María Álvarez André If the pan gets super hot, couldn't the oil burn though? Burnt Olive oil is seriously unhealthy, I think if it goes over 180c you're f*cked. "As hot as possible" seems pretty close to that.

I am Spanish, and the recipe looks good for me (I prefer a bit less coocked) but anyway, i agree with him, we always keep that extra vierge olive oil to cook potatos or eggs multiple times so its not wasted

Forget the nonsense about the soaking for 20 minutes, 5 minutes at the most but you´re quite right we want to eat it as soon as possible so most cooks don´t even soak it at all! Having said so I must add that in Spain it´s usually cooked lets say in the morning to be eaten at lunch time. Resting time once cooked makes it so much nicer, no need for it to be hot. And please Omar drain the potatoes, beat the eggs and don´t use so much oil! The onion and potato mixture is something between poaching and frying... NOT caramelized!!
I am from Spain and I must say that this recipe is exactly what I, my mother, and my grandparents used to make at home. The only difference is I beat the eggs and then add the candied potatoes and onion. And I also let them rehydrate with the beaten eggs for a few minutes. This is the real Spanish potato tortilla (with onion). Congratulations.

This is the best recipe for tortilla. Amazing flavours, clear and easy to follow. Letting the potatoes rest in the eggs makes a huge difference, the tortilla is incredibly moist as a result. I've made it many times now and it always tastes phenomenal. Thank you so much!

I did it!! I DID IT !!! I am the World's Most Incompetent Cook, and I managed to make a Tortilla that looks almost like his !! Omar must have tried this out on an Idiot Cook like me, before he made the Video - - the scariest bit was flipping the pan and plate, but he is right, if you put a fair bit of pressure on the plate, and a good strong hold of the pan handle at the end nearest the plate, the pan and plate really do stay together as you flip them. And I am not that strong. Thanks so much, Omar - so PLEASED to succeed. My first YT recipe :-))
Yes, I remember the tortillas. Very tasty and filling. I also liked the asparagus and tomato bread. However, overall the food on the Camino was quite uninspiring and a bit bland for me.
I'm Argentinian and grew up with a Spanish Grandmother. This is without a doubt one of my favorite dishes. And when I feel like splurging, I'd rather have this than domino's or Mcdonald's or In N Out any day of the week. It's not mean't to be eaten every day, but it's a glorious day when you do. P.S. There is a scrambled recipe of this dish that's much easier to make, tastes similar, but the texture is different. I can't recall the name right now, but it's definitely worth looking at if you want a little less egg and oil in the recipe (emphasis on "little").

The most authentic recipe I have come across, after having visited Spain dozens of times since the 1970s. It is actually much better then most I have tried in Spanish restaurants, which tend to be dry. For years, I couldn’t quite get it right, but after watching this video, I have cracked it: use lots of extra virgin olive oil and cook the onions first so they are caramelised. Thank you.

By the way - the recipe is great! I've been intimidated by this dish for years. It worked out fantastically following this video. I used a cast iron pan, because I don't do non-stick. It was a bit heavy, but the tortilla didn't stick at all, and the clean up was minimal. Thanks Omar!
I don't know why people disliked this. I made this today. I used local potatoes and not as much oil, but the potatoes did take longer to cook. Th egg mixture does get thicker and the overall frittata is fantastic. This is the first time, my potatoes didn't remain raw or overcooked. This goes into my recipe book. Thank you for sharing! Loved it and ate it all by myself.

The magic of the recipe is that you are constantly thinking "This is going to be a disaster" "everything is leaking" "why am I even trying" and just at the very end, you get a proper Spanish tortilla and you truly don't know how is it even physically possible.
Szaam just divide the recipe by six (half a potato, a small piece or two of onion...) and use a single egg pan :) or this recipe actually serves lovely cold, you could make the regular amount and use the leftover for meal prep and side dish for a bit (but that might feel like eating a lot of the same)

I think there's a difference between dressing a salad with a generous amount of olive oil and drowning it... Ultimately it comes down to preference, but drowning a salad in its dressing isn't exactly the usual thing to do. I mean, I have toast with olive oil and garlic for breakfast almost every morning, but even that's still a healthy amount.
This is one of those dishes where the whole is really greater than the sum of the parts, and execution is the key to getting the most from the limited ingredients. I made it once and it came out very average. But, I made it another time and it was absolutely gorgeous. Kudos for the recipe :)

I've just made my first Spanish omelette and it's great! Thanks for the tips re: onions first, lots of oil, how and when to flip in the pan. I'l be reusing the oil which now has a great onion flavour.
I've made Tortilla de Patatas more than a few times, and the taste (and mouthfeel) improve tremendously by allowing the dish to cool to room temperature. This allows the internal steam time to vent off (who wants water in their tortilla?) and for the tortilla flavor to become concentrated as its density increases. If you make this in a 10" fry pan, it takes about 30 minutes to cool off; I know it's difficult to wait that long -- it looking and smelling so delicious -- but it's totally worth it!
+Starmatrics from experience I would say it feeds 4 people more or less. Beware that it contains eggs and potatoes, which really satiate your stomach quickly.

