As Derek suggested, I'm prepping this in parts to get ready for Thanksgiving. I made the mushroom gravy first, and it was so, so delicious! Probably the best gravy I've ever tasted. I should have used way more flour to begin with to avoid needing to make more roux. It would have cut down on time. Derek uses a stick of butter in the video, but I used about 1/2 a stick which was more than enough to make lots of roux. In total including the roux, I used about 1.5 cups of flour. I now have about 8-10 cups of gravy for my family and I to enjoy! I'm excited to see how the rest of the recipe turns out. UPDATE: Everyone loved this dish, especially the gravy! There's nothing left. It came together very quickly and easily. The only real change I made was to omit the celery because we don't like celery. Instead, I added parsnips which turned out to be sweeter than the carrots, so next time I'll look for a different vegetable because I really want a trio. I also freeze my tofu to give it that meaty texture. My daughter became a vegetarian about a year ago, and I struggle every single time to find good recipes to make for her that taste good, don't break the bank, and don't take too much time. Thank you so much for this recipe! It will be a regular menu item for family gatherings.

I will definitely be making this for our Christmas dinner. I will be substituting one sweet potato for one of the white potatoes, and may even chop up a parsnip as part of the veggies. Yes, this for our upcoming Thanksgiving. Those eating cornish hens can have this as a side, it will be my main course with some mushrooms added. Everyone is happy (except the hens, but I don't fight that battle on special occasions when others are coming, please don't hate me.)

Plus we are bringing this one pot dish for our gathering and its easier to take along since we are the only vegans of course.

This is a great idea for serving a large family. A good idea tp prep most of ahead of time so the cook can be more relaxexwhen its time to eat. So many lovely ingredients that there's no need for side dishes, except maybe some steamed greens😊

This is my comfort food ❤ I've had success browning my flour in the toaster oven. Just spread it out flat on the baking sheet, toast a few cycles until it's the color you want, stir it up between toastings..... helps with the brown gravy color. Hugs to beautiful Frankie 💜🐾💜

I always make sure I have a delicious, savory mushroom gravy on my holiday menu too. Your using the gravy as a shortcut for stuffing...brilliant!
My parents are German immigrants and every holiday included red cabbage as a side dish. It wasn’t until I was in my 20’s that it occurred to me (first time eating at someone else’s house for Thanksgiving) that Rotkohl was NOT, in fact, a traditional Thanksgiving staple, lol.

I got distracted with the knife sharpener--I never knew that, and I never knew to hold it on the counter like that. I just sharpened my old knife!! I got distracted with the knife sharpener--I never knew that, and I never knew to hold it on the counter like that. I just sharpened my old knife!! This is what I'm going to make for Thanksgiving--I've seen it come up on RUclips a lot in the past months, but clicked on it only now. Yay! I sharpened my knife!
