How do you maintain your stainless steel pans? Got burn marks. I using induction as well very difficult to control . I think my medium hi heat is 240 when using steel pan , 400 when using non stick.

Ah Pa, when we eat this fish outside we will ask for it to be steamed with lots of spicy tau chew sauce or assam sauce to mask the earthy smell. Some times my colleagues refused to eat this fish.

steaming fish is the worst method that will always give you earthy or oily fishy taste for most fish,, each fish have correct way to be cooked but frying is always the best and helps remove those nasty tastes ,dont steam or bake most fresh water pan fish if you dont like that fishy taste always fry
i wonder why you need to add fish sauce when the fish is fishy enough by itself and yet you pour away the original fish sauce after steaming the fish and that is the tastiest part of the fish. If the fish is not fishy then it's not a fish-----I love tilapias and not talapias
Be careful where you buy this fish China is the biggest exporter of tilapia all coming from Chinese fish farms where the fish are fed a diet of chicken droppings and antibiotics. You are what you eat and so are the fish.

U fry the cai po separately, then add the cai po on top of the fish once the fish is fully cooked

RM$30 for red tilapia in Malaysia? we could get it for S$5($RM15) in Spore, and thats not even the promotion price :P living cost in KL is horrid.