My cousins grew up in bilbao Spain. Its where their mom is from. 2 still live there. Every year when they came to the states to see their dad they'd bring a bunch of tortilla sandwiches. I loved them so much. They'd add chorizo to them as well. Now I need to try this

What people do is they keep a glass bottle with the used oil in. You need to: 1. Make sure you don't burn the oil - gentle heat does it 2. After cooking wait until it cools down 3. Pour it into the glass bottle through a fine sieve to remove debris 4. Re-use it only a couple of times 5. Use the oniony olive oil to fry an egg between *tortilla de patatas* cooking sessions
+Sarah Mao next time serve it with a tiny bit if mayo. Or cut it by the middle and stuff it with a couple slices of steamed ham, or with some lettuce. Options are nearly infinite for the potatoes' omelette.

Hyia all I am the type of person who needs a lot of exact measurements (I panic otherwise 😳) so I used 700 gr of potatoes rougly 8 medium sized to cook the omelette. I never attempted to do such a recepe so the faces of my family tonight will tell me all. This was very inspirational.
@Joe Egan You´re quite right! Six or seven times is too much. Four is just fine. By the way I highly recomend to strain the potatoes through a colander once cooked, otherwise you´re adding extra oil to the mixture which will make it too greasy and fattening.

You know a recipe is going to be good when it starts of with 500ml of oliveoil
You can fry the potatoes and onions (optional) with sunflower oil (for instance), and use olive oil (a teaspoon or so) to cook the tortilla ;)

@@rohilthomson it’s oil. Not exactly a healthy thing. Used oil isn’t harmful. And you beat it back up to a safe temperature before cooking with it again. It’s fine.

The magic of the recipe is that you are constantly thinking "This is going to be a disaster" "everything is leaking" "why am I even trying" and just at the very end, you get a proper Spanish tortilla and you truly don't know how is it even physically possible.

Szaam just divide the recipe by six (half a potato, a small piece or two of onion...) and use a single egg pan :) or this recipe actually serves lovely cold, you could make the regular amount and use the leftover for meal prep and side dish for a bit (but that might feel like eating a lot of the same)
You can eat that six times.
Cut the ingredients by half and do it up in a 6" fry pan.
I made this for myself and it was delicious! Had it for lunch to take into work for the next few days :)

Great recipe... here's my earth-friendly tip: Cover the bowl with a plate instead of disposable aluminum foil to reduce unnecessary resource waste/landfill bulk.
Or just put it in the microwave and don't heat it, to make sure it's in a closed space.
It's aluminum, not plastic. Did you think all foil was made from virgin mined aluminum? It gets recycled
Here in Australia we RECYCLE that foil. As MANY countries do. In fact you get new foil that's 100% recycled.

Also, extra virgin olive oil is really good for you, there are many misconceptions about that.
You have no idea how Americans will misconstrue what you say. they will drink the extra virgin olive oil between McDonald's Big Mac's or 24 ounce steaks. Too many Americans mistake "healthy" for "you can eat outrageous quantities."

That's not entirely true. I drown my salads and veggies in olive oil. Well, not literally, but quite.
I think there's a difference between dressing a salad with a generous amount of olive oil and drowning it... Ultimately it comes down to preference, but drowning a salad in its dressing isn't exactly the usual thing to do. I mean, I have toast with olive oil and garlic for breakfast almost every morning, but even that's still a healthy amount.

This is one of those dishes where the whole is really greater than the sum of the parts, and execution is the key to getting the most from the limited ingredients. I made it once and it came out very average. But, I made it another time and it was absolutely gorgeous. Kudos for the recipe :)

then, you didnt cook enough before flipping i think. try using a little oil when taking back to the pan after it was resting. also the plate needs to be the much wider the the pan. ha ha ha, im an expert now :)

I've made Tortilla de Patatas more than a few times, and the taste (and mouthfeel) improve tremendously by allowing the dish to cool to room temperature. This allows the internal steam time to vent off (who wants water in their tortilla?) and for the tortilla flavor to become concentrated as its density increases. If you make this in a 10" fry pan, it takes about 30 minutes to cool off; I know it's difficult to wait that long -- it looking and smelling so delicious -- but it's totally worth it!

My cousins grew up in bilbao Spain. Its where their mom is from. 2 still live there. Every year when they came to the states to see their dad they'd bring a bunch of tortilla sandwiches. I loved them so much. They'd add chorizo to them as well. Now I need to try this

If you can't afford 500 ml of olive oil, you should not be watching RUclips.
What people do is they keep a glass bottle with the used oil in. You need to:
1. Make sure you don't burn the oil - gentle heat does it
2. After cooking wait until it cools down
3. Pour it into the glass bottle through a fine sieve to remove debris
4. Re-use it only a couple of times
5. Use the oniony olive oil to fry an egg between *tortilla de patatas* cooking sessions

Hyia all I am the type of person who needs a lot of exact measurements (I panic otherwise 😳) so I used 700 gr of potatoes rougly 8 medium sized to cook the omelette. I never attempted to do such a recepe so the faces of my family tonight will tell me all. This was very inspirational.

@Joe Egan You´re quite right! Six or seven times is too much. Four is just fine. By the way I highly recomend to strain the potatoes through a colander once cooked, otherwise you´re adding extra oil to the mixture which will make it too greasy and fattening.
Virgin doesn't mean new. Virgin is the first oil you have when you press the oil.industrialy of course
