I've only had instant jajanmyeon in a ramen-style instant package (there's a brand that's accidentally vegan that I get at the local Korean grocery). Looking forward to trying this.

Yessss happy me. Today I went grocery shopping for your hot&sour soup and bought some jjajang paste as well. Will definitely try your version of the jjajangmyeon.
Going around different jajangmyeon shops, there were many that didnt seem extraordinary. Good jajangmyeon has all the stuff laid out in the video. But there was this one place that I cant forget the flavor. It was phenomenal, the best one I've ever had once in my life. All other times I have it, ends disappointingly now. Up to the point in the video where the vegetables were cooked with the black bean paste, is where that restaurant caramelized onions into a jam and mixed this jam in.
Obviously, this is the first time I hear about this dish. And I am so glad you're sharing your recipe with us! It sounds so flavourful and satisfying! Plus, udon is one of the tastiest noodles because of its amazing chew so this must have been a bomb meal. . Thank you so much for being a ceaseless inspiration Wil! Have a great end of 2021!
