Ultimate Spanish Omelette | Omar Allibhoy

  • Mastering a classic Spanish dish just got easier. The wonderful Omar Allibhoy is back with his favourite recipe for Tortilla de Patatas - or Spanish omelette to you and me!
    There may be just three ingredients in this dish but each one is used to create an omelette that has bags of flavour.
    Caramelised onion provides a delicious natural sweetness while the softened potato gives texture and depth. Mix through eggs and cook until golden and firm to the touch. The perfect omelette will be slightly soft and gooey in the centre. Makes you want one now doesn’t it?!

      You can fry the potatoes and onions (optional) with sunflower oil (for instance), and use olive oil (a teaspoon or so) to cook the tortilla ;)

      I am Spanish, and the recipe looks good for me (I prefer a bit less coocked) but anyway, i agree with him, we always keep that extra vierge olive oil to cook potatos or eggs multiple times so its not wasted

      +Starmatrics from experience I would say it feeds 4 people more or less. Beware that it contains eggs and potatoes, which really satiate your stomach quickly.

    FOR THE NON SPANIARDS:
    People, keep in mind OLIVE OIL is waaaaay cheaper in Spain, we are the largest producers in the world (45%), so it is not a crazy amount (for us) what Omar is using.
    And the oil is NOT BURNED, so you can reuse.
    We have been doing it for generations, and our population keeps growing, so we are not killing ourselves reusing olive oil.

      He took the potatoes out with a skimmer, leaving very little oil in them. In my family, we strain them before adding them to the eggs.
      I don't know about him, but I put that much oil so I don't have to keep moving the potatoes around. Also, I kinda like the oniony oil for cooking other things later (:

      María Álvarez André If the pan gets super hot, couldn't the oil burn though? Burnt Olive oil is seriously unhealthy, I think if it goes over 180c you're f*cked. "As hot as possible" seems pretty close to that.

      LlewenEbag You're right. I'm from Spain and it's well known that burning olive oil is very unhealthy. You must low down the heat before it starts smoking.

      LlewenEbag I have never taken the temperature with a termomether, and I think only the chefs (or wannabes) do, but if the oil is burned it is visible, and you can also smell it.

      Szaam just divide the recipe by six (half a potato, a small piece or two of onion...) and use a single egg pan :) or this recipe actually serves lovely cold, you could make the regular amount and use the leftover for meal prep and side dish for a bit (but that might feel like eating a lot of the same)

      @Charley Says I cook it in 20 minutes for 3-4 people that is. Forget the nonsense about the soaking for 20 minutes, 5 minutes at the most but you´re quite right we want to eat it as soon as possible so most cooks don´t even soak it at all! Having said so I must add that in Spain it´s usually cooked lets say in the morning to be eaten at lunch time. Resting time once cooked makes it so much nicer, no need for it to be hot.
      And please Omar drain the potatoes, beat the eggs and don´t use so much oil! The onion and potato mixture is something between poaching and frying... NOT caramelized!!

    This is the best recipe for tortilla. Amazing flavours, clear and easy to follow. Letting the potatoes rest in the eggs makes a huge difference, the tortilla is incredibly moist as a result. I've made it many times now and it always tastes phenomenal. Thank you so much!

    I don't know why people disliked this. I made this today. I used local potatoes and not as much oil, but the potatoes did take longer to cook. Th egg mixture does get thicker and the overall frittata is fantastic. This is the first time, my potatoes didn't remain raw or overcooked. This goes into my recipe book. Thank you for sharing! Loved it and ate it all by myself.

    I did it!! I DID IT !!! I am the World's Most Incompetent Cook, and I managed to make a Tortilla that looks almost like his !! Omar must have tried this out on an Idiot Cook like me, before he made the Video - - the scariest bit was flipping the pan and plate, but he is right, if you put a fair bit of pressure on the plate, and a good strong hold of the pan handle at the end nearest the plate, the pan and plate really do stay together as you flip them. And I am not that strong. Thanks so much, Omar - so PLEASED to succeed. My first YT recipe :-))

    This is the first time I see a Spanish dish cooked right in an English speaking TV show. The very first time. And yes, I've seen Ramsay's paella.
    Also, extra virgin olive oil is really good for you, there are many misconceptions about that.

