    Something I generally like to do before using aubergine: throw a bunch of salt on the slices, wait for a few minutes and wash off the juices that came out - that takes care of the bitterness that you sometimes get with aubergines.
    Also, when buying the aubergines, try to go for the male ones with the oval dimple on the bottom, as they tend to have much fewer seeds in them.

      @@jancril7505 why? I am from Eritrea East Africa and we do put salt in the eggplant it’s softened up and get rid of the bitterness

    tried it this evening, all family loved it. Quantities suit 4 persons. Depending on your oven, you may want to use 180°C just to make sure the mozzarella doesnot turn too brown and hard. A natural dish suitable for cold autumn of winter evening meal. And yes, he is cooking ' sooo goooddd' ...and us with him ;) Grazie Gennaro , capo al forno !

      I"d be careful when using the parmesan, lots of people don't realise that it isn't actually vegetarian friendly, because to make it they use calf rennet, look out for parmesan style hard cheese because that should mean that it's veggie friendly! It's also easy to find online :)

      Elliott Drury I know that lots of cheeses are made with meat rennet but you can find veggie cheeses even in just regular supermarkets but it is important to check

      It's cheese wrapped around a Mobile/Cell phone...weird ingredient eh?
      ..The 'hoped' tomatoes sound a bit weird too..I can only 'hope' that my tomatoes are really tomatoes!

    My favourite Italian (Roman) has always been Julius Caeser but now its Gennaro, I love how he cooks and yes, I know Gennaro isn't Roman but he's still my favourite Italian. FAB recipe.

    I LOVE the fact that you're not deep-frying the eggplant!! Also, my family always layered mozzarella in between each layer of eggplant, but I much prefer your way of doing it. Gennaro, sei un grande! :D

      But deep frying them is so good! They become like sponges that absorb all the flavors from the tomato sauce.
