  • In this video, we're going to make 3 of my favorite oil-free salad dressings:
    1.) Creamy Roasted Garlic Balsamic Dressing
    2.) Sweet & Smoky Dressing
    3.) Orange Poppyseed Dressing

    CHEF'S TIPS
    👩🏻‍🍳 Cauliflower provides a low-calorie creamy base, perfect for a thick dressing that sticks to greens.
    💁🏻‍♀️ Use a high-quality balsamic vinegar with 4% acidity for the best flavor.
    👩🏻‍🍳 Experiment with different flavors of balsamic vinegar for variety.
    💁🏻‍♀️ Westbrae makes a salt-free stone ground mustard that works perfectly in this recipe.
    👩🏻‍🍳 For convenience, use defrosted frozen cauliflower and pre-peeled garlic cloves.

    2️⃣ 💨 Sweet and Smoky Dressing
    ✔️ 1 cup of water
    ✔️ 1/2 cup of lime juice
    ✔️ 4 ounces of pitted dates
    ✔️ 1/4 cup Westbrae salt-free mustard
    ✔️ 1 teaspoon chia seeds
    ✔️ 2 teaspoons SMOKED paprika
    ✔️ 1/4 teaspoon chipotle powder
    ________________________________________________________________________
    3️⃣ 🍊 ORANGE (or LEMON) POPPY SEED DRESSING
    (add two tablespoons of apple cider vinegar when making orange)
    Slightly sweet, slightly tangy!
    INGREDIENTS:
    ½ cup orange juice
    ½ cup water
    2 ounces of dates (approximately 4 large Medjool dates)
    2 Tablespoons Westbrae salt-free stone ground mustard
    1 Tablespoon poppy seeds
    2 teaspoons chia seeds
    PREPARATION:
    Place all ingredients except for the chia seeds in a high-powered blender and blend until smooth. Add the chia seeds and briefly blend again. Refrigerate the dressing.

    Wow! I haven’t had Catalina dressing since I was a kid. We had a ‘taco salad’ with it on rotation for years that I loved. Going to figure out a vegan version of that with this dressing! Thanks AJ!!🎉

    Thank you for sharing your recipes. There are several other vegan RUclipsrs that you have to buy their books in order to get the recipe. Financially I am not in a situation where I can do that. Again thank you for sharing your recipes and I'm always looking for new vegan dressings❤

    I definitely have to try these.
    I am not fond of chia cause when I first used them I had an unusual experience of when I bent over my nose poured out water every time I used chia so I stopped using them, I am unsure as to why this happened but I found it not worth trying them again, I could have used the wrong I just dont know, but I can try them again or use Hemp hearts which I love because of the buttery nutty flavour of them & I don't react to them & they are high in protein.
    I do not like to buy salad dressings & haven't bought them in years because more then half the ingredients, probably 70% of the ingredients weren't kosher or clean for human consumption & began making my own.
    To me, the point of making your own salad dressings using live ingredients changes the term of what these dressings are for & instead of just flavour, I realized that the dressing provided living components that benefit the body & wellness so I called them medicinal flavourings or Medicine elixirs so when I make a a dressing now, I consider the healthy medicinal components of this dressing first so when I eat my salads which are very simple, they do way more for the body then just taste good & are hugely beneficial for the gut & in some cases they contributed towards me losing over 100 lbs over a few months. Thanks for sharing your dressing recipes & now I am stoked at making new kinds of dressings that can fortify the body with many healthy healing components as well as flavouring. I never thought to use dates as a sweet base but since I do consume a lot of prunes, dates can do the same as prunes do.
    I also repurpose nice attractive bottles & jars for this very purpose, but I use wide moth jars for extra thick dressings & sauces so I can spoon out what I need in a proper portion size.
    I make a dressing using avocado, kefir or yoghurt a high quality olive oil or hemp or walnut oil sometimes balsamic vinegar Celtic sea salt & I pulse them not blend them because I don't want to kill the living components of the ingredients so its medicinal as well as flavourful. In these cases, things like Spirulina & chopped Nari or dulse instead of salt can be added to provide much more & dense nutrient value.

    Hi Chef, thank you for the recipe blessing. My question is, is there a link to the California Balsamic brand specifically? I type that name in and get a bunch of hits. So is it Balsamic vinegar made in California or is there a specific brand entitled "California Balsamic?" Please advise.

    If you get a chance, try Zen Basil Seeds as a replacement for Chia Seeds.
    They are Lectin free and have a better nutritional profile.
