    As Derek suggested, I'm prepping this in parts to get ready for Thanksgiving. I made the mushroom gravy first, and it was so, so delicious! Probably the best gravy I've ever tasted. I should have used way more flour to begin with to avoid needing to make more roux. It would have cut down on time. Derek uses a stick of butter in the video, but I used about 1/2 a stick which was more than enough to make lots of roux. In total including the roux, I used about 1.5 cups of flour. I now have about 8-10 cups of gravy for my family and I to enjoy! I'm excited to see how the rest of the recipe turns out.
    UPDATE: Everyone loved this dish, especially the gravy! There's nothing left. It came together very quickly and easily. The only real change I made was to omit the celery because we don't like celery. Instead, I added parsnips which turned out to be sweeter than the carrots, so next time I'll look for a different vegetable because I really want a trio. I also freeze my tofu to give it that meaty texture. My daughter became a vegetarian about a year ago, and I struggle every single time to find good recipes to make for her that taste good, don't break the bank, and don't take too much time. Thank you so much for this recipe! It will be a regular menu item for family gatherings.

    I will definitely be making this for our Christmas dinner. I will be substituting one sweet potato for one of the white potatoes, and may even chop up a parsnip as part of the veggies. That gravy is going to be outstanding, and I think I’ll make a double batch of that because gravy and mashed potatoes just can’t be beat. Much love to you and Frankie.

    This is my go to Thanksgiving meal I am making every year and throughout the year. I've made a few times since last year and its really satisfying and comforting.     There used to be a Vegetarian chain of restaurants in Montreal called Le Commensal that had a buffet of Vegetarian and Vegan delights. Your recipes remind me of the kind of packed with flavor dishes that got you coming back for more. Thanks for sharing your expertise with us all

    I really liked this because it focuses on a meal for the holidays but basically anytime we have company. I have a request. I realize you likely have more ideas for videos than you can keep up with, but I'm going to toss out my suggestion: We have friends over for dinner frequently and I'm constantly trying to put together a meal that is company-worthy. I'd love to see more videos like this one and that focus on what to make when having friends / family for dinner. Thank you.

    I made this yesterday for Thanksgiving and it completely stole the show! My mother is insisting that I make it again for the Winter holiday feast. Seriously, this is the greatest cooking channel. Your knowledge of food and your vibes (Frankie’s too!) are top tier. This was the first of your recipes that I’ve made; it certainly won’t be the last!

    Yes, this for our upcoming Thanksgiving. Those eating cornish hens can have this as a side, it will be my main course with some mushrooms added. Everyone is happy (except the hens, but I don't fight that battle on special occasions when others are coming, please don't hate me.)

    So I i did make this for Thanksgiving and it was delicious and I'm making it again today. Plus this was so delicious I'm going to keep it on rotation for dinner. When u have it down it's super easy. Plus we are bringing this one pot dish for our gathering and its easier to take along since we are the only vegans of course.

    There is something Pavlovian about your videos. The minute I see them pop up in my feed, I start to salivate. This looks so easy compared to other holiday spreads and it hits all my favorite flavors. I see this meal happening in my near future.     Chef because I didn’t know how much time had lapsed the entire time you were toasting, shallots and garlic in the cast-iron. I’m sitting in my home not yelling but loudly saying Chef veggies Chef the veggies Chef, please so I can get the veggies. Don’t freak me out like that I start thinking back to when I was in the kitchen, giving me PTSD I love your program and your content. Thank you.

    This is a great idea for serving a large family. A good idea tp prep most of ahead of time so the cook can be more relaxexwhen its time to eat. So many lovely ingredients that there's no need for side dishes, except maybe some steamed greens😊

    I just made this dish the second time this festive season. I replaced the spuds with parsnips and added a can of green lentils the second time for more protein. Had it with honey Chipotle bbq sauce once and with homemade cranberry sauce. Thank you for sharing, Derek, you're a treasure! ❤✨️🎁

    This is my comfort food ❤
    I've had success browning my flour in the toaster oven. Just spread it out flat on the baking sheet, toast a few cycles until it's the color you want, stir it up between toastings..... helps with the brown gravy color. Hugs to beautiful Frankie 💜🐾💜

    Can’t wait to try this next week! Although possibly with a minor tweak. I’m thinking maybe mash the potatoes and use as a layer between roasted veg and the croutons (almost like a shepherds pie).
    I want a vat of that mushroom gravy!!! 😂❤

    I'm watching this nine months later but just last evening I was driving home thinking about creating my own recipe for a tofu "unturkey" roast, then this morning, here you are with this lovely cassarole. I always make sure I have a delicious, savory mushroom gravy on my holiday menu too. Your using the gravy as a shortcut for stuffing...brilliant!

      My parents are German immigrants and every holiday included red cabbage as a side dish. It wasn’t until I was in my 20’s that it occurred to me (first time eating at someone else’s house for Thanksgiving) that Rotkohl was NOT, in fact, a traditional Thanksgiving staple, lol.

    I don't know about anywhere else in the US, but here on the East Coast, I use Gravy Master or Kitchen Bouquet, for browning up the gravy. This looks fantastic, and since it's quite cold right now, and I have all of the ingredients, this is Sunday dinner. Thank you for this recipe.

    I made this tonight using the stop-and-start method of following along (luckily I made enough roux the first time!). Your Mushroom Shallot Gravy is 10/10, would make again (plus, I grew my own shallots this summer). Thanks for the video-you saved this vegan's holiday this year.

    I got distracted with the knife sharpener--I never knew that, and I never knew to hold it on the counter like that. I just sharpened my old knife!!
