    Vegan Potato Omelette (updated version!) | GF
    Ingredients:
    1 cup fine/superfine chickpea flour
    1 cup unsweetened plant based milk alternative (we used soya)
    1 cup water (2 cups if you want to leave the milk alternative out)
    800g peeled & cubed potatoes (about 5/6 medium sized whole potatoes)
    1 large onion
    1 tsp psyllium husks
    2 tsps salt
    1 tsp black salt (kala namak)
    1/4 tsp turmeric powder
    Oil for frying
    Ingredientes:
    1 taza de harina de garbanzos fino/superfino
    1 taza de leche vegetal sin azúcar/edulcorantes (utilizamos de soja)
    1 taza de agua (2 tazas si no quieres utilizar leche vegetal)
    800g de patatas peladas y cortadas
    1 cebolla grande
    1 cdta de cáscara de psyllium
    2 cdts de sal
    1 cdta de sal negra (kala namak)
    1/4 cdta de cúrcuma en polvo
    Aceite para freír

      Definitely worth a try. We’ve managed to get a texture that is more like egg with this one , but it varies with different brands of gram flour/chickpea flour. In the U.K., we used a brand that gave a spectacular result, now in Spain, we have found that even with similar grades of flour, the result is different(no less delicious though!).

    For an easy breakfast before work. I made this and it is delicious! I made the entire recipe divided into servings, ate 1 put the rest in a glass container with parchment paper between each serving as well as parchment paper on the bottom of the glass container, and it was delicious on the following days as well. I mix the - 1 cup fine/superfine chickpea flour
    - 1 cup unsweetened plant- based milk alternative (we used soya)
    - 1 cup water (2 cups if you want to leave the milk alternative out)
    - 1 t- psyllium husks
    - 2 T- salt
    - 1/4 tsp turmeric powder
    I let it cool in the refrigerator for a day or two before adding the 1 tsp black salt (kala namak) in a Ziploc bag and massage the black salt (kala namak) into the cooled mixture,
    Then I add the sautéed
    - 800g peeled & cubed potatoes (about 5/6 medium-sized whole potatoes)
    - 1 large onion
    I bake, then divide it into servings, put the remaining portions in a glass container with parchment paper between each serving as well as parchment paper on the bottom of the glass container. It warms up well.

    This recipe is a winner! This is the first chickpea-based egg alternative dish that I actually like. Good job!! (I haven't seen your first version. Maybe that one is good too...)
    *Question*: The instructions says to fully cool the mixture in the fry pan for an hour before cooking. What is the point of waiting the hour/waiting for everything to cool?
    Note: I do not cook with oil and I hate to stand over a stove, so I made the following tweaks:
    > I steamed red potatoes whole in my pressure cooker. I cooled the whole, steamed potatoes in the fridge so that they would stay firm when I later diced them and stirred them into the mixture. Ie, I steamed and cooled the potatoes ahead of time.
    > I zapped the onions in the microwave for 4 1/2 minutes.
    > After blending the garbo/"egg" mixture, I zapped it in the microwave for 2 minutes. Stirred and then did another 2 minutes. The mixture looked just like your video, and I didn't have to stand over the stove or worry about burning. ;-) Also the glass bowl was easy to clean up.
    > I put everything in a pie plate instead of a fry pan. And then I air fried for 8 minutes at 400 degrees.
    Other notes:
    > Red onions were really pretty.
    > We don't have fine or super fine garbo flour where I live. So i bought regular garbo flour and ran it through my high-speed blender for a bit.

      Great tips, Tysm for taking the time to let us know. We discovered that to best imitate the egg texture, the cooling process is absolutely necessary and it doesn’t turn out the same if it’s just cooked completely in one go.
      In the process of cooling, then reheating, resistant starch is also created, which is a very good prebiotic, supporting improved gut health🙏❤️🌱💚😋🍀🥰

      Hello Andrea, apologies for the massive delay in replying, we’ve been busy with lots of things lately. Currently the tortilla flipper can be bought online from places like Amazon or eBay, but I think they’re a huge rip off compared to the ones my wife’s parents sell in her shop here in Spain, which cost just a few euros. It hey, I guess eBay and Amazon are really the only option for most as small businesses are suffering hugely right now and everything is being sold, grossly overpriced on those monstrous websites😔

      Ohh good point, I measured it just for that reason, but forgot to mention!!! It has a diameter of 28cm. It will work in a 24cm pan as well, it’ll just be a lot fatter!😋✨🌱🙏💚

      Thanks MJ, in this recipe, we tried to get it as close to the traditional recipe(with egg) as we could. It’s not completely necessary to fry the tortilla, you can still use boiled potatoes and if you fancy adding the onion, you can lightly sauté it mainly using water if desired. The mixture, which doesn’t contain oil, is well worth trying out as it retains a more egg-like texture days after cooking, simply replace the fried ingredients with the oil free alternatives. X💚🙏😋✨🌱🍀

      That’s the Italian version, but frittata is actually traditionally fermented overnight before cooking, so this recipe is different🙏❤️🥰🌱💚😋

    Thanks for sharing this new version of recipe. Too much oil and salt you have used in this recipe and this is not good for health. I tried and enjoyed your original recipe however will try this one with steamed potatoes and onions instead frying in oil.

      Thank you 🙏. We’re aware that this may not be for everyone, but you can always cook the potatoes/onions without oil and with less salt or none at all. The mixture is the biggest difference in this recipe and gives this dish a new texture, which is very different to the other version we made.
