    He was great with explanation. My mothers Americanized version is the same except flour, eggs, breadcrumbs
    You don’t need the mozzarella but use the pecorino
    The southern part of Italy makes a fantastic eggplant parmigiana
    It’s worth noting that the parmigiana is cheese from Parma ie. Pecorino
    Not needed is the mozzarella!!!

      Parmigiano and pecorino are different. It’s called Melanzane Alla Parmigiana because it uses Parmigiana cheese. Pecorino is made from goats milk.
