paralyzed. Safe canning is NO JOKE! Thank you for your work on safe canning!❤
That is so unfortunate.
We all need to be very diligent with our safety measures.
Thank you. Praying for the Idaho hiker. Judi
Love your new overhead camera! You are moving from university superstar to a universal teacher! And you look so festive today. Julia child would be so proud of you. !
My son and I are the only 2 in the family that enjoy cranberries. I get a bag and then make the recipe on the back of the bag and water bath them so we can enjoy them throughout the year. I usually add extra orange juice and zest. I sometimes put a stick of cinnamon while they are cooking and remove it prior to canning.
I made cranberries with mandarin oranges adding orange juice in place of the water and cinnamon sticks to can. Tasted fantastic. The 5 lb. bag of oranges was only $3.00 and cranberries were .88 a bag.I also adequate some orange marmalade with the oranges.
@@midwestern925 That sounds wonderful using the mandarins and it's mandarin time here in N Commiefornia. I thank you for the post. I have to laugh tho as most of the mandarin growers here would shudder to hear you call them oranges. Lol they are mandarins, Satsumas or Honey Mandarins or Clementines and they are citrus not oranges🙄🤗🌷🤣🤣
@@midwestern925 lucky lady. Cranberries and oranges are very expensive right now in my neighborhood
Thank you Pam and Jim of all of your videos!. I learn so much from you! I just wanted to tell you how much I appreciate you both.
I always get extra cranberries and turkeys this time of year and can them up to use the rest of the year while they are so cheap. Doing my turkey broth today.
Rose you are I such a delight & inspiration to us all ! Im praying for you I know your going through a difficult transition. Keep on going we look forward to you sharing all your knowledge with us. Together you and Jim make the perfect team !
I have sent this video to my daughter who is in college studying to be a forensic anthropologist. I really really think she would enjoy your videos and learn a lot about cooking and canning. I just love the way you teach. I think it’s beautiful ❤️
I just made cranberry orange preserve for my family yesterday. I hope they like it. I made it from dried cranberries and it was only 2 jars. WOW. We both did the same recipe.
We would love to see your retirement party.
Pam has not mentioned one from work yet. I am not sure when she will be informed. Jim
My favorite recipe I learned from the guy conducting a wine tasting at the vineyard i was visiting. Its so easy and everyone demands that I make it every year since I first made it. I just use the recipe on the bag but substitute red wine for the water and add ground clove to taste. About 1/4 tsp to 1/2 tsp per bag of cranberries. I may consider adding orange zest this year. I make another version with is more of a sugar free jello relish with apple, orange pear and crushed pineapple. I throw in some chopped pecans too. I make a whipping cream cream cheese layer in the middle of a crystal bowl and it comes out so pretty. I love cranberry anything. Thanks for sharing your recipe!
Thank you for all you do for the community. The sauce looks wonderful.
I made this last year and it was delicious. I didn’t write down the recipe so l’m back to rewatch this video. Thank you for this recipe.
You are so welcome! Jim
What a kind heart you have.
I wish Ms Pam and Mr Jim was part of my physical family. Even if could only see them for holidays, oh what a treat that would be🤗
You are so kind. Jim
Love this season when those cranberries are ready for their yummy yields. Good stuff!
Yes they are! Jim
The book is very easy to read and contains great information 👍
I love how excited you get! I relate. You are such a doll
I love the color of the new blouse! And thanks again!
Jim’s at it again.Love the roses!Always wanted a Maslin pan,maybe I’ll get one.Easy recipe and handy.
Your board is beautiful! My son and his wife moved nearer to us and she wants to learn to can! So I will buy what I need for cranberry sauce and can it with her.
Oh my gosh I needed this video I bought cranberries yesterday from the Giant eagle and threw them in the freezer thinking oh Lord I hope they'll be okay for Thanksgiving..
