Make Vegan Egg At Home // So Easy & Cheap! (Just Egg Substitute)

  • Just Egg is a cool egg substitute, but for what it is, it's kind of expensive and definitely has some extra ingredients in there that don't need to be. In this video I show you how to easily make it at home yourself using just a few ingredients for a fraction of the price!
    You can use this to make vegan fried egg, omelettes, scrambled eggs and even french toast!

    Recipe:
    1 cup split yellow mung beans
    1 1/3 cups of water
    1 tsp dehydrated onion flakes
    *or 1/2 - 3/4 tsp onion powder
    1/2 tsp of salt
    1/2 tsp of turmeric
    Add after cooking (sprinkle on top of your food):
    1/4 tsp kala Namak (Black Salt)
    1/4 tsp black pepper
    Method:
    1. Rinse the mung beans well and then soak for at least 4 hours or overnight.
    2. Discard the water and add the mung beans to a blender.
    3. Add 1 1/3 cups of water, onion flakes, salt, and turmeric and blend until smooth.
    4. Now it is ready to use however you would like! Scrambled eggs, fried egg, or omelette.
    5. Sprinkle Kala Namak (Black Salt) on top of what you make for an eggy flavour, since the cooking process will cook out most of the eggy flavour. Add black pepper as well. Enjoy!

    Yo man! Vegan chef here, I run a restaurant in the Midwest of US. I created a MUNG egg for our restaurant about a year ago and it has been one of the most popular items since. Ours is a bit more complex than yours but i appreciate you putting the knowledge out. If you make it right you can use it to egg batter and then bread items for baking to be crispy and delicious. Here at the restaurant i used our mung egg to batter eggplant and bread them with Italian bread crumbs and bake, flip and bake again. They are incredible eggplant parm. People really love that and the omelette we offer now. We also have a VERY hearty breakfast wrap that i call the "high protein breakfast wrap" thats delicious. A breakfast suitable for a calisthenics athlete like you or I my friend. 😊 I hope you read this.

    A shortcut I found was to use Mung Bean Flour (Moong Dal Flour), which can also be found in an Indian grocery (I also found in an Asian/Chinese market, but it had a greenish tint from the mung bean shells-still tasted fine). Nice thing is I prepared pouches of premixed dry ingredients that I just need to mix right before making breakfast--no need to soak the night before!

    I make homemade just egg like this too and I have a couple tips and ideas. 1 use about a tablespoon of tapioca starch in the blending step. When heated, it firms up in sort of a bouncy consistency so you can very easily use this mix to make fluffy scrambled eggs too. 2 use soy milk instead of water to blend. It also helps with the texture and it makes it higher in protein. 3 add a bit of garlic. Because it’s delicious. 5 add about a teaspoon of baking powder for structural reasons. And finally, if you pour it into a large nonstick baking dish and bake at 350 (or 176) for 15min, you can use a round cookie cutter to make egg patties for vegan McMuffins. The baking powder is important if you want to do this.

      @@SadullahDemirkayathis video and my comment aren’t even about meat. They’re about eggs and egg substitutes. Vegans eat animal product substitutes for the same reason people play call of duty. We want an experience without actually causing suffering and death. So yeah, you can eat meat if you want because in this despicable society where child slavery is also allowed, you won’t legally be penalized for killing a baby animal so you can feast on its murdered corpse. That doesn’t make it moral. That doesn’t make your choice justified. Women couldn’t legally vote until a hundred years ago, that doesn’t mean it was right to prohibit them. They couldn’t have bank accounts until the 70s, that didn’t make it right to prohibit them. Legality is not morality. Murder has always been and will always be wrong and when legality eventually catches up with morality, history will remember you the same way it remembered Nazis.

    This is called traditional cheela (its a very common breakfast in the central part of India) . There is a similar version made in South india called "ADAI" . In that we use mix of dals (Black Gram Lentil Dal , Moong Dal , Toor Dal , Rice) you can basically use any. Try searching for this receipe and improvise as per your liking.

    This is mung daal chila! Its a very common breakfast in India. You can add a lot more veggies to it. For quick preparation, you may want to use besan (chickpeas flour).

    I currently don't have good non stick pans. So my hack is to put parchment paper on my toaster oven baking sheet. I mix in some sauteed veggies and herbs and pour a thin layer on the baking pan. Cook in my toaster oven for about 5 minutes and I have a yummy egg to top onto toast. It's a great hack for those of us who struggle with the product sticking to pans.

      I do this as well. Prefer not to use stove top. Cook large pan of it in my Breville Smart Air oven on airfry mode. Then cut into squares and use for sliders or McMuffins with vegan oat sausage or smaller squares with sausage and Chao cheese and make stuffed sourdough pretzels in bulk and freeze for easy defrost and nuke later.
      I will try adding the tapioca flour next! Fluffy sounds great.

