    ✅Ingredients
    • 1 tablespoon extra virgin olive oil
    • 1 small sweet onion, diced
    • 4 ounces mushrooms, sliced
    • 2 cloves minced garlic
    • 10 ounces chopped frozen spinach, thawed and drained
    • 6 ounces crumbled feta cheese
    • 8 ounces shredded cheddar cheese
    • 5 large eggs
    • ½ cup milk
    • ¼ teaspoon salt
    • ¼ teaspoon black pepper
    ✅Instructions
    1️⃣ Preheat oven to 350 degrees Fahrenheit and lightly grease a 9 inch deep dish pie plate.
    2️⃣ Heat olive oil in a large skillet over medium high heat. Add in onion and mushroom and saute until softened, about 5 to 7 minutes. Add in garlic and cook 1 minute more. Stir in spinach, feta, and cheddar cheese. Spoon mixture into the prepared pie plate.
    3️⃣ In a mixing bowl, whisk together eggs, milk, salt, and pepper. Pour egg mixture over the spinach mixture in the prepared pie plate.
    4️⃣ Bake in the preheated oven for 40 to 45 minutes, until eggs are set. Let cool 10 minutes before slicing and serving.

    The quiche looks delicious. Kitchen hack tip.... put your frozen spinach in a large sieve or colander ans then suspend it over a sink or another larger bowl. That way the spinach will drain/ dry as it thaws saving you the mess and hassle of squeezing it out.

    This was so good!! I sautéed fresh spinach and didn’t need to squeeze any water out. Also didn’t have mushrooms but still so delicious!!

    TIPS:
    1. Squeeze the spinach into a separate bowl.
    No point in adding more liquid to yet un-squeezed spinach.
    2. Freeze the spinach liquid to add later on into rice, pasta, soups or stews for added nutrition & flavor!

      @@sassyt1545 it’s not dishwater for heaven’s sake! haven’t you ever heard of keeping water after boiling pasta? you use it in soups, sauces and / or stews to naturally thicken without using cream or other thickening agents. and that water already has flavor, too. lots of natural shortcuts out there to cooking.

    I’ve found a recipe during lockdown…I fry up bacon pieces. Use fresh spinach. Whisk up eggs, add spinach, whatever other veggies (I like mushrooms and bell peppers). Cheddar cheese. Garlic powder and black pepper. Once bacon is cooked and drained, toss into bowl with egg mixture. Since I make one serving, I grease Pyrex bowl, pour in mixture, top with parmesan…370° for 30min. I love it for breakfast!

    I cant believe how quick and easy it was to prepare this and how DELICIOUS it was. I did make a homemade crust and it just took it to another level. However I think i needed more filling for my pie plate so next time i might double the receipe but just use one extra egg. I think that will give it the height im looking for. Other than that it was so awesome. Thank you so much.

    Just wanted to say that I made this recipe last night and it turned out so great! I substituted goat cheese for the feta (it was what I had on hand) and it was so yummy. Thinking about adding sundried tomatoes next time. I love your videos! They are so versatile and always come out tasting incredible! Anyone who hasn't, should try your scone recipes! They are my favorite!

    I made this the other morning and it was fantastic! I used baby spinach (because that's what I had) and it came already washed so I just dumped it in to wilt. Cooked perfectly and was gobbled up. My daughter said I couldn't call it a quiche because there was no crust. I told her it's a free country and I could call it whatever I want :-) And that was the name so there! Thanks for the recipe.

    Great vid - been making this exact recipe for years - only difference is I add tub of cottage cheese, so only 2 eggs are required. Holds together beautifully!

    I never made a quiche or even ate one. I made this today. I was sooo amazed of how good it was! I made it just like the recipe but I didn't have mushrooms. So I used bacon instead. I had the quiche with buttered toast. This recipe is soooo tasty, it's really a keeper!

    Nice frittata can be made in a shallow fry pan on the stove overly cheese

    I looked this up to cut down on calories probly why someone would make crust less quiche but after working in a tea house that served Quiche I just can’t make it with milk half and half is the only way 😋

    I tried your recipe and I love it!!! The only thing I changed was using fresh spinach rather than frozen. The quiche turns out a little watery...is it because of the spinach or baking time. Overall I am satisfied for 1st time baking quiche. Easy to follow recipe

      Maybe try sauteing the fresh spinach, then squeeze out the liquid before adding. Also, as fresh mushrooms will give off a lot of liquid, be sure to saute well, and drain. 😊

      It reheats well. I keep mine in the fridge for a couple of days, covered with foil. I've reheated the whole thing the next day in the oven (at 350), as well as microwaved individual slices.

      You end up with one 9-inch pie. How many people that feeds depends on who you are serving and how much they eat. Generally, it’s cut into 8 slices.

    Trader Joe's frozen pie crust (2 per pack) is rated 2nd best only to "homemade." Me likey the crust.

    Love the recipe, but wouldn't be easier to squeeze the wet spinach into another bowl rather than squeezing it into the remaining spinach making it even wetter?

    I got a bit "creative" with this recipe. In the oven now. Used some heavy cream. Substituted 1/2 the mushrooms with mashed, roasted chestnuts I had on hand (in hopes of giving it a "meaty" flavor and texture) and added a smidge of lemon juice and 1/4 tsp curry powder to the egg mixture. I also used freshly chopped spinach which I lightly sauteed in a little butter and olive oil instead of frozen. I used six eggs, because I added a THIN layer of day-old artisan bread at the bottom. This will either be great, or a flop. Fingers crossed.

      OK results are in. Worked great. That smidge of curry and fresh lemon juice in the egg mixture gave it a nice balance. The smashed roasted chestnuts gave it just the right mellow and meaty texture/flavor. Bread at the bottom was nicely integrated. Overall, this is a fun recipe to play with.

    When you say OUNCES for example for the shredded cheese, do you mean weight (~30 grams) or VOLUME? So when you say 8 ounces of shredded cheese - is that 240 grams, or is it by volume whatever you can fit into 1 cup (equals 8 liquid oz)?

      The ounces are indicated on the package of cheese that you purchase otherwise you use a measuring cup that states 8 ozs. Very simple.

      There's a recipe we have here in Australia, called Impossible Pie. It's much like this one, but you add a small amount of flour to the mixture, and when baked, it has formed a crust. My mother used to make it and it was delicious - not quite sure of the exact recipe, though.
