For the oil, can you use melted Coconut oil? I have tried two different keto pancake recipes and both came out super dry and not very good. So I am excited to try this recipe.
I've been wanting to make keto pancakes for a while and today was the day. I followed the instructions. I only had vanilla non-sweeten almond milk. I used ghee for the pan so I can have the butter flavored. I notice my batch was thick, so I added more almond milk. The flavored was excellent, but the texture was a little spongy which was okay. The flavor of the pancakes was excellent no syrup needed but because of the spongy texture I did use very little. I'm glad I finally made these. I was wondering if somehow protein powder can be incorporated, in the mix. I would be very interested in a super keto protein pancake.
Thank you for sharing your experience! The batter is a little on the thicker side and this is normal; yours turned out spongy because of the additional almond milk, but glad it still worked out! Hi Holli, yes, it should work, but make sure all your other ingredients (eggs, milk, etc) are at room temp so that they don't solidify the coconut oil.
Edited to include that I made it in the food processor. @Wholesome Yum just made them and my 14 year old and I both loved them! He had 4-4" pancakes! I did tweak the recipe because in my home nobody likes the taste of almond milk. We love everything else made of almonds but not the milk. The taste reminds me of regular skim milk which I don't care for either. Anyhow, call it desperation but in my head almond milk plus avocado oil makes sort of a heavy cream, so I omitted both and substituted ⅓ cup heavy whipping cream, plus another half of that same cup (sorry can't be more specific😬). I will try the true recipe someday soon, but these were fluffy and very delicious too! I ate just one 4" pancake with Kerrygold butter and was satisfied -and, believe me, I could down some pancakes in my hey days. Thank you for an exquisite recipe! Bravo!👏 👏 👏

Any way to replace some of the eggs with another ingredient like flax egg, psyllium husk, etc? ...Because 5 eggs is a LOT when organic eggs at Aldi's went from $2.69/dz (early this summer) to $5.19/dz last week. 😪 Thx.
Almond meal will result in a gritty texture. Normal milk will work fine from a recipe standpoint, but carbs will be higher. You can try replacing avocado oil with melted butter, but make sure all your ingredients are at room temperature before mixing, so it doesn't solidify. Hope this heps!

You can in this recipe, but stevia typically has a bitter aftertaste. Also, most brands of stevia contain erythritol (unless it’s very concentrated stevia in which case you’d need a different amount) and erythritol can make the pancakes more dry.

If you go to her recipe on her webpage, then fully read what she wrote in the recipe, under storage instructions, she tells you that she made about 12 pancakes that are about 3 inches in diameter. The quantity is also listed within the recipe as well. There are six servings with 2 pancakes per service. That is about twelve. It's also going to depend on the amount of liquid you need too. Maybe one or two more or less. Hope that helps.

Yes, you can use melted coconut oil. Make sure all your other ingredients are at room temperature, otherwise it can solidify and get clumpy.
