    Today I'm going to show you how to make crustless quiche.
    This healthy quiche recipe will fill you up and give you the energy to get through your morning.
    This crustless quiche is super versatile, you can use any leftover vegetables, meats or cheeses you have in the fridge.

    CRUSTLESS QUICHE RECIPE
    (makes 8 slices)
    Ingredients:
    1/2 cup red bell pepper, finely chopped (75g)
    1/2 cup green onions, finely chopped (50g)
    1/2 cup sweet potato, grated (75g)
    1 cup cheddar cheese, grated, or any other melting cheese (100g)
    5 eggs
    1 cup cottage cheese (225g)
    1/2 cup milk (120ml)
    1 tsp mustard
    1/2 tsp salt
    1/4 tsp black pepper
    1/4 tsp ground nutmeg
    1/4 cup ground oats, or oat flour (25g)
    NUTRITIONAL INFO (per slice):
    158 calories, fat 8.6g, carb 7.9g, protein 12.3g
    Preparation:
    In a greased pan pan (I use 8-inch or 20cm cast iron skillet) layer down all the veggies and sprinkle with grated cheddar cheese.
    In a blender add 5 eggs, cottage cheese, milk, mustard, salt, black pepper, ground nutmeg and ground oats. Blend until really smooth.
    Pour the mixture over the veggies and move around with a fork to evenly distrubute the filling.
    Bake in a preheated oven at 350F (180C) for 35 minutes.
    Let it cool for 20 minutes, then slice into 8 equal pieces.
    Serve and enjoy!

    I made this today, using white potato (husband doesn’t like sweet potatoes) and served it with side of fresh fruit. I placed the shredded potatoes as first layer. When I cut the quiche, they were golden brown, looked like a crust 😊. It was delicious even better than the frittata. Thank you for this easy, wonderful recipe.

    I just made this with southwestern seasonings (cumin, garlic, chili powder) mixed with red pepper, onion, and green chilis. Your base recipe is fantastic. I made it for two of my aunts and they went in for second helpings. One of them even said she didn't care for cottage cheese, but couldn't tell that there was any in it. Thanks!     I just made this and followed the directions exactly, apart from switching the sweet potato out for 1 cup of blanched green beans and tenderstem broccoli and it's one of the best things I've ever tasted. Thanks so much for this recipe. I'll now make it every week for my lunch at work.

    This is easily the best quiche custard recipe I’ve used so far!! A few years ago I made Chile Relleno Casserole but forgot to write down how much of each ingredient I used and have never been able to replicate the texture, until today!! I doubled the recipe and used a mix of sour cream & Greek yogurt instead of cottage cheese. I also used corn starch in the original attempt but oat flower is vastly superior 😊 Keep up the great work!!

      No a frittata has a different texture because it has a lower content of dairy. Quiches have a more custard like texture. Not the same.

    Looks great. What did you use"grease" the pan with? I don't like using Crisco. Can you use butter?

    I wouldn't add the flour. Most people don't like dry quiche. I would add some frozen chopped spinach unless you want to chop fresh.

    Made this a few days ago, turned out fabulous! Am making it again today to take to a party. Thank you so much, love the way you have replaced heavy cream with cottage cheese and the pinch of nutmeg and the mustard (I used whole grain) adds just that little bit of zing to it. Oh yes and I used regular potato, cut into fine chips, rather than sweet potato. Added mushrooms and broccoli too. Delicious 😋😋😋😋😋

    I Wonder if we could try a version of Spinach, ricotta or cottage Yummy cheese and perhaps Diced bacon Or ham.. or mushrooms in this quiche .. that would be ridiculously Too good and i bet no one would ever notice they ate oats at home for dinner lol thanks for your foul proofs recipes...wellness. ✌️

      Or an expert, but I wouldn’t do it. Oat flour is way lighter ….you can make it by putting oats in a blender.

      @@tina8796 A lot of times people who have problems with regular flour use oat flour for cakes, cookies, bread, etc. I didn’t used to use it because I thought I had to go and buy oat flour. Then somewhere I learned you can make it yourself by putting oats in a blender or a Ninja and grinding it fine.

    Have just discovered your channel from trying your microwave gluten free oat flour bread which turned out great even with a few tweaks liked adding half buckwheat flour and silken tofu instead of greek yoghurt. Might try this in the microwave too as I don't have an oven yet! Any suggestions about how I can make it work?

      Good to know. Cottage cheese is nearly impossible to find in my country and dairy products in general are on the pricier side. Tofu is much more affordable and available.

    I am diabetic (type 2) and I just made this. It’s delicious! I made a few changes that worked for me: I didn’t have sweet potatoes but I did have some leftover frozen hasbrowns in my fridge, so I used that instead rather than have it go to waste (thank goodness the recipe is crustless). I also used a mixture of red, orange, and yellow bell peppers, as well as white mushrooms (since I didn’t have green onions. Along with the nutmeg, I only added 1/4 teaspoon of salt, and increased the black pepper to 1/2 teaspoon. I also added 1/4 teaspoon of garlic powder and 1/4 onion powder. Again, this combination worked for me and I absolutely loved it! Thank you for the recipe!

      Hash browns wouldn't be so healthy for type two diabetic, better to use sweet potato. Try to not have root vegetables and if and when you do have them according to what they should be served. Sorry for unsolicited advice, but worked with diabetics before in my previous job

They contain 15 grams of carbohydrates per 2/3 cup serving. 0 grams of total fat and cholesterol, and 55 grams of sodium. Divided into 4 servings, that is hardly unreasonable. I am aware that hashbrowns aren’t the best choice, but again, I’ve had them in my freezer for a while now (and I’m recently diagnosed) so I don’t want to waste food/money. Plus, it is possible to have things in moderation. I have been able to keep my blood sugar below 125 on most days, and under 100 many times. I think I’m doing pretty darn well, but I do appreciate you looking out. People can make their own informed decisions based on their needs, circumstances, etc.

      You can skip eggs, but you'll have to change the recipe a quite bit, add more applesauce, more oats, but that wouldn't be a quiche anymore.

      The actual baking time depends on the thickness of your quiche, so if using some larger baking pan you can stay with this 35-40 minutes.
