- Taco Tuesday! Today we’re recreating a favorite taco dish of mine. Anytime I’m in Austin, Texas, I always go to a restaurant called Bouldin Creek for their All-Day TACO PLATE, Zucchini Migas. Breakfast, lunch, or dinner, it hits the spot. Served with black beans, rice or potato, corn or flour tortillas, salsa, and the Migas! Delicious, filling, and fun. A great way to enjoy plant-based and… TACOS.

Hi Derek,
My wife and I watch your videos as often as we can. We come from a community where we don't always feel like we fit in and watching your videos reminds us to be our best selves and to spread kindness. When we watch your videos we feel inspired and like we are a part of a community that we believe in and belong to. Thank you for doing what you do and for spreading the message of kindness. There is so much negativity in this world and you are truly a light. Keep on keepin' on! We can't wait to see what you do next.

As a full blooded Mexican, it’s always an honor to see anyone cook Mexican cuisine in any way, shape or form. Specially if that someone is renowned chef like Master Sarno. Salud!!!
Hope you enjoyed and was up to standards. Thank you for watching
vegan mexican here 🖐 approving all of these. it looks de-li-cious 🤤 thank you, chef D (and frankie 😍)
Amazing that you are vegan in such a meat crazy place🙏 what's your fav vegan mexican dish? I had some delish vegan food in oaxaca
@@FrettedFlipper I think it's much easier being vegan in Mexico than in the US.
The tipical household in Mexico include way more legumes, fruits, vegetables, nuts, and seres.
The average Mexican really doesn't eat meat as heavily as the average person in the USA.
The entire meal is beautiful. The salsas are something I want to try. I made tacos using tempeh last night. They came out great! This channel has helped a lot with my transition from vegetarian to vegan. So many great ideas.
Amazing! Thanks for watching, hot mess
@@DerekSarnoChef thank YOU for sharing with us.
I can relate a Lot to that. I actually do still eat meat but i try to eat Maximum once a week and want to eat a Lot more vegan in General and these recipies never failed to amaze me yet.
One step towards No meat by a time, i'll reach there
@@maikjungenblut8787Just watch Dominion and that’ll be all you need to stop abusing animals for food.
@@DerekSarnoChef😢 I can’t eat cilantro or spicy foods. If I sub the cilantro for parsley and do mild chiles will that work in this recipe?
I absolutely love to watch you cook, I made a number of your recipes and they are all delicious! Thank you for all you do for us new vegans! Three years now, I have learned so much and feel 100% better my husband is 76 and I am 75 and don’t take any prescription drugs any more 👏🏻🙏🏻❤️❤️
I love that there are between three and five recipes in every video.
The presentation and production keeps levelling up with each episode. Bravo
Agreed. The food-closeup-spin is a very professional touch imo, nicely done!
TRUTH!
Imagine being Derek's friend, and then getting invited over for dinner. 😃
Can confirm, it's the absolute best 🙏 Lucky me to have such a talented, inspirational friend, not only for his food skills.
@@theplantbasedbassist Sure! Rub it in. 🤣 You lucky son of a gun you. 👍
I wish I was Frankie!
Hi Derek,
Your channel is an island of calm and positivity in a sea of drama and toxicity. I'm generally vegetarian, but have been cooking more and more vegan just as a side effect of wanting to chill out watching your channel. Thank you
I am really enjoying the voiceover for Frankie
Isn’t she the best
What voice over?
She is...and love her English accent!!❤@DerekSarnoChef
She has a wonderful voice.
Me too!
Yeah, cascabels are mild but have huge flavor. They're usually paired with chile de arbol for the kick. It's also great in stews.
El Paso Texas gal here. I toast the rice in the oil first, then I add the tomato paste and onions. Learned it in the hood when I was much younger. Es possible que te gustaria.
@@locutia7 do you take the rice out of the oil or just add the tomato paste and onion there?
You can dry roast the rice in the pan, too. I've done it both ways. My favorites are brown jasmine or brown basmati. They are more fragrant than other rices. To me, anyway.
Hey Buddy! Loving the new look! We miss you in Austin. Think I’ll go to Bouldin now for lunch. Much love at’cha!
Yes!!🙌🏽
Hi Derek, I listened to the interview you did with Rip Esselstyn last night, this being the episode when a prison cook asked for suggestions on what to cook for Meatless Mondays. It was a good coincidence to see this video the morning after, will definitely try your technique of cooking beans. Also loved your video on cooking for a meditation centre, having volunteered at one in a different tradition this year. Love the learning from your channel.
Just got your book. Vegan 1 year. Loving this way of cooking. Won’t go back. We have a 4 year old black lab named Sir. Remington who now loves tofu! Thanks for the inspiration.