    I had problems with Just Egg sticking to my plan even when sprayed with oil. Finally I whisked a little bit of avocado oil to it and that solved the problem

    I have also used chickpea flour, same set up but I added peppers, green onion, and deseeded jalapeño, spices and baking powder into a waffle maker! The kids loved it and it was so light and fluffy!

    I find that you can add tofu scramble (or just tofu) to just egg to improve the texture of Just Egg. Makes it less flat and crepe-like.

      I make seasoned Tofu scramble and it's great. When it's cooled, I add freshly ground flax seeds. Yum

    Made these and they were really good! Saves a lot of money too. At our grocery store, it’s about $5 for a bottle of just egg, and this recipe made two bottles for about $1.00!     I tried this and made it exactly as the recipe required. It turned out very different than Just Eggs. The flavor was spot on but the texture was very beaney or starchy or cake like. Just Egg uses the protein isolate so the fiber is removed from the protein. That makes a big difference.

    Chef here! ,Using a coated stainless steel pan works, as some non stick contain very harmful chemicals, so what you do is you get youre pan very hot use a high heat smoke oil like cocount about 2 T then wait when you see smoke coming off take it off heat, and wait for it to completely cool wipe it with a cotton cloth, as if you used to much oil and trying to clean it off the pan, then it will be ready to use!     That was an important tip about kala namak. I still see a lot of RUclipsrs/recipes adding it before cooking and I wonder how many folks who try it are disappointed that they don't actually get that egg flavor. It really does work well added at the end and as Derek said, it isn't that salty so you can add quite a bit if you need to in order to get the depth of flavor you desire.

    Thanks so much Derek! I've tried other mung bean egg recipes before, but none contain the quantities and onion flakes and powder your version has. Before I went vegan, cheese and eggs were my favourite type of brunch, so the large quantity of your ingredients is perfect for my appetite. My husband tasted a weird chemical flavour in the store bought Just Egg and challenged me to make a homemade version. For oil-free and non-stick-pan free version, I've found that pouring onto parchment paper and putting into the oven or air fryer does the trick. I'm looking forward to trying out your recipe this morning! BTW, I just saw your buddy Nimai on the Netflix documentary You Are What You Eat last night re: the Stanford research study on twins on a whole food omnivore vs. vegan diet. It was fascinating, and I was excited to see Nimai coaching the twins on exercise and diet to build lean muscle. Very fascinating...and builds on the science presented in the Game Changers. Maybe one day we'll see you featured in one of these documentaries!

    I make wraps or tortillas like this. I thin the batter a bit. They’re very pliable and soft. I learned this from Broccoli Mum channel. They freeze well. I bet these omelets would freeze too! You could make them smaller for egg McMuffin type thingies.

    Hi, i did it this morning for breakfast. I had a bag of split yellow peas so I used it. I made 3 portions of a “scramble egg” with spinach and tomatoes but, for me, this amount is perfect for 4 portions! Very fast recipe, perfect to do in advance and have it ready for the busy morning.     I make this a lot , today was one of them. I added a homemade tapenade made with kal olives, sun dried tomato, sautéed onions and garlic. A delish omelette .. I made the whole mix and put it in the fridge for snacking on this time. I’m thinking I’ll slice and air fry to make them crispy for dipping.. 🤗 Happy Sunday!

    So, I’ve made a very similar recipe and you can cook the mung bean omelette “pancakes” and freeze them and add the veggies later. So nice for meal prep!

    Additional tips:
    If this is a bit too dry for your taste, you can add some fat by blending a T of cashews with it.
    Also, this stuff is better after freezing. I don't know why.
    I usually bake (or microwave!) and freeze in slabs. You can toast them after defrosting. You can toss into soups, salads, stir fries. They seem moister after freezing. 💚🌱

      Well this dude used no oil at all, that's why it looks like a pancake with dried veggies, rather than an omelet, and dead-stuck to the pan. I mean if someone in on trendy "no-oil" diet or something, pans in general are just waste of equipment. Air-fryers or steam cookers are those that designed for no-oil recipes specifically.

    Just egg, once opened, doesn’t last very long in the fridge-I’ve had it go moldy, swampy tasting with a half bottle/carton left!! Homemade sounds great! Thanks, Derek! ☺️♥️

      I try to use it up quickly because its so $$$ but I am surprised by that since it has preservatives in it. At least with homemade you can control how much you make at a time so no wasting! If you try it, please enjoy!

      I pour it into ice cube trays and freeze it. It still cooks fine after thawing.

