I've lost my inspiration for cooking since I lost him. But watching you has re-ignited my creative veg cooking super powers. I've been plant based for 54 years and raised my precious son and daughter that way. Your story about your dear partner who you lost so tragically as well broke my heart... I pickle the kale stems - super easy. Just stuff them into a big jar, pour your favorite flavor of vinegar over, add any extra spices you might like; garlic, colored peppers, tomatoes, etc. Screw on a lid and put in the refrigerator. They will last for more than a year. Eat them as a side taste treat with just about anything except a sweet! I also freeze big leaves of kale. It will crumble in the big jumbo bag. Roll up tight, freeze and sprinkle into whatever savory dish you might be making including a smoothie. Big time saver.
I should have also said that you can stuff kale leaves in the jar also. Another way to fix peppers is not throw out jars of peperoncini pepper juice but use the juice to pickle all kinds of fresh peppers! Just slice, chop or leave whole or whatever size you'd like and stuff in the jar, refrigerate and then wait a few days. Good on just about anything except ice cream! I also "pickle" commercially canned fire roasted tomatoes. Add garlic, vinegar, spices, herbs and again wait a few days and viola' you have a great taste treat.....enjoy.
These are the absolute most ideal recipes for me - "basic," sure, but well seasoned, nutritious, and delicious. Have I made greens, beans, and rice before? Sure! But your tips on technique, prep methods, and flavor combining is so incredibly valuable. Can't wait for the next one.

That was one of the most fascinating things for me when I quit eating animals, there’s an entire world of veggies, ferments, fruits, legumes, different in every country. What a joy cooking is now. Give Frankie a snuggle from Georgie and the piggies. Me n kale not so much but I grow tons of it for the Guinea pig rescue, they like it. There’s a farm just down from mine, he grows the most incredible collards I’ve ever seen. Here in Georgia it’s so hot I never see him outside to ask how he does it. Great video, 🙏

this meal is an excellent source of potassium - i cook vegan meals for delivery to 8 elderly neighbors to supplement their otherwise processed foods diets. due to an illness, a couple of them were found to be low on potassium - I provided them a very similar meal 4 x a week, just varying the spices a bit, and when retested, they were all back in the healthy zone :) food is medicine - but good food is great medicine!
This is Indian/West Indian style cuisine. The rice and greens and legume based vegan dishes are a staple and precisely what I grew up eating from my mom’s great cooking. Thanks for sharing. ❤
I just made this with my 5 year old. We went out and picked kale and cauliflower greens together and cooked this recipe. He gobbled it down!!! He can be picky about greens and garlic, but said he loved this. Thanks for sharing 😊

I really love the fact that your videos move along quickly and the food looks delicious..But, what I most enjoy is that the music is not too loud, or in the way, and that you are not trying to be a comedian with all kinds of corny special effects and gimmicks. I am trying to really grasp the processes of how you build complex flavors. Your sense of humor is there, but I’m here for the food! And of course I am a firm believer in dog love! Thank you.
If I'm making a dish -- maybe a stew or a casserole -- that calls for both onions and something like kale, and where you cook the onions first to soften them, I have gotten into the habit of finely, finely dicing those thick kale stems and adding them with the onions. They cook down nicely, and you're getting all those extra nutrients and fiber, as well as not wasting a thing. Makes me feel like our old ancestors who would use every bit of whatever they had in the kitchen, because they couldn't afford not to.
Would like to see one or two tips about food storage and reheating in each video. In my humble opinion, it's a big hurdle for home cooking for most people.

@@TheRealNickChang Yes you can. I mostly do that due to laziness. Wash and soak basmati or any other rice for 20 to 30 minutes and pressure cook everything. Oil also prevents the contents from boiling over from pressure cooker lid. Alternatively to add a lot of flavour look up Khichdi recipes.
Simple cooking is the best. What was once referred to as pauper's food has turned out to be the healthiest for us. I cooked for a living when younger but growing up learning from my mom those simple but so very good dishes were foundational hence my comfort zone being in the kitchen. Glad I found your channel.
I've been vegan/plant based for almost 9yrs now. I love it! I was never a big meat eater anyway, so wasn't hard for me. I buy meat but it's for my animals(dogs/cats) because their diet is mostly meat, and that's what they get. I make their food also(minimal cooking) i get air dried also(till i buy a airdryer). So I know what they're eating. I love your recipes,ive made many of them and just fablous! You & Frankie are just awesome. Cant wait for what else you've got cooking. We are minimalist plant based eaters, and this is perfect! Sometimes we literally eat black beans, farro, salsa and guacamole tacos for dinner. Or sweet potatoes with sautéed veggies, beans, kraut, and hot sauce. It’s nutritious, and filling so who cares. ❤️

