  • Taco Tuesday! Today we’re recreating a favorite taco dish of mine. Anytime I’m in Austin, Texas, I always go to a restaurant called Bouldin Creek for their All-Day TACO PLATE, Zucchini Migas. Breakfast, lunch, or dinner, it hits the spot. Served with black beans, rice or potato, corn or flour tortillas, salsa, and the Migas! Delicious, filling, and fun.     This made enough for 4-5 people
    Zucchini MIGAS - ALL DAY ANYTIME
    • 2 - 3 Medium Zucchini / Courgette
    • ½ large Red Onion, Large dice
    • 2 blocks firm tofu
    • 2 Tablespoons Vegan Mayo
    • 2 tablespoons (home-made) Egg-spired Nutritional Yeast seasoning (turmeric, garlic, onion, pepper, black salt) • CHEF EXPLAINS Nutritio...
    • 2 - 3 Tablespoons Neutral flavored oil
    Chilies as desired
    THE BEST BLACK BEANS
    • 1 Cup dried Black Beans, rinse-washed and checked for stones
    • Soak for at least an hour or overnight is best in 2 - 3x the amount of water
    • Water
    • 1 jalapeno
    • ½ large Onion
    • 2 - 3 garlic cloves
    • Small handful of Cilantro/coriander
    • 3 Bay leaves
    DEEP RED SALSA
    • 5 - 6 Cascabel Dried chilies, stem removed, toasted & rehydrated
    • 2 medium tomatoes, pan toasted to blister skin
    • 2 garlic cloves, pan toasted
    • ¼ onion, pan toasted
    • ½ lime, juiced
    • Salt to taste
    Blend-chill-serve
    SPICY FRESH SALSA
    • 2 tomatoes, pan toasted to blister skin
    • 2 garlic cloves
    • 2 jalapenos, stem removed, seeds in optional
    • ¼ Onion, pan toasted
    • ½ lime juiced
    • 2 - 3 Large Sprigs Cilantro/Coriander
    • Salt to taste
    chilies for heat as desired
    Blend-chill-serve
    RED RICE
    • ¾ Coffee cup brown basmati rice, rinsed and washed
    • 1 full cup water
    • 1 Onion, diced
    • 1 Tablespoon Tomato paste
    • 1 Teaspoon Cumin
    • Pinch Oregano
    • Salt & Pepper
    Stir in ingredients. Bring to a slow boil, lower to simmer for 10-12 minutes until water is absorbed. Do not stir until done.

      @@FrettedFlipper I think it's much easier being vegan in Mexico than in the US.
      The tipical household in Mexico include way more legumes, fruits, vegetables, nuts, and seres.
      The average Mexican really doesn't eat meat as heavily as the average person in the USA.

    The entire meal is beautiful. The salsas are something I want to try. I made tacos using tempeh last night. They came out great! This channel has helped a lot with my transition from vegetarian to vegan. So many great ideas.

      I can relate a Lot to that. I actually do still eat meat but i try to eat Maximum once a week and want to eat a Lot more vegan in General and these recipies never failed to amaze me yet.
      One step towards No meat by a time, i'll reach there

      @@DerekSarnoChef😢 I can’t eat cilantro or spicy foods. If I sub the cilantro for parsley and do mild chiles will that work in this recipe?

    Yeah, cascabels are mild but have huge flavor. They're usually paired with chile de arbol for the kick. It's also great in stews.

    El Paso Texas gal here. I toast the rice in the oil first, then I add the tomato paste and onions. Learned it in the hood when I was much younger. Es possible que te gustaria.

      You can dry roast the rice in the pan, too. I've done it both ways. My favorites are brown jasmine or brown basmati. They are more fragrant than other rices. To me, anyway.

    Hi Derek, I listened to the interview you did with Rip Esselstyn last night, this being the episode when a prison cook asked for suggestions on what to cook for Meatless Mondays. It was a good coincidence to see this video the morning after, will definitely try your technique of cooking beans. Also loved your video on cooking for a meditation centre, having volunteered at one in a different tradition this year. Love the learning from your channel.

I’m a college student and I’ve just started cooking for myself and honestly as a vegetarian I had so much anxiety about what I was going to make every day.     You're like me, once I start cooking Mexican food, as hard as I try to keep it simple...Two hours later I end up having made guacamole, pico de gallo, rice, beans, veggies, chipotle vegan sour cream, tofu and every possible side dish. It's exhausting but I can't help myself! I need ALL that flavor! Thanks for inspiring me in my salsa game!