My Aussie also loves tofu. I haven't completely converted him to vegan but getting close
Thank you. I often think, what would I cook for sarno then I make an amazing dinner. My beautiful Biba sends massive hugs to Frankie
That meal looks incredibly delicious! I love how you pay the toll by giving Frankie the ends of the tofu. ❤
Hey Derek!
I see a lot of love letters in the comments, I’ll throw in one more. I’m a college student and I’ve just started cooking for myself and honestly as a vegetarian I had so much anxiety about what I was going to make every day. After finding your channel, I have been able to whip something together with confidence and have been able to start crafting my own dishes using the different techniques I’ve seen throughout your videos. Couldn’t be more thankful 🥰
Just want to say thanks for all of the inspirational content. Your recipes are always scrumptious, and I have tried many! You are my tofu/mushroom hero! Please keep putting it out there... your story, your vibe and your recipes are so freaking good! I made this tonight (only one salsa and served it over rice and tomorrow it will be tacos) delicious as always... thanks for your continuous contributions to expand the plant based community & huge hugs to Miss America...you make a great team!
You're like me, once I start cooking Mexican food, as hard as I try to keep it simple...Two hours later I end up having made guacamole, pico de gallo, rice, beans, veggies, chipotle vegan sour cream, tofu and every possible side dish. It's exhausting but I can't help myself! I need ALL that flavor! Thanks for inspiring me in my salsa game!
Stirring the tortilla chips in was the MVP. Excellent video shooting / editing.
I just made cilantro lime rice last night and was looking for a black bean recipe. Thanks for coming in clutch, Derek! Kisses for Frankie! 😘💜
I never thought of putting a whole onion in with the beans. What a great idea! Looks delicious!!! As usual, my best to You and Frankie!
Thank you! You too!
Absolutely fascinating technique with searing whole blocks of tofu, the vegan mayo and spice on top, alongside vegetables, mixing them, adding chips, then roasting. Stoked to try this recipe!
I’m not vegetarian or vegan, but I want to find more ways to cook veggies. If they become main dishes, I’m here for it. You are inspiring. Your dog is gorgeous, too!
Mmmm. It’s the music, the natural light, your kitchen, your amazing hair and skin, The beautiful healthy food and you enjoying your creation, the dog from Bridgerton, just everything about this I love😂❤ Can’t click subscribe fast enough! Thank you kind sir. Many more blessings to you.❤
Bravo! I❤️ Mexican food! Frankie has a fantastic sense of humor. Does she know she's your alter-ego?
She knows she’s the queen of England
Bouldin Creek Café is fire!!
I have been dreaming about their vegan grilled cheese with basil for the last few days 😭😆
Looks wonderful! Especially love a different way of cooking beans and making salsas! The nutritional yeast blends are the bomb…made them all except the spicy one bc I’m a spice wimp. Making the tofu scramble or chunks with mayo and whichever blend is such an easy way to add to different flavors of the meal. Leftovers are just as delicious. Apppreciate you showing different methods of creating vegan meals! Thanks Derek! 🙏🏻🫶🏻✌🏻xx
Thanks for watching
Yum!!!! I think Cilantro elevates any latin food, so delish! This meal is definitely on my short list to make. Next to chickpeas black beans are my fave. Your Spanish rice recipe looks and sounds amazing! Another masterpiece, thank you Chef! Hi sweet Frankie!❤🌱💚
Those BBeans are spot on 🔥🤌
@@DerekSarnoChef making them today!🫘🌶
More Mexican Food I’m Starving! Looks Amazing, thank you!
Can’t wait to try this one! 😊
Omg this looks soooo good! Thank you for your content! ✌️🌱
Here for it!
Bring on the Anytime tacos😊
We just adore how much you love your meals, both preparing them and eating them - add Frankie in there, and we're hooked!!! She was loving that play... her face said " iz a fierce wolfie, c'mon daddy-I git uz, raaah!!" As always, an absolute pleasure to watch!! Thanks for the smiles!
That looks super delicious! I'm heading to the kitchen now to make spicy salsa! Dinner plan is in the works for tonight! Thanks Derek!! Love to Frankie 💙
Thanks for watching
Austin will always have a special place in my heart!
Sending love to you and Frankie from Corpus Christi!
Wow! This looks Incredible! Who would have thought tofu & zucchini (courgette) could be this delicious!
You might just change my life. I've been vegetarian for a long time, but I am going vegan, and your recipes are so inspiring. I didn't realize how stuck in a rut I've been with my meal planning, but you make vegan so appealing and easy. A million thanks.
OMG - when you cook it’s like watching the creation of a symphony ❣️❣️ These gourmet tacos look irresistible - can’t wait to give this recipe a whirl.
The sidebar comments of Frankie are hilarious. Your video creations are awesome. Thank you for helping to create greater peace and harmony on our sweet planet.
