I grew up with the opportunity to live on a daily basis in an Italian community in the Bronx. I have sampled, tasted, eaten most of the Italian and Italian American Classics and nothing is better than Eggplant Parm. Bravo!!! Bellissimo!!!

Pro tip from someone who's cooked in many Italian restaurants: Use a deli slicer to cut the eggplant into slices, that way they wont all be different sizes and you wont cut yourself because of the oddly shaped fruit. Love the series Matty! #905

@@raducimpian5931 Well the tip was for matty, the guy that owns multiple restaurants. But for the home cook, you can take eggplant to the deli at the grocery store and they'll cut it for you 👍

@@lanthid3141as someone who worked in a deli, they absolutely will not because that’s cross contamination. The deli has meat slicers and cheese slicers that’s it.

Related easy recipe: cut eggplant .25" width, thin out some mayo with olive oil and maybe a little lemon or vinegar, lightly smear/dunk eggplant, coat with Italian flavored breadcrumbs, or panko with Italian seasoning (not a bad thing to add some cheap powdered parmesan to either) then lay out on a sheet pan and bake at a fairly high temp till crispy. Dip in marinara, or even ketchup.

The video starts halfway through the process.....i understand the FEB steps but is the eggplant precooked...how thick/thin, peeled or not....there are variations to the process would have liked the full story. If anyone can help with that feel free. I've made eggplant parm before and it was slightly different....they were definitely thicker slices, unpeeled, and precooked...I fried mine in a bit of oil on both sides first before the flour, egg, breading. I love anything with eggplant and especially eggplant parm. Nightshades are delicious.
