    FOR THE NON SPANIARDS:
    People, keep in mind OLIVE OIL is waaaaay cheaper in Spain, we are the largest producers in the world (45%), so it is not a crazy amount (for us) what Omar is using.
    And the oil is NOT BURNED, so you can reuse.
    We have been doing it for generations, and our population keeps growing, so we are not killing ourselves reusing olive oil.

    • @alvarezandre
      @alvarezandre 9 лет назад +223

      He took the potatoes out with a skimmer, leaving very little oil in them. In my family, we strain them before adding them to the eggs.
      I don't know about him, but I put that much oil so I don't have to keep moving the potatoes around. Also, I kinda like the oniony oil for cooking other things later (:

    • @LlewenEbag
      @LlewenEbag 9 лет назад +39

      María Álvarez André If the pan gets super hot, couldn't the oil burn though? Burnt Olive oil is seriously unhealthy, I think if it goes over 180c you're f*cked. "As hot as possible" seems pretty close to that.

    • @Camuchoide
      @Camuchoide 9 лет назад +62

      LlewenEbag You're right. I'm from Spain and it's well known that burning olive oil is very unhealthy. You must low down the heat before it starts smoking.

    • @alvarezandre
      @alvarezandre 9 лет назад +124

      LlewenEbag I have never taken the temperature with a termomether, and I think only the chefs (or wannabes) do, but if the oil is burned it is visible, and you can also smell it.

      @Charley Says I cook it in 20 minutes for 3-4 people that is. Forget the nonsense about the soaking for 20 minutes, 5 minutes at the most but you´re quite right we want to eat it as soon as possible so most cooks don´t even soak it at all! Having said so I must add that in Spain it´s usually cooked lets say in the morning to be eaten at lunch time. Resting time once cooked makes it so much nicer, no need for it to be hot.
      And please Omar drain the potatoes, beat the eggs and don´t use so much oil! The onion and potato mixture is something between poaching and frying... NOT caramelized!!

The only difference is I beat the eggs and then add the candied potatoes and onion. And I also let them rehydrate with the beaten eggs for a few minutes. This is the real Spanish potato tortilla (with onion). Congratulations.

Omar must have tried this out on an Idiot Cook like me, before he made the Video - - the scariest bit was flipping the pan and plate, but he is right, if you put a fair bit of pressure on the plate, and a good strong hold of the pan handle at the end nearest the plate, the pan and plate really do stay together as you flip them. And I am not that strong. Thanks so much, Omar - so PLEASED to succeed. My first YT recipe :-))

    I'm Argentinian and grew up with a Spanish Grandmother. This is without a doubt one of my favorite dishes. And when I feel like splurging, I'd rather have this than domino's or Mcdonald's or In N Out any day of the week.
    It's not mean't to be eaten every day, but it's a glorious day when you do.
    P.S. There is a scrambled recipe of this dish that's much easier to make, tastes similar, but the texture is different. I can't recall the name right now, but it's definitely worth looking at if you want a little less egg and oil in the recipe (emphasis on "little").

    This is the first time I see a Spanish dish cooked right in an English speaking TV show. The very first time. And yes, I've seen Ramsay's paella.
    Also, extra virgin olive oil is really good for you, there are many misconceptions about that.

    • @GarrySkipPerkins
      @GarrySkipPerkins 8 лет назад +65

      You have no idea how Americans will misconstrue what you say. they will drink the extra virgin olive oil between McDonald's Big Mac's or 24 ounce steaks. Too many Americans mistake "healthy" for "you can eat outrageous quantities."

    • @livingsansara
      @livingsansara 8 лет назад +28

      Garry Perkins
      That shouldn't have made me laugh so hard, but, yeah. In case there's any doubt, no, we don't drink olive oil directly from the bottle, we don't eat food drenched in the stuff. I hope I won't be held responsible for any overdoses.

    • @jmiquelmb
      @jmiquelmb 8 лет назад +5

      That's not entirely true. I drown my salads and veggies in olive oil. Well, not literally, but quite.

    • @livingsansara
      @livingsansara 8 лет назад +13

      I think there's a difference between dressing a salad with a generous amount of olive oil and drowning it... Ultimately it comes down to preference, but drowning a salad in its dressing isn't exactly the usual thing to do. I mean, I have toast with olive oil and garlic for breakfast almost every morning, but even that's still a healthy amount.

    I've made Tortilla de Patatas more than a few times, and the taste (and mouthfeel) improve tremendously by allowing the dish to cool to room temperature. This allows the internal steam time to vent off (who wants water in their tortilla?) and for the tortilla flavor to become concentrated as its density increases. If you make this in a 10" fry pan, it takes about 30 minutes to cool off; I know it's difficult to wait that long -- it looking and smelling so delicious -- but it's totally worth it!

      What people do is they keep a glass bottle with the used oil in. You need to:
      1. Make sure you don't burn the oil - gentle heat does it
      2. After cooking wait until it cools down
      3. Pour it into the glass bottle through a fine sieve to remove debris
      4. Re-use it only a couple of times

    This looks legit (it's been 25 years since I lived in Spain), and I can't wait to try it. (There are a few Cuban joints in Miami who get it right, but finding a proper Tortilla Española commercially in the U.S. is nearly impossible.)
    As per your video, a recipe request: Sopa de ajo, estilo Andaluz!

    Made this today in a 12" skillet, think it was too big. Still tasted amazing!! Great recipe. What size pan do you use Omar?
    Thank you!

    En Argentina a la tortilla de papas española además de cebolla le agregamos chorizo colorado y pimentón.
    Es una comida bastante tradicional acá, aunque como soy vegetariana yo remplazo el chorizo por morrones. Saludos!

      Verónica B En España a veces también se le añade chorizo, aunque esta es la versión más clásica. No tenía ni idea de que en Argentina también fuese tradicional :). Un saludo desde España!

      ***** hola! Si, por aqui se consume mucho. No es tan raro si tomas en cuenta que a principios del siglo XX gran parte de los inmigrantes que llegaban a la Argentina eran españoles o italianos.

      Verónica B Es increíble lo diferente que sabe al añadir un solo ingrediente más como el chorizo, además que sigue siendo igual de barato y fácil de cocinar!

      He's a famous chef on a spanish restaurant on GB [ I think that the restaurant is in London, but I'm not sure at all]. He appeared on a Gordom Ramsay's contest.
