Made this today, bought the chinese eggplant in Oriental Supermarket (in The Netherlands). Made it with chicken..have to practice my cutting skills, but very very very happy with how this dish turned out..everybody loved it....Thank you chef..and translators..
this advice might be too late, but the Chinese kitchen stove fire are way higher then the stove we use in NA, so what fire level he said in vedio u might wanna add up one level or even more

The way you slice the eggplant is exactly how we slice radish in Bavaria (in the south of Germany). We drizzle salt between the slices, let it sit for a while and enjoy it as a kind of pickle. Your eggplant dish looks beautiful. Next time I can find some long Asian eggplants on the market,I'll give it a try.
I had trouble getting the shape to come out, but this was really quite delicious. I swapped bacon for the plain old pork belly because that's what I had, but it was also good that way. Thanks for all your hard work, friend.
@@noob19087 The way Chef Wang uses this word, i believe he is speaking to us, from a position that he is the teacher/master. It makes sense when translating to english to use "students" or "apprentices". However, from a social perspective, this is a little odd to Americans (I'm American, can only speak to the culture here) I feel "friends" is a good way to translate 同學們, sensitive to cultural norms and also conveying the original meaning. If I had to translate it, I would say, "Everyone at home" or "When you are making this dish," however this is an immense grammar change and would be extra work for the translators. Hopefully this is a more thorough explanation for anybody reading the comment thread. Source: My parents emigrated Taiwan in the 90s, birthed three miserable babies... I was the eldest, and so I translated everything from school documents to divorce papers :)
He makes it look so easy but when I tried it, the first eggplant broke into several pieces. I succeeded on second one. Lesson of the day, buy more than 2 eggplants.
My husband is a chef and I am not impressed easily, but this chef is uniquely good! Great skills! It seems to love the kitchen and he cook with love! Great still keep cooking!

我当时在买菜正好看到王师傅的视频,我就买了两根茄子,切成那样其实不难,只要有耐心就行。用两根筷子一前一后把茄子夹在中间直直的切下去就行。我用的是哪种又粗又长的油炸用筷子,如果筷子不够粗就需要两组每组四根用橡皮筋捆一起。
我用的料头是超市买的20%肥肉的肉末,榨菜末,大蒜末,和黄灯笼椒粒。超级好吃。
我用了泡野山椒,很不错
刚哥终于又回到那个专业的厨房,教着大家学不来的菜,倒着大家耗不起的宽油!!!!哈哈哈哈哈哈哈哈哈哈哈哈。。

中国厨师的刀工世界第一!我一直搞不懂那么大的笨重的刀为什么能切得那么精细。日本厨师切不同的东西经常要换刀,中国厨师一把刀全部搞定,真牛👍
茄子的切法我尽量学,宽油省掉直接微波炉蒸熟后加酱汁算了……😬
在中廚同樣形狀的刀子也是有分幾種的專門用來切菜片薄的片刀、除了剁骨頭什麼都能做的全能桑刀還有專門剁硬物(排骨等有骨頭的食材)比較厚重的剁刀
But除了剁骨頭之外在處理大部分食材的時侯往往一把桑刀就可以行天下了😁
如果不是像餐厅一样高要求的话,一把标准的家用中式菜刀,可切可剁可砍可削可敲可拍,样样都行,家里做饭足够了。😂@@平安-y5f

Firm Tofu can be used to replace pork.
这道菜没有想象的难,我第一次做就很成功,尽管我做菜经验不是很多。切茄子的时候刀可以前后稍微倾斜一下,这样会避免彻底把茄子切断,也不需要放个筷子在旁边。不知道的人会感觉你的刀工好厉害。
