Fun fact about the red: Without the red food coloring, red velvet cake can be (and used to only be) naturally red. Some pigments in the cocoa are dark or purple in alkali mixtures (think of Dutch cocoa and Oreos) and more red in acidic mixtures (like natural cocoa and red velvet). The acid can come from ingredients such as vinegar, lemon, and sour buttermilk.
I worked in a cupcake shop and I could not tell you how many people came in and would order the red velvet because they were "allergic to chocolate". We stopped trying to gently correct people because they always ordered it anyway 🙄
SO FUNNY. I have a brother in law who ONLY wants to eat chocolate cake. I made RV and he said no thanks, I only eat chocolate. His wife whispered "something" and he ended up eating half of the cake. I use this same recipe! He claimed it was the best cake he had ever had. 🤭 I asked you mean CHOCOLATE cake right?
You're correct in that red velvet cake does have its own flavor. It's not a chocolate cake flavor or like a yellow cake flavor even though it is it's own type of chocolate cake. I think this because of the vinegar used to create the buttermilk gives it is unique flavor. And the vinegar also helps keep the red color stay the beautiful shade of red. My son has a delicous recipe for a red velvet cake that he will sometimes switch up the color. Like he's done a orange color for Halloween or for the fall season, green for St. Patrick's day and a deep blue just because he wanted it blue. It still tastes like a red velvet cake except the color just isn't at times red. A good red velvet is one of my favorite cakes.
Jose I am probably older than your grandmother but I am learning so much from you! You are extremely entertaining while educating people(like me)! I’m very happy I found you here on YT💜
I just saw you had long form content and I feel like I discovered a gem in a gem. I’m 21 and you’ve really helped me get better at cooking. Keep up the good work!
This is MY mothers recipe! I requested it every year for my Bday. It is TOTALLY the vinegar element that makes this recipe stand out from all the rest. If you have ever had RV at a wedding and thought, it was the best cake ever...it is this recipe! Years ago Bethany Frankel (way before her $$$) wanted THE SPECIAL RV cake for her wedding. She tried every bakery in her city until she found one that tasted RIGHT. All she needed to know and ask was if it had vinegar. She never knew the secret. Store this recipe away and pull it out for special occasions. I make it for Jesus's birthday during Christmas season. The RED RED and white of the icing, perfect.
And he’s so patient and relatable and doesn’t act like this is just something he whips up in two minutes in the afternoon. Can’t stand it when people try to basically low-key make you feel bad by pretending like they’re perfect.
1:24 highly recommend getting the paddle attachment with the silicone extension, it scrapes the bowl as it mixes and reduces the unnecessary downtime and babysitting a lot
As a baker I was seriously ready to crank on anything he did wrong. But he amazingly nailed every last little thing. Well done! Looks delicious! Interesting fact hough, the original red velvet was made with beet juice!. If you like making old fashioned/original recipes, look one up with beet juice. Adds a mildly earthy flavor and deeper red color. 😉😘
I was wondering about that as I am trying very hard to stay away from dyes. My kid has A/D/D and I find dyes affect him especially sunset yellow 40, thanks for the tip
I actually went and made the original velvet cake which had no coloring added at all. It was just the natural cocoa powder reacting with the acid in the buttermilk. It didn't go bright red, to be sure, but it was still pretty tasty.
Been making this cake for nearly 50 years now. It's a favorite of the family... they even request it as their birthday cake, LOL. Love your videos, Jose!
Got to love when a crotch deodorant ad interrupts 🙄 I picked up red velvet ingredients today before I saw this so I'm looking forward to making this too! (Along with the bread recipe. 🍞) Thanks again! 👍 (BTW... your lovely wife & you are adorable. Love when you film together!) Blessings ~

Are you trying to make us love you? Btw, I had the same experience as you ...that red was it's own flavor until I learned it was that good ol' super delicious chocolate. One of my favorite cakes of all time as a child of Southern (US) parents. Thank you for making this! I feel my Southern Grandma would approve!
Thank you for posting that cream cheese frosting recipe! Most these days don't have enough cream cheese. My older sister made one like that when I was little.

Just discovered your channel. Love watching you cook...and your fun facts...if not overdone. Lol... but I like that you do sweets and savory dishes. Thanks
Try red velvet with ermine frosting with shredded coconut and chopped pecans mixed into it. It's how my family has always done red velvet and in my opinion it's superior to cream cheese frosting. 😊
It's how I was taught as well. Apparently the original frosting was ermine. Nothing wrong with cream cheese frosting though. The ermine is interesting in texture.
I’m fasting, on my second day and I have no business binging in your videoes…. l This one also looks good! Pleaseee. You can’t give me the one that got away, but I’m pretty sure you can give me the corn pancake ☀️ P.s. your recipes not only look delicious but you make it look so easy enough to want to make me try them!

Every recipe I’ve seen (and used for 25 years) calls for buttermilk in place of whole milk. It makes a difference and gives it the velvety taste/texture.
Best cake I ever made. I added the red coloring before adding the egg and it keep the red color in tact. It did have a stronger red dye taste too. Next time, I'll add the coloring at the proper step.
Hey, I work at a bakery and were taught to never slam the cake on the table, this is because it gets all the air out which makes it less fluffy. Just a tip if you want it more airy!

I have a food scale too.

@Tyrant175 why is that wrong? Because the research I've seen it sounds about right...
Anyway, red velvet cake is a farce in my opinion.

I don’t know why I like Red Velvet more than regular Chocolate, I guess the added tanginess from the vinegar does something taste-wise?
Because it's not a chocolate cake, it's a cake with chocolate (or I guess cocoa powder which isn't that chocolatey on its own)
