I made the ragout part in my slow cooker last night, after an initial sauté on the stove top to get the searing and flavour started. In the suburbs of Toronto we have a vegan cheese called the Green Goddess made in Guelph Ontario. She uses nut milks and ferments the cheese so they are real deal. I wish I could send you a selection. Most vegan cheeses have very little nutrition.
The US and Canada are definitely ahead with regards to making proper vegan cheeses. We are starting to get them here in the UK, but most supermarkets don’t stock them, so we usually have to go to specialist health shops or order online. Nut cheeses are absolutely delicious. I have given them to my non-vegan friends and they are Amazed at just how delicious they are. And they are nutritious. What’s not to love?

Would you perhaps consider doing some basic chef technique stuff, e.g. the "proper" way to slice an onion, or knife buying/sharpening, in Shorts format? I don't normally think the format suits most content, but you have an approach to things I feel like is unique in the so-called "content creator" space and might be able to make it worthwhile. At the same time, your videos tend to the longer side of thing, which I also love - I wouldn't want you to feel like you were cramming things in. Either way, thank you from a recent subscriber who has learned more from the incidental techniques in your videos than I have from formal recipes in quite some time.

I’m not even Vegetarian 😉 but I do like to try new recipes and make vegetarian meals often. I’ve made the base for this (yesterday). Delicious! But you know that 😉 Need cheese so heading to the village shop for some. Then I’ll make the Polenta topping this afternoon. So far so good. I’ll be using ordinary butter n cheese so do forgive me. Oh I even bought the Tempeh! 😇 I live on my own so I’ll be giving my neighbours some. Don’t know if it can be frozen when completed??? Or best to freeze some of the base? Update: Not sure what the polenta is meant to taste like but I had to keep adding more seasoning till I got it more to my liking. The base was still the star of the show. Will make this again. For sure. Loved it.

Derek! I am excited about this...20 years ago when i used to eat meat i would go to a Greek restaurant here in OKC. They made a greek beef tomato and eggplant stew and i believe that's what you made (although it may just be an all purpose greek base that's used in many dishes). If you made it for us as neighbors we would be so grateful and feel papmered lol. I love how versatile your recipes are... This is a great idea. It's like a polenta topped pie; something like a pot pie. I enjoy polenta, but never cooked with it before. I'm definitely cooking this. I'm also an aged 35 male and strangely loving those little dutch oven ramekins lol. This would also be the perfect date night meal considering you can cook it the night before.

Man, I wish I had someone cooking meals like that for me everyday. I would become vegan in a heartbeat. Thank you. I purchased your cookbook. The challenge I have is I take a list of ingredients and buy them. When it comes to cooking, I notice there is a referral to another page for a sauce or one of the ingredients and then another page. So needless to say I haven’t tried any of the recipes I marked as must make yet. However, I have made a couple of your lion manes recipes from the videos and loved it.
All righty...inspired by your roasted tofu tonight. I used your concept as a basic palette and went Mediterranean with flavor: sumac, smoked paprika, greek herbs, salt and pepper. Also did a roasted tomato and garlic sauce with fresh basil. You were right. The sauce makes the dish. Oh my. It was awesome! Thank you. Love your channel. This is a great idea. It's like a polenta topped pie; something like a pot pie. I enjoy polenta, but never cooked with it before. I'm definitely cooking this. I'm also an aged 35 male and strangely loving those little dutch oven ramekins lol. This would also be the perfect date night meal considering you can cook it the night before.

Man, I wish I had someone cooking meals like that for me everyday. I would become vegan in a heartbeat. Thank you. I purchased your cookbook. The challenge I have is I take a list of ingredients and buy them. When it comes to cooking, I notice there is a referral to another page for a sauce or one of the ingredients and then another page. So needless to say I haven’t tried any of the recipes I marked as must make yet. However, I have made a couple of your lion manes recipes from the videos and loved it.
All righty...inspired by your roasted tofu tonight. I used your concept as a basic palette and went Mediterranean with flavor: sumac, smoked paprika, greek herbs, salt and pepper. Also did a roasted tomato and garlic sauce with fresh basil. You were right. The sauce makes the dish. Oh my. It was awesome! Thank you. Love your channel.
