      😅I’m a Virgin to this Vegan 🥗 thang… One week exactly today “Cold Turkey”🦃 😂stopped everything…red meat, 🐥 😂chicken, and dairy products. 😮KwaZy, but ONLY one week, and I’ve stopped meds for my Multiple Sclerosis. 💪Once upon a time, I was training for Emerald Cup in the “Natural Bikini”👙 level in Las Vegas with Larissa Reis when “Gold’s Gym” was still alive.

    In case you didn't know: 🗣THIS IS THE BEST VEGAN CHANNEL on youtube. Hands down. Your recipes are amazing - and I'm 9 years vegan, and you're showing me "moves" in the kitchen I never thought of (shaving tofu? Wow - Putting the tofu mixture in the oven - genius). Also, I love the way future Derek turned it over to past Derek - brilliant. Great video - thank you for sharing!

    An interesting diet/digestion thing that a lot of people don't know about: When your mouth tastes significant sweet (like as in sugar, sweeter fruits, honey, etc) it shuts off the production of ptyalin enzyme in your mouth which is the first digestive process for starches. What this does is ultimately it makes it harder to digest the starches. This is ok if you're not mixing it with concentrated proteins, but in this case you are.
    Another digestion/diet tip: Concentrated proteins primarily digest in the acid of the stomach. Eating lots of other foods--especially carbs in the same meal as concentrated proteins, will dilute the stomach acid and make it harder to fully and properly digest the proteins. Always best to eat proteins first, wait a bit and then eat whatever else. Carbs, veggies, fruits, etc digest further down past the stomach anyways. A meal can become very acid forming if not mixed properly. Thankfully veggies proteins are less acid forming than flesh based, because there is less sulfur based amino acids, but even then, it can still put a bit of unnecessary digestive strain on the system.
    I had some health issues in my teens and was basically forced to research and experiment a ton with all this stuff. (btw, I eat mostly plant based, but with a little vegetarian supplementation, and very occasional and very picky pescetarian supplementation [talking like a can of sardines once a month or so]. My diet probably comes closest to what Tom Brady eats and recommends-- i.e. alkaline forming and low inflammation).

    Crystal is right…you put a lot of love into your meals, Derek! The chickpea salad sandwiches looked awesome, and you’ve put me in the mood for tacos, looking so tasty, and so colourful…I think I have one of those taco kits in my cupboard, too! Yay!
    Those tiny, little room settings are so cute..I watch YT videos of people making those sometimes.

    Let me give you a tip for the beans i am mexican born and raised, you can fried some soyrizo with onions, and then mix it with the beans… and then refry everything 🤤🤤🤤🤤

    If you stand the taco shells on the curved edges (open side facing down), they won't collapse when you bake them. Don't lay them on their sides like that.

    Derick and Christal you just Made my early Sunday morning with your video. You guys are so full of energy and so positive in life. Plus you are from the first plantbased eaters that I started to follow even if I am 68 but still young in my mind and body. Just been for hand surgery on Monday 🤞 hope the results will be good it's always the aftercare thats important. Nice day at that Falls sure that water are cold but tast very nice.     I put my hard taco shells directly on the oven rack upside down so they hang on the rack. That helps to keep them from closing up. Can’t wait to try this recipe!

    Probably going to pass on the taco hack at the end 🤣😉but here's one! Never tried it, but my friend says when he makes nachos he first puts down a tortilla on the plate. That way you don't have to scrape the last of it off the plate with tiny broken chips. Just wrap it up, and now you have a burrito!

    Lately I have been making my taco meat with chopped soaked walnuts and chopped mushrooms then seasoned with cumin, paprika, garlic powder, onion powder, cayenne, salt and pepper.

    When I make tacos, I put the taco shells at an angle, one inside the other to keep them “propped” open. Don’t leave them inside one another like they come out of the box. OR you can take some foil pieces, ball them up and stick them inside the shells to keep them open while you heat them. 😊🌮

    I eat chickpea salad every day! I do a simple version... I use dried chickpeas with a quick soak for 60 minutes, drain then about 45 minutes summer. When they are nice and soft they are really easy to mash!
    Then just some chopped onions, kale, raisins and vegan mayo!!
    Of course you can add lots of other stuff like pickles, grapes, etc... but that's my quick and easy go to!!
    Awesome with some everything bagel seasoning and sliced tomatoes on whole grain bread!!

    Love your videos and channel! If you like Mexican you should try nopales (cactus) I like to get the jarred ones drain them then and sauté with onion, poblano pepper, Serrano for heat, tomato and finish with some cilantro. I usually make some pinto beans or black beans in my instant pot and make refried sauce well as Spanish rice it’s bomb 💣

    Bake the shells by placing them upside down on the metal taco rack you got there. They soften and open up before they crisp and then you just flip ‘em over on the same rack to fill them.

    Mock tuna was excellent! I added miso mayonnaise cuz that's what I had. Also chopped up some tomato and spinach and it was to die for! Thanks for the recipe :-) ❤️⭐

    Since you are only toasting the taco shells a few minutes, you can use the small piece of cardboard (that usually comes in the box with the shells) in the last taco shell to prop it up, then lightly nest the rest of the shells together. Tacos are one of my reasons for living! This recipe looks so good. ❤️🌮❤️

      Even if you're toasting them for a little longer, the cardboard won't catch fire unless the oven is around 450 degrees or higher

      Or you can use that metal taco rack to toast them upside down and let them crisp up and open up a little, then flip them in the same rack to fill them. As if it was made for that.

    Try wrapping small soft shell tacos around the hard shell ones. Give a soft crunch and they don’t fall apart.

    I discovered Sheese about 5 years ago, and I have to say that to this day I find it to be one of, if not the most realistic tasting vegan cheese ever. (They are getting better and better these days, but 5 years ago it felt like the biggest score ever!!! 😊).

    The brand Crystal asked about is pretty good! We've had it in our grocery stores for a couple years now in Montreal. My favorite of theirs is the feta cheese. It's awesome in a salad.

    Love the recipe ideas Derek, I've never thought of using grated tofu before, as firm tofu is harder to find here, and is a bit more expensive, but I'll seek it out and give it a go.
    As for the hard taco shells, I put them upside down (as in all the filling would fall out if they weren't empty) on the baking tray, and it seems to stop them closing up the way they do when they're on their sides.

    For a vegan 'tuna mayo' in a bowl put chickpeas (mashed with a fork) chopped cucumber, sliced Olives, vegan mayo and mix together. Tastes so much like it. Great in a sandwich or served on a slice of sourdough toast.

    I bake them standing up on the round sides. They do wobble around but they don’t close.