      After day 3 I just make a huge scramble or tofu/justegg bake and divide into portions in the fridge.

    Thank you ❤ I just transitioned to Vegan this morning after being pescatarian for the past year and a half. I was going to do vegetarian until I found a replacement for eggs and dairy without it being fake or the harsh ingredients like the ones in the store bought just egg that I don’t really want in my diet.     I finally made this! It makes an excellent omelet. I have not tried scrambled eggs yet. Great pro tip adding the black salt on the finished product. I also tried French toast- even with the syrup and fruit, I could still taste the onion; next time I make this, I might leave out the onion all together.

    PROTIP: You can use split green peas for this if you can't find mung beans! You'll end up with a green omelette, but it's just as tasty.

    Thanks so much for this recipe! This morning I used it to make French toast. Even with the added spices you couldn’t taste them. It was YUMMY! And…it didn’t stick in a non-stick pan, something that has been hard to find with other egg replacers. Love your energy! You are easy to watch and learn. Some of my favorite recipes are from you…chickpea cookie dough and sliced apple a favorite and your Buffalo Sauce…omg that stuff is addictive! There are more, but too many to mention. Yummo!     @1:56 quick tip, if you add the water from the next step to the Pyrex, then the mung beans will pour out more easily into the blenderrrrrrr.

    You can achieve the same result using Gram Flour a staple you can find anywhere you find Mung Dal. It is made from Chana Dal which is naturally yellow so you can skip the turmeric if desired.

      And I think another reason that mung dal came out on top with the Just people is because mung naturally has a slippery texture (more slippery) compared to the chana. And from what I understand, it's easier to digest in general.

    This is awesome because I have been using Just egg to make a recipe I used to make with spaghetti noodles that were cooked I would add just egg to stick to the drained cooked pasta while cooking longer and adding garlic powder and nooch and oregano and vegan parmesan and then chopped up Italian gardein sausages. It was easy to have with a salad. Super quick meal.I also make quiche with just egg so I might try with the mung bean recipe too. Thanks for this .

      I am thinking that this plus some crumbled, not too firm, tofu would produce something very similar to an egg-based quiche, softer with a mix of textures. Going to give it a try.

    WOW! Can't get to the yellow mung beans in the pantry fast enough! Will definitely try this recipe. Thanks so much for your efforts and the energy that goes into your creativity. Here's an idea I'm passing on if you need to take in more protein. I had cooked organic soy beans in the iPot - used so far in a variety of recipes. Used 1/2 c. of those beans added to a smoothie this morning along with mango, ginger, 1/2 c. oats/water, banana and I used Stevia for sweetener. No bean taste but lots of extra protein for anyone that is interested in adding more of that to their diet!

    I did something similar to this previously... I just soaked my mung beans, and left them in the fridge. Then when I wanted to fry up some "Eggs" I put them in the blender. I also threw in some rice for a really yummy fry-bread.

    I make a similar thing to this but I also add in a block of silken tofu, it just changes up the texture a bit.
    I use it to make "egg" muffins. In the oven. That way I have lazy breakfasts for the week. I add diced onion, mushrooms, and spinach, then put it in a silicone muffin pan, and bake in the oven for 20 minutes (ish). Soooo good for grab and go (or just lazy) breakfasts. 😊

      I use silken tofu (and discarded crusts from making my kids uncrustables for their lunches) for making french toast and it's delicious. I'm not even vegan and this is still my preferred recipe now 😅

    We love just egg, but it’s very expensive to feed a family of 6. So we make 50/50 tofu / just egg scramble. I always liked tofu scramble and it adds a nice eggy flavor to include the just egg while stretching an expensive ingredient!

    I think using chickpea flour instead of the whole beans is way more efficient and it even tastes like egg because of the sulfur in the chickpeas 🤷

    I use a similar recipe and found that cooking it in my silicone egg molds in the microwave works really well. I have used small ramekins sprayed with coconut oil, then baked in the microwave at 40 second intervals was good for a larger egg patty.

    I blend a half block of firm tofu, with water, turmeric, onion powder, garlic powder, nooch, and pepper. I oil a pan, cook down the liquid and crumble the rest of the firm tofu in. Then add black salt at the end. Great for scrambled eggs in a pinch and minimal effort. You can even add a ton of veggies for scrambled omelette type situation (with your favourite hot sauce of course 🤤)

I was making a chickpea flour omelette for awhile and it's pretty excellent but I definitely need a non stick pan as it did that same horrible sticking you are showing in this video.I can't wait to try the french toast with this.

      I've tried the chickpea omelette too. It's very good. My version of the Just Egg is a bit different than his (and on my channel). I just tried it a new way this week because someone said allowing it to ferment is a good option.