Another great video, Dr Pam! Many people don don’t know how easy it is to make cranberry sauce, so thanks for your demo. I’ve been making it since the 70’s from a cranberry package. Over the years, I’ve tweaked with the sugar amount & skip the water. We are happy with just the orange juice for liquid. Sometimes I add red wine, this year our paper has a recipe with cardamom and brown sugar in it.
Thank you for the cranberry sauce successes. Jim
So glad you had this video. I can make this this week! One less dish to prepare next week! Thank you for all you do.
We agree, have fun! Jim
Thank you!
I just made my cranberry sauce by using cane sugar and fresh cranberries and water bathed. Yum
Pam, I followed National Center for Home Food Preservation. It didn’t call for the OJ so I didn’t use it.
Your videos are so concise and accurate. We truly appreciate giving us the science behind the methods. Kudos to Jim for excellent photography and editing. You two make a great team. Cranberries are one of my favorite fruits, and we can’t wait to make this sauce! Blessings to you and your family during this holiday season.
I did buy the water booklet but never received an email verification. I have it saved on my hard drive but wanted a way to re download if my computer got corrupted in some way. I went back to the site and can't find a way to get that info. I am backing up the hard drive but with my computer stupids heaven knows what can happen.
I don't like cranberry sauce but it may taste better your way than the store bought kind. Mom made cranberry sherbet when I was a kid. I think she gave me that recipe if I can ever find it. I love your channel and all the info you give me!! I am thankful I found your channel.
Could it be that maybe you mistyped your email address when you purchased the book? Then the notification wouldn’t get to you
@@DutchAlaskagirl I thought about that but because I have hands that hurt so much I have an auto fill program so I don't have to type.
Thank you so much for doing this video I really appreciate it for all of the new young canners out there. I have been making cranberry sauce for 40 years. It is one of the Christmas gifts that I give each year and I have several people who ask for it. For this past two years Sam’s Club in my area, Panama City Florida puts out one display and when it is gone they get no more. 2 of their bags (8 cup bags)makes 15 pints so I usually get 12 bags for the year.
That is very nice of you. Thanks for the information about sam's Club. Jim
Thank you for sharing this I am making it right now
You’re welcome 😊 Jim
I just made 9 jars cranberry/jalapeños jam!
Great receipe!!
Thank you! Jim
Love the beautiful cranberry color. Easy recipe. Thanks Pam.
You are so welcome! Jim
My favorite !! My mom made this all the time. I do too. Sometimes with apples .
On my to do list now. I’ve never jarred it. Smart and easy to transport ! Thanks
Your cranberry sauce looks yummy!
Beautiful board❤
Yum
I picked up a butane cook burner and cylinders last week and yes also a carbon monoxide detector, thanks to learning from your channel.
I use to make a cranberry sauce with pineapple in it and can it. I didn't understand about canning enough and got scared and stopped canning it because it was a recipe given to me by someone else. Learning from your channel I see I can start canning it again safely.
I also just finished making Ghee for the second time today following your instructions. They all vacuum sealed this time.
Thank you for sharing safe knowledge.
Fabulous! Jim
and I love that you wrote a book on water. Everything we do depends on it!
Love that litmus paper! 😉
Thank you, perfect timing! I will be making this ahead of time! Happy Thanksgiving to you and your family!!
Same to you! Jim
Looks delicious. I usually peel a navel orange, chop into shreds and cook for a few minutes is a little water with sugar to soften before adding cranberries. A couple shots of brandy at the end adds the finishing touch
It sounds interesting, but for us, no brandy. Jim
Great video, I love cranberries and use them year round in muffins and cakes and scones. I would love to find big bags of cranberries like the one you have. Thanks so much 🌷🇨🇦
We have found ours ar some of the big box stores. Jim
I was able to buy one small bag of cranberries last year. I hope we get a lot more of them in our stores this year. I love them.
Wonderful! Jim
Will be making this! ❤
Cranberry sauce is really good on a tuna sandwich.
I want that milk pail!
What is a butter board used for?
You can make fruit leather out of cranberry sauce. Delicious.
