I love Spanish food. It has depth to every dish. I like the Italians way of cooking however Spanish food always looks so fresh, healthy and technical without effort!
I discovered Gazpacho on the Costa Brava in 1963 when I was only 12 years old and I have never ever been bored by it. It is the perfect iced, liquid salad for a hot lunchtime. It is as delicious today as it was 60 years ago.
I made this soup and it was the most incredible soup I have ever had. My Dad who spent 2 years in Spain in his 20's said it was as authentic is it gets. Thank you Omar!

I think your recipe is the most true to the original south spain gazpacho I've seen. It's usually people making their own version or things that look like pico de gallo with tomato juice LOL my mom used to make it like this when I was a kid, she also knew how to make salmorejo (but I mean, I'm spanish and I think everybody follows the original recipes in our country hahaha). You should try to make a recipe for flamenquines cordobeses, they're also part of my childhood and brings me so many good memories

I think is perfect! You can always change the proportions, I personally like it without onions, but that was a very complete recipe and very typical, you can't fail with this recipe! Olé!
I made this today, and it turned out really nice. Great balance of flavors, nice texture, and smart thinking on the ice cubes! Will definitely be making this again.
Took me a while to remember where I saw Omar, and I just got it. He was the head chef at El Pirata de Tapas which was on Gordon Ramsay's best restaurant, I believe. Would love to see more of this chef and maybe even some of his molecular gastronomy :)

+DOC DELGADO Hombre, es lo que dice "en mi familia hacemos esto u esto otro", en mi opinión son modificaciones sin importancia, porque la esencia del plato original está ahí, plato original que si se hiciera como lo hacían los pastores del occidente andaluz, por otro lado, sería una base de agua fría con los vegetales machacados a mano y el pan desmigado hasta hacer la pasta que luego sería el gazpacho. Ponte a machacar todo a mano machote, al final acabas hasta el rabo del gazpacho jajajaja
