That was a great recipe! We used dried soy chunks as "meat" and other veggies such as carrot, celery and leeks as a base. We also added dried and oyster mushrooms. Coriander pesto gave it a delicious kick. Thanks a lot for sharing!
This pie (slightly hacked for busy mom) is amazing. It was added its way into my regular meals. So tasty as leftovers too. As previous comment said add in onions and mushrooms and I skip the pesto to save on clean up and cost. Pesto is still used for special occasions. Thanks lads

you inspired me to make my version of this dish today. Only with things in the house: peas instead of beans and red lentils instead of green, just potatoes and minus the koriander,koriander cause it's just not the fave of everyone in the family. It looks amazing already, needs a bit of browning still, but it'll be ready and hot when everyone comes home! YUM! thanks Guys!

I don't think the five minute meals are a gimmick, they are designed to help people see how easy it is to eat healthy when you have a very hectic lifestyle. I find them very useful in a pinch :) but when I have time it's also nice to use more relaxed videos to cook along to.
This!!! You Two are vegan superheroes for this one . I subbed A can of chickpeas and black beans for my lack of lentils and it is still a heroic recipe. You guys are amazing !
This is an awesome dish. My lentils ended up a bit too saucy, they should probably have simmered for longer! Anyway, after getting the first portion out the tray, the exces stock was easy to scoop into the sink! I used homemade veggie stock cooked from scraps. This is not the last time I've cooked this! I'm gonna serve this to non vegans, and bet them they'll like it!
Thank you! I make this for my family a lot, only I use eggplant instead of lentils because I like the texture better and the flavor contrast with the mashed potatoes. I'll add that pesto next time for sure :)

Just seen this it sounds delicious and I love lentils too, find supermarket cottage pies always taste bland and unappetising, think next weekend I'll make it but will use normal potato as I am not a fan of sweet potato, I'm not vegan but I am a vegetarian and I'd add some cheddar to the mash - I adore cheesy mash- , carrot, red onion, garlic and maybe some sliced chillies for some warmth. That coriander pesto sounds amazing too I love coriander, I'd want to make a load of that and sprinkle it on everything. Cheers for the recipe guys.
Howiya lads! Just wondering what the craic is with cooking with pre-cooked lentils as opposed to throwing the dry fellas in early and then letting them cook with the veg and soak up all the juices? I made this to spec on Sunday, will be eating it all week. I've got say: it tastes so damn good! I guess you might even say it's bangin'! I'm wondering if it's normal to have some extra liquid in the bottom of the casserole? I think maybe I should have let more boil off, but it doesn't affect the case!