      I think there's a difference between dressing a salad with a generous amount of olive oil and drowning it... Ultimately it comes down to preference, but drowning a salad in its dressing isn't exactly the usual thing to do. I mean, I have toast with olive oil and garlic for breakfast almost every morning, but even that's still a healthy amount.

      then, you didnt cook enough before flipping i think. try using a little oil when taking back to the pan after it was resting. also the plate needs to be the much wider the the pan. ha ha ha, im an expert now :)

      What people do is they keep a glass bottle with the used oil in. You need to:
      1. Make sure you don't burn the oil - gentle heat does it
      2. After cooking wait until it cools down
      3. Pour it into the glass bottle through a fine sieve to remove debris
      4. Re-use it only a couple of times
      5. Use the oniony olive oil to fry an egg between *tortilla de patatas* cooking sessions

      You would be extremely full though, tortilla is quite heavy. I'd say that tortilla is plenty for 4 people with some bread and salad to go with it.

      @Joe Egan You´re quite right! Six or seven times is too much. Four is just fine. By the way I highly recomend to strain the potatoes through a colander once cooked, otherwise you´re adding extra oil to the mixture which will make it too greasy and fattening.

    Great recipe... here's my earth-friendly tip: Cover the bowl with a plate instead of disposable aluminum foil to reduce unnecessary resource waste/landfill bulk.

      It's aluminum, not plastic. Did you think all foil was made from virgin mined aluminum? It gets recycled

      Here in Australia we RECYCLE that foil. As MANY countries do. In fact you get new foil that's 100% recycled.

    This is by far the best Tortilla recipe I have ever tried. Mixing the eggs with the cooked potatoes and onion and letting them rest is genius! A Million times better than the Jamie Oliver recipe which terrible :)

    I'm Argentinian and grew up with a Spanish Grandmother. This is without a doubt one of my favorite dishes. And when I feel like splurging, I'd rather have this than domino's or Mcdonald's or In N Out any day of the week.
    It's not mean't to be eaten every day, but it's a glorious day when you do.
    P.S. There is a scrambled recipe of this dish that's much easier to make, tastes similar, but the texture is different. I can't recall the name right now, but it's definitely worth looking at if you want a little less egg and oil in the recipe (emphasis on "little").

    I have just made this never having made a Spanish omelette before and it is absolutely delicious. I followed the instructions exactly and found it very easy. The caramelisation of the onions is so tasty. It will easily serve six although I'm on my own so will be overdosing on it, yum. It does seem a lot of oil but you need that to cook the onions and potatoes but you drain it and it can be used again, I'll just be cooking with it as normal and I'm sure it will add tremendous flavour to whatever I'm cooking. This will definitely be a favourite from now on 😋

    By the way - the recipe is great! I've been intimidated by this dish for years. It worked out fantastically following this video. I used a cast iron pan, because I don't do non-stick. It was a bit heavy, but the tortilla didn't stick at all, and the clean up was minimal. Thanks Omar!

      Hyia all I am the type of person who needs a lot of exact measurements (I panic otherwise 😳) so I used 700 gr of potatoes rougly 8 medium sized to cook the omelette. I never attempted to do such a recepe so the faces of my family tonight will tell me all. This was very inspirational.

    My grandma, may her soul rest in piece, lived in Tangier for a long time. I grew up watching her make tortillas, very simple recipe; french fries and eggs. Mom learned it from her, and so did i later on. I wanted to improvise so many times although I'm not a cook, but now I decided to look for a cooler recipe and thus I stumbled upon this masterpiece. I am yet to try it and taste it myself !

    2:58 okey im gonna give a tip here, what we do in my house is just first mix the eggs in a cup using a fork, and thats way faster, you may also wanna add a little bit of salt now.
    *some people also add small chorizo dices and make a "tortilla de chorizo".

      it's basically an omelette, it's the steps taken that make it a Tortilla... The Mexican (or really New Mexcian, the Mexicanos stole it from us) tortilla was named after this despite being not similar at all. In the southwest we make home made flour tortillas, and Spanish tortillas with New Mexico green chile peppers or Red Chile (chile colorado) sauce drizzled on top with an egg or something on top.

    I’m quite an expert doing this tortilla española! My great-grandfather was Spanish and my grandmother made it with peas or string Beans! Delicious too.

    This is one of those dishes where the whole is really greater than the sum of the parts, and execution is the key to getting the most from the limited ingredients. I made it once and it came out very average. But, I made it another time and it was absolutely gorgeous. Kudos for the recipe :)

    I struggled to flip the omlette as suggested: obviously not strong enough! Instead, I slid the half cooked omlette onto a plate (wet side up) than put another plate on top of it, and then turned the plates upside down. I then slipped the flipped back into the non-stick pan. It worked! And tasted fantastic!

      Jajajajaja tienes razón pero mejor usar un colador para colar las patatas antes de mezclar con los huevos si no queda muy aceitosa

    When I did the Camino I had this omelette and a glass of freshly squeezed orange juice every morning on the trail. So good!
