Cooking Healthier with Tom Kerridge: Veggie Cottage Pie

  • After an indulgent festive period, we’re all probably looking for some inspiration for some healthier meals and sweet treats that we can cook at home. Tom shares his favourite healthier alternatives, which are packed with flavour and are absolutely delicious. Why not try his veggie lentil cottage pie recipe?

    Serves: 8
    Ingredients:
    2 carrots peeled and diced
    2 large onions peeled and diced
    3 celery sticks diced
    4 cloves of garlic
    100ml red wine
    1 tin of chopped tomatoes
    2 tbsp tomato puree
    3 sprigs of thyme
    2 bay leaves
    200g baby mushrooms
    200g frozen peas
    800g cooked lentils
    Salt and black pepper to taste
    8 x large sweet potatoes baked till soft
    1 tsp English mustard
    1 tsp Dijon mustard
    100g cheddar
    1 tsp smoked paprika
    Method:
    - In a large casserole dish add a splash of oil and pre heat on the stove.
    - Once hot add the vegetables and sweat down till soft, then add the herbs tomato puree and red wine, then reduce to a glaze,
    - Next add the tinned tomatoes and stock, bring up to the boil and then stir in the lentils, then cook out till the sauce has thickened.
    - Once cooked spoon into a casserole dish and leave to one side.
    - Now to make the topping scoop out the sweat potato filling, then mash along with the butter and mustards, season well and then spoon on to the top of the filling.
    - Finally sprinkle on the grated cheese and smoked paprika and then bake in an oven pre-heated to 160 degrees celsius for 45 minutes.

    Dear Tom, thank you for this lovely recipe! I'm from Latin America and this is going to be my first Christmas with my husband's irish family (all of them vegetarian) hahaha I'm going to cook this wonderful pie from them!

      Quorn mince is like any Quorn product. It needs flavouring and complementing wuth veg and potato. As here.

    I have just about finished making this.😀.Mine is browning off in the oven, just waiting the 45 minutes then I will tuck in!😋😛
    My mum is Veggie and it looks great I had a taste and it makes a change from meat , it tasted really nice , but only thing I did not use was English Mustard...Yuk!...But it really tasted nice about 15 minutes ago I tasted it, and I was really surprised as this is the first dish I have had without Meat.... Everyone you need to make this😋-Thanks Tom Kerridge for sharing.

    After making Jamie's veggie cottage pie and finding it the best ever cottage pie, I cannot wait to make your version Tom, different veg and potatoe different, I look at this and very excited that I will be making this, so thankyou very much for this recipe and all your knowledge on loosing weight, but not missing out on any food treats. P.S. we are not veggie's, but we do like a really good veggie meal a couple of times per week. Thankyou again Tom.

      Jamie’s is nice but very ‘faffy’ and too heavy on the root vegetables - this is THE BEST one, I have tried a lot been vegetarian for 42 years

    I did this for my veggie in laws. Did standard potatoes, butter, no milk but egg yolk and parmesan. It was amazing. Prefer it to meat.

    I'm not a vegetarian, but I am inclined to try this. Not sure about sweat potato though Tom (See method above). Lol. I will try this though.

      It’s just as good with regular potato on or even a mix of both - just remember the golden rule DONT FORGET THE CHEESE ….it’s really a fantastic recipe (though I don’t use the mustard in the potato)

      I have made this and frozen the filling only in serving portions. Then defrost the filling and add the mash fresh. Filling needs a stir as it does get a bit watery frozen but it freezes well and makes a perfect ‘batch cook’ .

    Does anyone know if the red wine is optional or can be substituted with something else? Or if omitting it would change the flavour of the dish. Just don't want to have to buy it. Thank you!

      It does bring some flavour to the dish but it's not essential so feel free to leave it out👍

    But on an energy budget, all that long frying, baking and toasting is way too expensive. Air fryer? Halogen oven? Microwave the potatoes? As well as the final product, with a quick grill to finish?

    Vegetables aren't 'healthier' than meat. 'Healthy' eating is a balance of protein, fat, carbs.
