Btw….the dishes you have tried in Penang like claypot rice & hokkien mee is better in KL, the nasi kandar is better at Restoran Nasi Kandar Line Clear at 166/177 Penang Road, or Deens Maju Nasi Kandar..at 170 Jalan Gurdwara…. Nasi Kandar must be drenched in all the different curries to get maximum flavour… Also try Char Kway Teow, Penang Laksa, Chendol, Prawn Noodle soup, Rojak, Fried Oyster Omelette while in Penang… And Penang is a durian heaven with many plantations up in hills….but the durian season is at its tail end… ask for Kapri, Red Prawns (D175) if they still have…

The spicy sauce for the Fujien fried noodle is called Sambai ..similar to Nam prik kapi...but blended! Pg food like Fried koay teow is like Phad Thai.. And a few Nyonya dishes also similar to that of Southern Thailand.

for the fried chicken, frying oil shall not be replaced.. just add new oil to existing used oil.. but we need to always take out all the debris before adding new oil, to avoid burnt smelling.. that's why the chicken is flavored to the bone

Fried Fujian / Hokkien noodle (it is referring to the style of cooking of various chinese style like cantonese, hokkien and etc). The Singapore version is without the dark soya sauce.
The Singapore version without the dark soya sauce is called Hokkien Fried Prawn Noodles, fried with yellow noodles and vermicelli with special prawn and pork bone stock...it used to be called Rochor Mee as it was a staple of all the chinese coolies who worked near the Rochor Canal area in Singapore. The dark version found in Malaysia - Hokkkien Mee - especially KL is more like a common Fujian or Hokkien dish. My mom used to cook them frequently. Every Hokkien family knows this recipe. And yes, it very common in Singapore too.

Most Malaysian Chinese dishes rarely have an extra spicy option. Maybe fried kuay teow yes, but in general they serve the chilli on the side for you to customise on your own. You can request for the bird's eye chili (we call it cili padi) which is basically candy for you 🤣
Joel! We are in Penang now. Going into noodle overload! How long are you in Penang? A few more weeks for us then heading to Bangkok for a week, before heading to Chiang Mai for a couple of months.

Fried Fujian / Hokkien noodle (it is referring to the style of cooking of various chinese style like cantonese, hokkien and etc). The Singapore version is without the dark soya sauce.
The Singapore version without the dark soya sauce is called Hokkien Fried Prawn Noodles, fried with yellow noodles and vermicelli with special prawn and pork bone stock...it used to be called Rochor Mee as it was a staple of all the chinese coolies who worked near the Rochor Canal area in Singapore.
The dark version found in Malaysia - Hokkkien Mee - especially KL is more like a common Fujian or Hokkien dish. My mom used to cook them frequently. Every Hokkien family knows this recipe. And yes, it very common in Singapore too.

Most Malaysian Chinese dishes rarely have an extra spicy option. Maybe fried kuay teow yes, but in general they serve the chilli on the side for you to customise on your own. You can request for the bird's eye chili (we call it cili padi) which is basically candy for you 🤣

Joel! We are in Penang now. Going into noodle overload! How long are you in Penang? A few more weeks for us then heading to Bangkok for a week, before heading to Chiang Mai for a couple of months.

When I think of Hokkien Mee, I don't think of it as Chinese-influenced but a proper Malaysian Chinese food. I am just curious if there are some versions of it in China itself? :) What? Got Bak Kut Teh in Hat Yai? WOW! OK.
We don't call the dish Fujian Mee. It's known as Hokkien Mee. It's a Malaysian original. You don't get this in Fujian.