    Absolutely fascinating technique with searing whole blocks of tofu, the vegan mayo and spice on top, alongside vegetables, mixing them, adding chips, then roasting. Stoked to try this recipe!

    Looks wonderful! Especially love a different way of cooking beans and making salsas! The nutritional yeast blends are the bomb…made them all except the spicy one bc I’m a spice wimp. Making the tofu scramble or chunks with mayo and whichever blend is such an easy way to add to different flavors of the meal. Leftovers are just as delicious. Apppreciate you showing different methods of creating vegan meals! Thanks Derek! 🙏🏻🫶🏻✌🏻xx

    I’m just going to be blunt here. Your videos are full of information to learn from! I’ve learned how to do the Lions mane in the frying pan and then bake it to have it taste like a steak. But what I want to be blunt about is how handsome you are and how sweet and beautiful your puppy is❣️🙏😎

    Hi, Derek. Found a bean video! Yay! I start my Spanish Rice by browning the rice in a little bit of oil until pinkish. Then, I add boiling water, tomato paste or sauce, and spices. Toasting causes the rice kernels to burst kinda when the water is added. One just has to get the moisture right to not create a too-soft outcome.

    That looks tasty!! I absolutely LOVE zucchini so that looks especially amazing and I definitely will be giving it a go... The zucchini mixture reminds me of when I used to make frittata's. This would be a great alternative. If I had leftovers from this dish I would add fried potatoes to the zucchini mixture and top with your mild salsa recipe. As always thanks for sharing your creativity!

    My big boy black lab is always in the kitchen when im cooking, waiting for the non dairy cheese and greek yogurt to "accidentally " fall on the floor. while i enjoy my meat free meal he enjoys his beef marrow bone.

    Beans are my favorite food and Bouldin Creeks beans are amazing! I’ve been trying to make them at home for a decade. I’ve taken friends to help me dissect the seasoning flavors and I’ve yet to duplicate them.
    Soy London Fog and a Slackers Banquet w/side salad is the perfect meal.

    I lived in Austin too (for about 4 years) and Bouldin Creek had great food. Magnolia Café and Guero's Taco Bar also had some good vegan offerings...this looks delish...hugs to Frankie! 💜

    Love the flavours showcased here!!!! Never thought to make a tofu scramble with zucchini but, it is a nice way to pad out a meal and get vegetable nutrition in. Tortilla chips crushed in - great taste and texture added. With the rich, red salsas, it’s a beautiful meal!
    Hahaha, I like to see Frankie collect her tofu tax..😂 and she LOVES the affection lavished on her, doesn’t she? She seems like a very happy dog!❤. All the best to you, Derek! Thanks for recipe idea!

    I love your videos, my favorite part of your videos are when you click the tongs, and Frankie's voice. I used to buy masa harina and make my own tortillas, I learned I had to add some white flour to the masa if I wanted to be able to roll them. When I made them with all masa, they were stiff, I couldn't fold them. They still tasted good. Thank you for all of your videos, you're my favorite vegan chef. And thank you for posting the recipes with the videos. Much appreciated..

    I lived in Austin before, loved it. I am from London. A bit trippy to see someone on a similar journey! Trying to learn this food so I can have it again. These are great recipes. You just don't get it like that much in the UK.

    Wow. Love all your videos but especially the latest ones.
    This one I just had for dinner but unfortunately I had to make just a couple of adjustments as, yes, you wouldn’t believe it I really don’t like nutritional yeast!!! and I had some chilli beens made.

    I had no idea you and your brother are Wicked Kitchen!! I buy your frozen meals every so often and love them, and love they're usually higher in calories and protein than other meals.

    The cumin was a must for my husband. For years our house always smelled of cumin. Now I do most of the cooking and don’t use as much cumin. But these tacos look delicious. As well as the salsa. Thanks for sharing.

    Derek, I had to make these migas. Nothing is lacking in these recipes. My mom was from New Mexico and I learned from her. She cooked with meat, pork, beef, chicken, sometimes elk. Basically whatever they had. This was in the 1940s. It’s great to find alternatives to meat. She would tell you “Mijo, es bueno alimentar tu alma mexicana”. ❤