Placing a variety of snacks or finger foods on them when you have a party or guests for dinners or celebrations. Jim
When I get a notification that you have uploaded a post, I have to stop whatever I'm doing and watch!!
Your hair looks lovely today
I just received my order of the ISI flex-it measuring cup set and I wasn't expecting them to be so heavy duty. 😊
We hope you enjoy using it. Jim
Bought your Safe Water book! I could not figure out how to pay you more. I really wanted to do that for alllllllll your hard work. I am going to make my family some fresh cranberries!!
Show us how to do a butter board!!!
I look cranberry sauce i add it in to my sausage stuffing mix at Christmas
😯ooooo, I'm loving the overhead camera!
Thanks! Jim
If you don't care for orange in your cranberries, like me, you can chop up an apple with the skin on, which has pectin, too. I boil the chopped apple in the water first, with some spices (allspice, ginger, nutmeg, whatever you like). After boiling for 5-10 minutes, I add 1/2 the cranberries, simmer until popped, then add the other half and simmer for a few minutes, so I have some berries that still retain their shape. With all that pectin, I can cut the sugar in half, or use monkfruit to sweeten.
That sounds very good! Jim
It’s great layered in a postTurkey Day casserole. The sweetness & the fruitiness and the meat rly work.
I even do turkey sandws (if I allow myself to waste some turkey that could go in a dinner) with a spread of it over the turkey. I freeze all the leftover turkey in 2-3c portions the nite as we have dinner at 1pm. I rest then start the keeping the leftovers.
Do you have a link for the test strips you order.
This is wonderful! We got a recipe from a potluck using cranberries. Bake meatballs, cool and refreeze. Using 1 can French Onion Soup (Campbells), FROZEN meatballs and 1 can cranberry sauce. Add meatballs to slow cooker, smash up the cranberries and mix with can French Onion Soup, pour over meatballs. Cook on LOW for 4 hours. (NO, you cannot speed this up, you'll just get awesome flavored ground meat). Serve and enjoy!
That is awesome! Jim
🙏
LOL, Cranberries, last weekend my daughter and I made cranberry ketchup, cranberry sauce. I want to do dehydrated Cranberries next. One of our stores nearby had them on sale for 99 cents a bag so my mother brought me another 6 bags. Those are the ones I want to dehydrate. I found a couple instructions to do that, but if you have a video on it will you please let me know? I've been looking for a video from you but am yet to find it. We love you and Jim and your family by the way. Thank you so much for all you do.
Go to Purposeful Pantry. When it comes to dehydrating - Darcy is my go-to🥰
To: Gabriel Murry. When it goes to dehydrating Pam is my go to. Thank you.
Hey Jim, how about attaching a small battery powered fan near the overhead camera lens.
Yes, we are working on that solution. Thanks! Jim
Cranberries are very acidic. Cranberry sauce has lots of sugar. It lasts a long, long time in the fridge. I e made it at thanksgiving and served the (planned) leftovers with ham at Easter.
Cranberry sauce is versatile - it works with dark poultry (e.g., duck), pork, lamb.
For those who use alcohol, I add a shot of orange liqueur once the cranberry sauce is cooked while it’s still hot.
when I go to your amazon store there is categories but no links. I wanted to find out what jam pan you were using.

3rd request- sorry. Can you please provide the link or information on that small cart on wheels that you practiced putting the Bluetti on it? I still cannot find it on Amazon. Thank you.

How long am I boiling the cranberries for?

What is a butter board, please?
It is a different way to present relishes and finger foods. Jim
How long will those stay in the fridge, unopened?
Weeks!
How long do I need to waterbath?
Wow can you drop your link for the board?

I love watching you and all your videos. I'm new to canning and storing. Can you or someone answer a question. want to get a water bath canner (pot). Ihave a choice between a granite wear or stainless pot. I have a glass cook top. Any preferences??? Thanks in advance!!! This is a great community.
Pam's uses stainless, except her 23 QT Presto. You will not want to use your water bath canners on your glass stove tops. Jim
@@RoseRedHomestead thank you for the reply.
