Crispy Chicken Chop or Crispy Chicken Cutlet as it is also commonly known are usually made with chicken breast meat. However, breast meat tends to be a little on the dry side. Hence, chicken legs are my meat of choice for this dish. They are more tender and juicier. For the coating, I mix equal amounts of biscuit crumbs and Japanese panko.

How is the chicken cooked from inside if it's just fried for 2 minutes. If we fry longer the outside breaded crumbs will burn as the heat/flame is high.
It will be cooked inside. You just have to try it.
What type of biscuit crumbs? Is it cream crackers?
You can also use cream crackers. I use Meiji crackers

What can be used instead of rice wine?
You can omit it if you can't get it. Rice wine is optional.
Black or white pepper?
White but black pepper is also fine. Depends on your preference.
May i know the weight of the chicken?
Not sure whats the weight of 5 boneless chicken legs

250grams per person. You could keep the marinade quantity the same up to about 3lbs (1.4kg approx)