The only bad thing about this video is the fact I am now starving and it's the middle of the night 😂. I kind of lost the drive to cook for myself after burning out a couple years ago, but I recently found your channel and I'm hooked. I've watched other vegan cooking channels off and on over the years, but there's something in your style and recipes that makes me feel like cooking again. The practical tips and techniques are awesome for me, because I usually find a way to make all of the tasks take 5x longer and more complicated than necessary. It makes cooking feel like a luxury when I always have to multiply the prep times. It also doesn't help when so many cookbooks are too fancy for practical everyday cooking.
I always think Frankie is "a good influence" on you! She is NOT always on a break, you cheeky man - she's your Quality Control Manager. Her supervision is what keeps you creative! Every time you say good girl in your video, my dog stops and turns his head wondering why you’re not saying good boy lol. He knows you’re talking to a dog as soon as he hears that tone in your voice. And every time you offer your dog, a treat, mine runs to his I absolutely love your videos. I only found you a few days ago and this is the second recipe I’ve made. I didn't realized that I was watching a Masterclass in vegan cooking! Your videos are tops: Video, tips, music, humor, Frank. We love Frankie! I love this series of fast basic vegan, and I suppose that you warm up the leftovers throughout the week. Waste is a terrible thing. I drooled looking at all the food that you prepared on the buddhist retreat. I will look for some of these recipes in your videos. I like stories about space exploration and the possibilities of colonies on the Moon or Mars. To me, vegan food will be a good choice to grow food for the space explorers. I dont see how we could farm in space, well, maybe insects? Unfortunately, it also means that we won't have our beloved pets in space. As someone wrote about space explorations. We are in a fishbowl jumping out of the water, taking a peek at other worlds but our bodies are not made to live on these worlds. WE have one planet and we are increasingly aware that we have to take care of it. Thank you.

I can't believe how much I've learned from just watching two of your videos so far. I really love your use of cornstarch and aquafaba, which I would have never thought of. One of my challenges when cooking, is how to make food more creamy and juicy. This is such a great solution. Just generally, I like the whole mood your videos and your production values. I’m so glad to have discovered your channel! One of the most empowering things I did for myself this year is to learn cooking, and I like discovering what I like and how I like my food vs. what I am used to or what I thought I like. And thats vegetables for me, never thought I would enjoy eating greens and other colorful produce this much because my diet majorly consist of meat before, now i feel much better. But every once in a while, I will still dabble on some beef or pork. The 'greens' you refer to, we call Sprng cabbage here in the UK. I usually steam for 3/4 mins max. I agree. It's so frustrating that here in the UK, it's really hard to get hold of kale other than already chopped in a bag. You have to go to farmers' markets or grow your own. Another great video, thanks 🙏💕
I from the UK and always called them 'spring greens' rather than 'spring cabbage'. Supermarkets seem to call them either just 'greens' or 'spring greens'. Either way they're bloody lovely and criminally underused.
U have to be the BEST chef on youtube! Thx for taking the time to make real plant based home recipes. They aren't unreachable to me..an average at home cook.
Love and appreciate your approach to eating. We have been plant base for 12 years and agree that there are so many more choices then meat or cheese - and might I add so add a lot tastier.

lol, no. humans are meant and designed to eat meat. leading doctors will explain that with scientific facts. plus meat, beef primarily is the most nutrient dense substance for humans to consume. you simply cannot get the same grade of nutrients from strictly plants.
I use his recipes and add animal based proteins and I feel a lot clearer and going to the bathroom is way better. While I’m not vegan or vegetarian I do source locally and responsibly.

There’s a farm just down from mine, he grows the most incredible collards I’ve ever seen. Here in Georgia it’s so hot I never see him outside to ask how he does it. Great video, 🙏

this meal is an excellent source of potassium - i cook vegan meals for delivery to 8 elderly neighbors to supplement their otherwise processed foods diets. due to an illness, a couple of them were found to be low on potassium - I provided them a very similar meal 4 x a week, just varying the spices a bit, and when retested, they were all back in the healthy zone :)

I just made this with my 5 year old. We went out and picked kale and cauliflower greens together and cooked this recipe. He gobbled it down!!! He can be picky about greens and garlic, but said he loved this. Thanks for sharing 😊

I really love the fact that your videos move along quickly and the food looks delicious..But, what I most enjoy is that the music is not too loud, or in the way, and that you are not trying to be a comedian with all kinds of corny special effects and gimmicks. I am trying to really grasp the processes of how you build complex flavors. Your sense of humor is there, but I’m here for the food! And of course I am a firm believer in dog love! Thank you.
If I'm making a dish -- maybe a stew or a casserole -- that calls for both onions and something like kale, and where you cook the onions first to soften them, I have gotten into the habit of finely, finely dicing those thick kale stems and adding them with the onions. They cook down nicely, and you're getting all those extra nutrients and fiber, as well as not wasting a thing. Makes me feel like our old ancestors who would use every bit of whatever they had in the kitchen, because they couldn't afford not to.
I did just this evening with a batch of collards.