Love that you call out multiple names for veggies and such. Great cooking!
Frankie in the background while you're eating your meal, especially toward the end when it's just her eyes showing. Waiting. So. Patiently.
I’m just going to be blunt here. Your videos are full of information to learn from! I’ve learned how to do the Lions mane in the frying pan and then bake it to have it taste like a steak. But what I want to be blunt about is how handsome you are and how sweet and beautiful your puppy is❣️🙏😎

I love your channel ! ❤️I can’t wait to try the sandwich with chickpeas ! I love being vegan ! I can’t believe at 58 Iam back to triathalons and in a state of well being . Truly at peace with myself and those around me . I love your compassion for animals and people ! If only the world had more people like you in it ! Peace and joy !❤️
this is amazing; you are showing the right way to eat it. Frankie we will keep supporting him so that you keep eating well and having a roof to sleep.
I need these 😭. Vegan 8 years and I can’t cook like you do but I still enjoy watching in awe.
As the great Chef Remy the Rat says, anyone can cook
I cook my black beans like this. I always cook so much that I can eat them 5 days in a row. Absolutely love black beans
Hi, Derek. Found a bean video! Yay! I start my Spanish Rice by browning the rice in a little bit of oil until pinkish. Then, I add boiling water, tomato paste or sauce, and spices. Toasting causes the rice kernels to burst kinda when the water is added. One just has to get the moisture right to not create a too-soft outcome.
literally just got back from bouldin creek! perfect timing for this video lol 💛
Why do I always want to applaud after your videos?
Bravo! It might be the flamingo dance castanet action you do with the tongs.
I just LOVE your channel! You only popped up on my RUclips feed recently, randomly. So glad you did! Love that you share multiple recipes each time and you make them so do-able too, professional yet fun. I might have to binge watch a few episodes now. One was linked with your backstory, that one will have to be next when I have time. ❤you & your woofer, white light to you both. Ps-of course I subscribed, also shared you with some like minded friends too. ☮️🙂
Everything looks mouthwatering! And absolutely loving seeing you with Frankie!
I'm a simple lady. I see a vegan video, I watch, and I like.
That looks tasty!! I absolutely LOVE zucchini so that looks especially amazing and I definitely will be giving it a go... The zucchini mixture reminds me of when I used to make frittata's. This would be a great alternative. If I had leftovers from this dish I would add fried potatoes to the zucchini mixture and top with your mild salsa recipe. As always thanks for sharing your creativity!
It's so good!
@@DerekSarnoChef No doubt!
You have been absolutely nailing it lately Derek! All your dishes are so beautiful. You have become my biggest cooking inspiration. Please keep up the good work 😊
Wow, thank you!
Yummm, that zucchini migas looks amazing! Can't wait to making them tonight (without oil for my heart's sake). I'm on a surfing vacation at a beach right now, and this Mexican meal will definitely complement the beauty I am surrounded by this fine summer day!
Bouldin Creek Cafe was also one of my old haunts back in the day. This was a nice reminder that quick but delicious meals can have nostalgic roots.
I love how at the end of each video we watch him eat and go “mmm so freaking good” 😂🤣 I’m so jealous, I want to eat some too
Stumbled on your channel and I’m glad I did! Filled with vegan recipes that look so tasty. Can’t wait to try them out
My big boy black lab is always in the kitchen when im cooking, waiting for the non dairy cheese and greek yogurt to "accidentally " fall on the floor. while i enjoy my meat free meal he enjoys his beef marrow bone.
Beans are my favorite food and Bouldin Creeks beans are amazing! I’ve been trying to make them at home for a decade. I’ve taken friends to help me dissect the seasoning flavors and I’ve yet to duplicate them.
Soy London Fog and a Slackers Banquet w/side salad is the perfect meal.
I lived in Austin too (for about 4 years) and Bouldin Creek had great food. Magnolia Café and Guero's Taco Bar also had some good vegan offerings...this looks delish...hugs to Frankie! 💜
something about this video was just so beautifully rendered... everything was so wonderfully satisfying to watch. thank you! true artisan
Tomatoes are ripening on the vine, Derek drops in genius salsa recipe, life is good
Hot salsa!
Love the flavours showcased here!!!! Never thought to make a tofu scramble with zucchini but, it is a nice way to pad out a meal and get vegetable nutrition in. Tortilla chips crushed in - great taste and texture added. With the rich, red salsas, it’s a beautiful meal!
Hahaha, I like to see Frankie collect her tofu tax..😂 and she LOVES the affection lavished on her, doesn’t she? She seems like a very happy dog!❤. All the best to you, Derek! Thanks for recipe idea!
