maybe cuz our minimun wage is around us$200 so $80 its actually insane amount of money for us, that restaurant is made for tourist no argentinian is gonna spend that much money on 1 food (10 plates is just marketing cuz of gourmet portions). He had a Nobel on condiments (kidding, it was on chemistry). Story goes he frequented his Golf club when he came up with the idea. So that's why in Argentina you'll see this "golf sauce"
There are two tipes of molleja, that are from different places of the cow, you have the "molleja de corazon" which translates to Heart Thymus, (is not heart, but is a close tissue) has more fat and more chew and are perfect for the grill. Some prefer this one over the other an so on. The other Thymus is called " Molleja de garganta" Or Throat Thymus, this one is tinier, softer has a soft texture and is perfect to do with skewers or " Al Verdeo y salsa blanca " which translates to " Green onion and bechamel sause". This tipe of Thymus is what you ate on the last restaurant.

In 2016 we used to get sweetbreads for super cheap in Midland Texas. Now? It's like a prime cut.
Really? oddly enough, a lot of the sweetbreads sold in Argentina are from the USA, do to the high demand. Here in Chile they are also American, at around... 6usd the pound

En USA no se consumen ni cerca comparado con Argentina, así que hay exceso de oferta. Me sorprendió también cuando me lo dijo un empresario ganadero argentino recién.✌🏼

Thymus is also known as Sweetbreads and is pretty common in most of Europe and in nicer restaurants in America. Its most often fried and its amazing - like the worlds best chicken nugget. My extremely squeamish wife even likes them

If you come again, go visit El Tano at Avellaneda. It's a "parrilla libre"; you pay a fix price and they start bringing you asado cuts till you cannot eat anything else.

When I was young sweetbreads were fairly common, but as cattle export from our state to Canada became big business, and grass fed beef became popular (why?) and hence easy to raise to maturity, it is almost non-existent.

The dish is called provoletta and its made with provolone cheese. Also its recomended for a happy life: provoletta+ mollejas + red wine
