IfI may, as a Sicilian I elevate it by seasoning the breadcrumbs with pecorino and mixed herbs (oregano thyme rosemary).. trust me, much more flavourful!!

That eggplant has become a favourite of mine and my friends/family, it's so easy and delicious and works with many other dishes outside of pasta/spaghetti. Absolutely would recommend for others to try it out!

Tried this last night and it was delicious….only thing I would change,is rinse the salt off the aubergine and blot it dry with kitchen roll otherwise the dish is too salty 🥰

In India we have a different recipe almost same way... Marination salt, red chilli powder, turmeric, mustard oil and lime... Outer covering is semi thick batter of chick pea flour water salt carom seeds and small pinc baking soda... Yummmm

Should taste the gi tagged udupi matti gulla...it is the king of aubergine......i think indian baingan bharta n chapati is the healthiest...also with matti gulla we roast them on coals peel and mash add pounded tamarind chilli asafoetida and coconut oil and salt to make a kind of .buttery creation that goes well with anything...
