Asian and Indian food is my favorite as a vegan because it's often pretty cheap and easy to make and easy to find and actually GOOD, but even though I love Asian food SO MUCH I can't eat or try as much as I'd like because so much has meat in it, so thank you SO SO MUCH for making this video and this recipe because I probably never would've imagined I'd be able to try this without you!
If ya'll can't find shitake mushrooms to make the broth, use vegetable stock! I'm vegetarian, and have used vegetable stock to make this before (trying it on a whim) and it worked! I just added onions, potatoes (to be more filling), and zucchini and it tasted great. Definitely try it out!
Kayla Jenkins I'm vegan and you can get dried shiitake mushrooms on Amazon and they are the most reasonably priced mushroom that is sold dried! I also would not recommend vegetable stock but I would recommend mushroom broth powder or mushroom base as it has the most wonderful flavor and more Umami than you can handle. I have had the same dried shiitake mushrooms now for over a year and as long as they are kept in an airtight jar I prefer a glass they are fine. You can either get Asian mushroom broth powder or any mushroom base like better than bouillon or minors mushroom base Etc. :-)

Elizabeth Shaw vegetable stock is just an easier ingredient to get that doesn't require online ordering or a speciality store, which is why I recommended it. Yes I know you can get more Umami that way, but for people who are not comfortable ordering online or don't have access to speciality stores, it's an easier option. Also, mushroom broth powder isn't available everywhere either.. so vegetable stock is still a good recommendation.
As would most Indians. It's near impossible to source stuff like vegetarian oyster sauce, Portobello mushrooms and shitake (you actually may get ridiculously expensive ones online). Not to mention the black bean paste. Heck, just gochujang and daenjang is so expensive and difficult to find. (I did find reasonably priced miso online though.)
Please do keep making vegan versions of the recipe as it really helps someone like me who loves his food but transitioning to vegan. This helps us to have some knowledge on how to keep the Korean flavours without having to opt out of eating good food. I’m Bangladeshi do the flavours for my country food when doing vegan isn’t so hard.

BrainError I'm in the same boat. I'm personally cool with eating meat, and it would be hard to go without, but it's helpful to see like... "Vegan creamy soup" or cheesy things that aren't cheese. And with other times... It's just fun to experiment!

Great recipe! You are right. If Vegan cooked right tastes as good as animal based ones, then why not?! Anything cruelty-free is great!! We wouldn’t want anything from a slaughterhouse in our food!

I love this video and became obsessed with the desire to make this dish. One concern for me is the noodles. I am diabetic, and have been having some trouble with my glucose numbers. I decided to try this sauce over soba noodles. The noodles were a bit thinner than you recommend... but the buckwheat flour noodles are much healthier for diabetics. I am also afraid of mushrooms. At my local Asian market I found a big bag of granulated mushroom seasoning. It smelled not so good.... but added two teaspoons to two cups of water for the broth. Shockingly delicious! My Jjajangmyeon came out absolutely delicious!! I added lots of veggies... but the red bell peppers were absolutely amazing in this dish! Pea pods, celery, Cabbage, onion, garlic, zucchini...all the others you recommend. I also felt it needed some salt, so added some soy sauce. It makes a great deal of sauce! Now when I get home from work.... I boil up some soba noodles..heat up some sauce in a saucepan....and delicious dinner for all! Should last at least a week! Thank you SO much for this recipe! LOVE IT!
Finally found the black bean paste and made the last Jjajangmeyon recipe yesterday. I'll have to try with mushrooms next time so I can share with my vegan roommate.

muzz brudr definitely do firm, i feel like a softer texture would break apart really easy. I'd also try to find the grilled firm tofu, or fry your tofu first before adding it.

Let me guess. myeon = noodle in Korean? I don't know. It just sounds like the Chinese 加酱面 (jia jiang mian, which can be translated as "add sauce noodle"). I just did some searching on the WWW and found a similarly named recipe 杂酱面 (za jiang mian, which can be translated as "mix sauce noodle").
I just found out about this recipe and it's really helping me to try cooking jjajangmyeon which not containt pork or non-halal ingredients. Thank you so much 💕💕
I just want to enquire, is there any brand of chunjang and gochujang that dont have any alcohol in it? I can't take any form of alcohol due to religious reason.. tq!
The brand of Gochujjang that I have is Wang Korea. Ingredients don't appear to have alcohol? "Corn Syrup, Wheat Flour, Water, Red Pepper Powder, Wheat, Salt, Monosodium Glutamate, Potassium Sorbate as preservative." I bought it at a little Korean grocery store so I'm not really sure where to get it, but I hope it helps! Same for the Chunjang in that brand.
if you see 주정 on the label, there is added alcohol. Wang brand doesn't have any added. Sempio has 0.13%, and CJ has under 0.5% content. Technically all gochujang will have small amount natural alcohol, because it is fermented, but so does orange juice or bread.
Just found your channel and I'm so happy because I can't use fat in my diet and this recipe is great for me. All the other recipes for this noodle dish has it drowning in oil. Thankyou so much

Its a gasmate, single gas stove top, super handy but dont go cheap, best to get higher quality as the gas can tend to shoot out the hole bit alot more than the higher end ones (higher end I mean like $80 rather than a $20 gasmate).

I don't know. It just sounds like the Chinese 加酱面 (jia jiang mian, which can be translated as "add sauce noodle").
I just did some searching on the WWW and found a similarly named recipe 杂酱面 (za jiang mian, which can be translated as "mix sauce noodle").

Thats why the title is chinese black noodle, its chinese recipe in korean version. And Should be 炸酱面。。。its not called mix sauce noodle....

I just want to enquire, is there any brand of chunjang and gochujang that dont have any alcohol in it? I can't take any form of alcohol due to religious reason.. tq!
tashaleen same! What stops me from trying out is usually the alcohol-based ingredients.
The brand of Gochujjang that I have is Wang Korea. Ingredients don't appear to have alcohol? "Corn Syrup, Wheat Flour, Water, Red Pepper Powder, Wheat, Salt, Monosodium Glutamate, Potassium Sorbate as preservative." I bought it at a little Korean grocery store so I'm not really sure where to get it, but I hope it helps! Same for the Chunjang in that brand.
if you see 주정 on the label, there is added alcohol. Wang brand doesn't have any added. Sempio has 0.13%, and CJ has under 0.5% content. Technically all gochujang will have small amount natural alcohol, because it is fermented, but so does orange juice or bread.

Its a gasmate, single gas stove top, super handy but dont go cheap, best to get higher quality as the gas can tend to shoot out the hole bit alot more than the higher end ones (higher end I mean like $80 rather than a $20 gasmate).