Why can't you out the recipe in the so description box below. It makes it so easy to just snap a picture of it and have it on our phones forever
What size is your jam pot?
Hello hoping you can help, I want to make cranberry juice was wondering if I can use monk fruit to the recipe instead of regular sugar. They will be canned
Yes you can!
@@RoseRedHomestead Thank you so much, I finally found someone I can trust
You can use the old cranberry sauce in a British style Christmas cake! That is if it still tastes like cranberries, as everything is brown from the raisins.
What is the name of that cool pan?
It is on our Amazon Store: Pots and Pans: Kitchencraft: Maslin Pan. Jim
Wow some board👍👍👍
Yes, that is what we thought! Jim
Can you freeze that cranberry sauce?
What a beautiful top Pam.
How long is broth good for in refrigerator? Before canned?
Depending on the broth has used, about 1-2 weeks. Jim
Hello Pam and Jim! This is a great video! Do you think I could add orange essential oil to. Tho recipe and can?
We do not use essential oils in our recipes. Jim
Great short video. I love your new overhead camera!
I am so sorry I missed the + on the $1 price tag when I ordered the book, which I did as soon as I saw your post about the water book. Is there a way for me to go back and pay more?
Buy it again and pay more? Might work!
@@kimmcvitty3580 thanks, why didn’t I think of that 🤣
Wow, that was so easy. I have some whole dried cranberries the I purchase back in March of 2020. I don't know if they are still good. They have been in the cupboard all this time. I wonder if I can make cranberry sauce, and can it? Anyone know? Best by date was February 2021.
Dried cranberries should be ok. Jim
QUESTION: Have you pressure canned in a 1/2 gallon/64 oz. canning jar? Someone on RUclips said it is not safe - WHY? I want to do broth in those jars. Judi
USDA says to use the 64oz jars for apple and cherry juices because other food items have not been adequately tested. I would be better if you did the broth in quart jars. Jim
@@RoseRedHomestead Thank you. Judi
What about washing the cranberries before use as directed on the package? Since I use cranberries mainly for breads and muffins, I have never frozen them because washing the frozen berries would make them too soggy to chop.
Wash
Then freeze
Id love to see a video from you about water bathing fruit juice , grape, cranberry, maybe apple? just using water and fruit. I'm obsessed with your channel! it has helped me a lot and keeps me motivated to keep canning and preserving. thank you!
Why don't you use a digital PH meter? I was thinking about purchasing one.
Didn’t know there was such a thing🤷🏻♀️
For canning the pH paper is more than sufficient. With a meter I'd be concerned about drift. Then you'd have to buy buffers to recalibrate or at the very least check it. Depending on the probe some meters are wildly inaccurate/inconsistent and the most reliable are not inexpensive as our lab purchasing manager found out the hard way. When stored properly the paper is reliable for years. I wouldn't take a chance on food safety unless the meter was routinely checked and calibrated.
❤
Hello guy's 👋 just wondering if using dried cranberries for canning is an option. Love this channel, you are a Awesome !!
There are a number of recipes on Google that say yes. Jim
@RoseRed Homestead -- That "Woman with a Gadget" Thank you so much Jim, have a great evening!! 🙂
Do you have a recipe that is the equivalent of Thanksgiving in a jar?
Not yet, but that sounds very interesting!
I made and canned cranberry sauce today for the first time. Throwing it away. It came out nothing like cranberry sauce. It’s like a spread and it’s bitter. I used 8 cups of fresh cranberries and 2 cups of sugar.
👑♥️🍃🌹🙏
I love cranberrys Thanksgiving dinner isn't good with out cranberries
Cranberry banana bread eh !
Rose love you channel thank you for everything you do for us. I have a big question about whether to can rice or not? Many of us have been doing it but some of the new caners tell us we’re going to kill people if we keep doing it. Can you weigh in on the subject for us?
USDA does not recommend canning rice. Jim
I've added this to my Saved Videos.
Definitely going to make these. Tired of the can cranberries
Yes, that is why we make our own. Jim