Hi Derek, thank you for your video. Ooooh the sound of the crunch and sauce❤with Frankie waiting for a morsel. What a delish combo of everything. Loved the happy music too. Somehow my mushrooms on toast didn't seem exciting anymore😢. Ill be making this recipe tomorrow. Gale x
Thanks Gale
Full from lunch, I thought it safe to watch the new drop. Nope. Now I'm hungry again. 🤦♀what is this Sorcery!?? Let us know when we can do an 80's music request for your next video - you tell us what you're gonna make and we will try to match it with a song. Ms. Frankie can determine the winner. I feel like she's produced some serious mixed tapes in her day.
I'm drooling worse than the dog!
Oh my goodness, what a feast!! Looks incredibly tempting and the flavors must be something else, ooohh those beans and rice!!! The salsa!! Just saying WOW🥰
Watching this was like torture, my mouth was literally watering. Tex-Mex is my absolute favorite but I've struggled to find good vegan recipes. All of this looks amazing, thank you!! (I wish I was your neighbor!)
I love your videos, my favorite part of your videos are when you click the tongs, and Frankie's voice. I used to buy masa harina and make my own tortillas, I learned I had to add some white flour to the masa if I wanted to be able to roll them. When I made them with all masa, they were stiff, I couldn't fold them. They still tasted good. Thank you for all of your videos, you're my favorite vegan chef. And thank you for posting the recipes with the videos. Much appreciated..
Just love to watch you cook all the way from South Africa! Again..mostly adore your dog❤.
Wow, wow, WOW! That looks so sumptuous. Going to have to try this one ASAP 😊 Thanks so much, Derek.
My favourites, black beans, salsa, rice, tacos!! Thank you so much for these recipes. 💜
The food is wonderful and the music is great. Love that pup too!
I ate it bold and creek many times when I lived in austin. I am looking forward to making these recipes. Your take on food always makes my mouth water😊
Bouldin Creek😂
I made this for dinner last night ! It was delicious ! As a vegan chef myself I love how simple your recipes are, a nice break from my usual 20 hour seitan recipes
This all looks so GOOOOD, yet another amazing meal from you and Frankie ❤ thank you both, sending love
I'm excited to try this recipe! You inspired me to finally go plant based, and your cookbook has been such a big help! Seriously, you're a gem. Thank you for all that you do!
Thank you for watching, keep going
Your chopping skills are mad good! I’m loving your cook book.
Thank you so much 😊
Can’t wait to try this one, especially the salsas, looks delicious!
Everything looked and sounds amazing. Now im crazing Mexican food. Thank you for sharing your recipes and being such a good teacher. Hugs to Frankie.
THIS looks so damn good. i could eat it every single day!!!
Hahahahahaha, Frankie's accent! 'Oh my God stop it! You're embarrassing me ' - as she looks totally joyful 😂❤
Im salivating looking at the dishes omg 🤤 😋
My favourite was the Migas
Omg! Your description of how tasty it is, made me salivate fully
I lived in Austin before, loved it. I am from London. A bit trippy to see someone on a similar journey! Trying to learn this food so I can have it again. These are great recipes. You just don't get it like that much in the UK.
Wow. Love all your videos but especially the latest ones.
This one I just had for dinner but unfortunately I had to make just a couple of adjustments as, yes, you wouldn’t believe it I really don’t like nutritional yeast!!! and I had some chilli beens made.
Thanks for all the you do.
Michele from Western Australia.
I love your videos!! You’ve really upped my cooking game. Thank you! ❤
I had no idea you and your brother are Wicked Kitchen!! I buy your frozen meals every so often and love them, and love they're usually higher in calories and protein than other meals.
Very fortunate RUclips recommended your channel. I love what I'm seeing, and appreciate you posting 🙏
I’d love to eat everything you make❤. Also, love how you clean up as you go along and love how you love your dog.
Just bought every ingredient in the video, soaked the beans last night. So excited to put this together here in a few hours!
You make me so hungry, your food is delicious 🤤. Frankie’s voice I love it😘
Bouldin Creek is one of my all time favorites! I go there every week :) glad to see you take a crack at one of my favorite dishes!
damn…first time watching you and definitely feeling you being next level, amazing editing, beautiful food and presentation, ill subscribe
The cumin was a must for my husband. For years our house always smelled of cumin. Now I do most of the cooking and don’t use as much cumin. But these tacos look delicious. As well as the salsa. Thanks for sharing.
Looks so delicious! Can’t wait to try these recipes!
Derek, I had to make these migas. Nothing is lacking in these recipes. My mom was from New Mexico and I learned from her. She cooked with meat, pork, beef, chicken, sometimes elk. Basically whatever they had. This was in the 1940s. It’s great to find alternatives to meat. She would tell you “Mijo, es bueno alimentar tu alma mexicana”. ❤
My mouth is watering so badly watching this!!!
Your food looks amazing. I’m also a vegan Buddhist and just found your videos yesterday