Would like to see one or two tips about food storage and reheating in each video. In my humble opinion, it's a big hurdle for home cooking for most people.
As a caregiver for an obese 85-year-old put her on Whole Foods plant-based sometimes I’m just like trying to cut all these corners and then I watch you and I realize that I could also be doing arch and deliciousness. Thank you for the inspiration.

Along with turmeric and black pepper, add a tsp. of cumin seeds and a tbsp of olive oil, it will taste amazing
Can you throw these seasonings in if making rice in a rice cooker?
@@TheRealNickChang Yes you can. I mostly do that due to laziness. Wash and soak basmati or any other rice for 20 to 30 minutes and pressure cook everything. Oil also prevents the contents from boiling over from pressure cooker lid. Alternatively to add a lot of flavour look up Khichdi recipes.

Simple cooking is the best. What was once referred to as pauper's food has turned out to be the healthiest for us. I cooked for a living when younger but growing up learning from my mom those simple but so very good dishes were foundational hence my comfort zone being in the kitchen. Glad I found your channel.
I've been vegan/plant based for almost 9yrs now. I love it! I was never a big meat eater anyway, so wasn't hard for me. I buy meat but it's for my animals(dogs/cats) because their diet is mostly meat, and that's what they get. I make their food also(minimal cooking) i get air dried also(till i buy a airdryer). So I know what they're eating. I love your recipes,ive made many of them and just fablous! You & Frankie are just awesome. Cant wait for what else you've got cooking. We are minimalist plant based eaters, and this is perfect! Sometimes we literally eat black beans, farro, salsa and guacamole tacos for dinner. Or sweet potatoes with sautéed veggies, beans, kraut, and hot sauce. It’s nutritious, and filling so who cares. ❤️

I take kale stems and dehydrate them. Once dry, I powder them in my coffee grinder and store them in a Mason jar. It can be added to loads of things and no waste.

I kind of lost the drive to cook for myself after burning out a couple years ago, but I recently found your channel and I'm hooked. I've watched other vegan cooking channels off and on over the years, but there's something in your style and recipes that makes me feel like cooking again.
The practical tips and techniques are awesome for me, because I usually find a way to make all of the tasks take 5x longer and more complicated than necessary. It makes cooking feel like a luxury when I always have to multiply the prep times. It also doesn't help when so many cookbooks are too fancy for practical everyday cooking.

Every time you say good girl in your video, my dog stops and turns his head wondering why you’re not saying good boy lol. He knows you’re talking to a dog as soon as he hears that tone in your voice. I like stories about space exploration and the possibilities of colonies on the Moon or Mars. To me, vegan food will be a good choice to grow food for the space explorers. I dont see how we could farm in space, well, maybe insects? Unfortunately, it also means that we won't have our beloved pets in space.
As someone wrote about space explorations. We are in a fishbowl jumping out of the water, taking a peek at other worlds but our bodies are not made to live on these worlds. WE have one planet and we are increasingly aware that we have to take care of it. Thank you.

I can't believe how much I've learned from just watching two of your videos so far. I really love your use of cornstarch and aquafaba, which I would have never thought of. One of my challenges when cooking, is how to make food more creamy and juicy. This is such a great solution. Just generally, I like the whole mood your videos and your production values. I’m so glad to have discovered your channel! One of the most empowering things I did for myself this year is to learn cooking, and I like discovering what I like and how I like my food vs. what I am used to or what I thought I like. And thats vegetables for me, never thought I would enjoy eating greens and other colorful produce this much because my diet majorly consist of meat before, now i feel much better. But every once in a while, I will still dabble on some beef or pork. Lol You are inspiring me to keep going on this journey, thank you! 🙌

The 'greens' you refer to, we call Sprng cabbage here in the UK. I usually steam for 3/4 mins max. I agree. It's so frustrating that here in the UK, it's really hard to get hold of kale other than already chopped in a bag. You have to go to farmers' markets or grow your own. Another great video, thanks 🙏💕
I from the UK and always called them 'spring greens' rather than 'spring cabbage'. Supermarkets seem to call them either just 'greens' or 'spring greens'. Either way they're bloody lovely and criminally underused.

lol, no. humans are meant and designed to eat meat. leading doctors will explain that with scientific facts. plus meat, beef primarily is the most nutrient dense substance for humans to consume. you simply cannot get the same grade of nutrients from strictly plants.
I use his recipes and add animal based proteins and I feel a lot clearer and going to the bathroom is way better. While I’m not vegan or vegetarian I do source locally and responsibly.

I've been transitioning to vegan for a while, I was a vegetarian for years, and the hardest thing (still) is figuring out what I can cook that is simple, quick, delicious and nutritious. So I love the simplicity of your kitchen (basic tools) and this video was awesome - I'm definitely making this yummy bowl of goodness!! I lived in the UK for 3 years, in Glasgow - so I laughed at the rainy grey interlude. Good shoes are essential - my footwear of choice for the UK - Doc Marten's.
