I love the Quiche Lorraine. I've made it several times it's great with a little spinach Salad. Another favorite is the Potato and Asparagus quiche it's delicious.
Love Crustless Quiche, all kinds, I make a different one (w/ 6 servings) every week. Quick, simple, healthy, delicious, inexpensive, ... It's my favorite perfect meal. I keep it simple, practically anything/everything works: spinach, onions, broccoli, cauliflower, tomatoes, olives, bell peppers, spicy peppers, mushrooms, asparagus, sausage (sweet, spicy, Italian, Polish, ...), ham, bacon, pepperoni, corn beef, almost any/all cheeses, and spice it up anyway you like.
Yes, a crustless quiche freezes very well. To freeze before baking: Mix the ingredients together and pour the mixture into a zip-top freezer bag. Thaw the quiche filling in the refrigerator for about 24 hours before baking. Bake as recommended in the quiche recipe. To freeze after baking: Cook the quiche as directed and allow it to cool. Tightly cover with plastic wrap and freeze. When you are ready to reheat the quiche, place the quiche in a 350 degree F oven and heat for 20 minutes.

If you want a simple crust, use a flour tortilla. It's thinner than a normal crust, but for me at least, it's the perfect amount.
